Roasted cauliflower with caper gremolata 1 large head cauliflower, cut into medium-large florets (about 8 heaping cups) Extra-virgin olive oil 1 tsp. ground coriander 3/4 tsp. kosher salt 1/2 tsp. black pepper 2 Tbsp. capers in brine 1/4 cup finely chopped fresh parsley 3 Tbsp. finely chopped fresh dill 1/4 cup roasted pistachios, finely chopped 1 tsp. lemon zest plus 2 Tbsp. fresh lemon juice Pinch of chili flakes 1/2 cup plain full-fat Greek yogurt or labne 1 garlic clove, grated on a microplane Preheat oven to 450ºF. Arrange cauliflower on a large rimmed baking sheet and toss with 3 Tbsp. extra-virgin olive oil, coriander, salt, and pepper. Bake for 20 to 25 minutes, tossing once midway through, until crisp and caramelized. Meanwhile, dry the capers very well by wrapping them in paper towels and pressing to absorb moisture. (If there is too much moisture, the oil will sputter aggressively.) Heat 2 Tbsp. extra-virgin olive oil in a small saucepan or skillet over medium heat. Once hot, add capers and fry until the capers start to bloom and turn golden, about 3 minutes. Transfer capers and oil to a bowl and let cool for 5 to 10 minutes. Roasted Cauliflower with za’atar and turmeric I love roasted cauliflower, either in a salad with a ton of herbs and a lemony tahini or as I did here, roasted with turmeric, garlic and za’atar and served it with a green tahini I was gifted some baking pans from @procookuk and I had high hopes as they were dishwasher safe- I mean, who wants to be scrubbing pans? The key to roasting cauliflower is to not let the florets burn as they go bitter and also not to have them stick to the roasting pan. These did neither! I served them with a green tahini but added some chickpeas in too so was like a loose hummus. A delicious addition to our roast chicken lunch. The pan was fantastic. 10/10 meal for my last teen birthday. blessed to be born in may, before boarding school I would always spend my bdays at the met, enjoying the costume institutes installations in conjunction with each years met gala theme. As a lover of art, fashion, expression, and culture, this exhibit that falls around my birthday each year brings me an unmatched joy of the potential of life, inspiring to work harder at selling out (jk but not). after reveling in the beauty of Dior, McQueen, Loewe, Schiaparelli, and Iris van Herpen, my mother and I celebrated my birthday at abcV as I’ve been trying to eat at this restaurant for the past five years but each time I’ve made a reservation something has come up where I’ve had to cancel. Nevertheless here we are and the food was simply exquisite. Although a vegetarian restaurant, I left satiated and nourished by the beautiful dates, dosa, mushroom bolognese, and roasted cauliflower dripped out in a sauce I would even love to be bathed in. the complimentary mango sorbet perched on a bed of lovely dried fruit amplified the tart sweetness of this day. While I’ve received no gifts this birthday, I have gotten a fat wad of cash from my parents and grandparents which I have yet figured out how to spend. there are so many gifts that I wish to buy myself yet I frown at the prospects of materialism. maybe I will just buy some stocks. anyways, the food journey is not over as I have yet to introduce and eat my birthday cake. I will impart that journey of the tastebuds soon. Roasted cauliflower. I asked for dinner ideas the other day and my husband suggested cauliflower and said he liked that curry cauliflower that I made before. I honestly did not remember what he was talking about. 😂 He said it was roasted and had a curry flavor. So I cut up the cauliflower and tossed it with oil, curry powder, turmeric, garlic powder and salt. I just eyeballed the seasoning by sprinkling them on the cauliflower directly on the baking sheet before tossing it around to distribute. I could have been more heavy handed with the curry because the flavor wasn't that pronounced but it was good and the tween even got seconds. Another one in the Mediterranean theme! Home at 7pm and this was such a quick and easy meal I was eating it half an hour later. I had a small cauliflower in the fridge so broke into florets and added to a baking tin with some halved baby potatoes. A couple of spoonfuls of harissa added to the tray and used my hands to rub it into the veg along with a little drizzle of EVOO. In the oven at 200⁰c for half an hour until cooked through and the edges slightly charred. Plated up with some lambs lettuce, spring onion and pomegranate then dolloped and drizzled with some of the leftover tahini and yogurt dressings from the other night.
