Here' what you’ll need: 1 tablespoon extra virgin olive oil 1 cup brown rice, uncooked 1 tablespoon grated fresh ginger 2 cloves garlic 2 teaspoons turmeric ½ teaspoon freshly ground black pepper 2 cups water 1 cube vegetable bullion 1 teaspoon agave syrup ½ lemon, juiced Roasted Vegetables: 1 small head cauliflower, broken into florets 1 medium green bell pepper 1 medium red onion 1 small sweet potato 1 15-ounce can chickpeas 2 tablespoons extra virgin olive oil 1 lemon 1/2 teaspoon seasoning salt (optional) Easy Korma Sauce: 1 tablespoon vegetable oil 1/2 inch piece fresh ginger 1 clove garlic 1/2 teaspoon turmeric 1/2 teaspoon cumin 1/2 teaspoon coriander 1/2 teaspoon chili powder 1 teaspoon garam masala Pinch teaspoon salt (optional) Pinch teaspoon black pepper 1/2 (13.5 ounce) can light coconut milk (about 3/4 cup) 1 1/2 tablespoons almond meal 1 1/2 tablespoons tomato paste Instructions: 1. To make turmeric brown rice: Heat olive oil in a medium pot. Add rice, ginger, garlic, turmeric, and black pepper and sauté for 2 minutes. Add water, vegetable bullion, and agave syrup. Stir well, cover, and cook over medium heat—stirring occasionally to prevent from sticking—for about 40 minutes, until just tender, but not mushy. Stir in lemon juice and remove from heat. 2. 🤍🧡 Extra Vegetable Fryed Rice 🧡🤍 🇫🇷 Riz sauté aux légumes Ingrédients: - 50g de noix de cajou - 2 cs d’huile de sésame - 1 oignon - 3-4 champignons - 1 demi poivron rouge - 1 cc d’ail - 1 cc gingembre - 1 cc de sucre roux - 1 bol de brocolis - 1 carotte - 1 cs de jus de citron - 1 bol de riz cuit - 2 cs sauce soja - 0.5 cs de vinaigre de riz - 0.25 cc piment Commencer par hacher l’oignon et le poivron. Peler et couper la carotte en rondelle. Couper les champignons en quartier puis réserver. Dans un bol, mélanger la sauce soja, 1 cs d’huile de sésame, le jus de citron, le vinaigre, le gingembre, les épices et le sucre. Réserver. Dans un wok, faire chauffer l’huile de sésame puis frire les oignons pendant 2 min. Ajouter ensuite les champignons et cuire encore 2 min. Ajouter ensuite les brocolis, les poivrons et les carottes. Peel and slice the carrot and mushrooms. In a bowl, combine soy sauce, 1 tbsp sesame oil, lemon juice, vinegar, ginger, sugar and spices. reserve. In a wok, heat some sesame oil, then fry the onion for 2 mins. Add mushrooms and cook 2 mins. Then, add broccoli, carrots, and red pepper. After cooking for 2 to 3 mins add the rice, and the sauce. Let it cook for 10 min. Yellow rice- gf I’ve been experimenting with “yellow rice” and may have just found the winning combo! Paired here with sautéed cabbage, roasted cauliflower, gyro tofu and my white bean Tzatziki. For the rice: -3TBSP olive oil -3C basmati rice -4 cloves garlic, minced -3tsp onion powder -2tsp turmeric -1.5tsp salt -black pepper, to taste -6C vegetable stock ➡️ heat oil in a large pot over high heat ➡️ add rice a sauté until lightly toasted ➡️ add garlic and sauté another minute ➡️ add remaining seasonings ➡️ add vegetable stock and bring to a boil ➡️ allow to boil, uncovered until the rice rises above the liquid ➡️ cover and reduce heat to low for 15-20 minutes ➡️ add pretty much any fresh chopped herbs before serving if you like! ① [Meat-free] Fake Beef Bowl By: みっちゃんのヴィーガンクッキング (Micchan no Vegan Cooking) YouTube & Twitter @micchan_vegan_cooking Vegan Cafe Owner Teaches Recipe of Fake Beef Bowl 🍚🌱 For 2 persons • 50g of Itafu (Board Bran 板麩) or Shredded Bran (Shredded Fu きざみ麩 kizami-fu) •1/2 piece Onion 🧅 • 100g of Shirataki ( a kind of string Konjac) • 10g of Sliced dried shiitake mushrooms 🍄 • 5 or 6 pieces (30g) of string beans (• Flower shape of carrots 🥕) • 400cc Water 💧 • 3 tbsp. (54g) organic soy sauce • 2 tbsp. (36g) Mirin or Sweet Sake • 1 tbsp. (12g) Beet or Cane Sugar (I add here also a 1 tbsp. of kombucha powder) • Gohan (Rice) for 2 persons 🍚🍚 How to Make: 1.) As for a meat substitute, I used Itafu (Board Bran 板麩) If you don’t have a Itafu, it is OK a shredded type (Kizami-fu きざみ麩). 2.) Break the itafu (50g) into pieces of appropriate size. By breaking it, it lookalike a meat or you can feel like a fake meat. 3.) Cut to 1cm width of 1/2 piece (100g) onion 🧅 4.) Cut to 1 cm width diagonally 5 or 6 pieces (30g) of string beans. 5.) To easy to eat, cut to length 100g of shirataki (a kind of white string konjac). 6.) Put in the small pot or saucepan 400cc of water 💧 heat into medium heat. 7.) To the small pot, add 3 tbsp. (54g) organic soy sauce, 2 tbsp. (36g) mirin or sweet sake, 1 tbsp. (12g) beet or cane sugar and mix and mix. 8.) After mixing, next is put an onion 🧅. VEGAN KEEMA RICE Follow @thebriskkitchen Ingredients 2 tbsp cooking oil 100gm soya chunks 200 gm brown rice, soaked 2 medium onions 2 green chillies 1 tbsp garlic chopped 1 tbsp grated ginger 4 green cardamoms 4-5 black peppercorns 2 cinnamon stick 6 cloves 4 tbsp fresh coriander leaves, chopped 8-10 chopped fresh mint leaves 1 tsp dry mango powder (amchur) Water as required Salt to taste 200ml soy milk Fresh mint sprig for garnish Method 1. Boil 2 cups water in a deep pan, add soya granules and cook for 1-2 minutes. Take the pan off the heat. Drain the water and set aside. 2. Finely slice onions and finely chop green chillies and garlic. 3. Dry roast green cardamoms, black peppercorns, cinnamon stick and cloves in a pan. Add chopped garlic, onions, green chillies and ginger and sauté well. Add 2 tbsp water and sauté till onions turn golden brown. 4. Add chopped coriander and chopped mint and mix well. Add rice and dry mango powder and sauté for a few seconds. 5. Add soaked soya granules, rock salt and mix well. Add soy milk and 2½ cups warm water and mix well. Cover and cook on low heat for 35-40 minutes. 6. Arroz frito thailandés con piña y tofu Esta semana en el #retococinavegana el ingrediente estrella es el arroz. Y como tenía esta receta pendiente de preparar pues he aprovechado para este reto. Así que con este arroz acompaño a mi querida amiga Anna @annav.9602 y a Eva @cocinasencillayrapida en este reto 🌱Ingredientes 1 piña pequeña madura 1 cda de aceite de cacahuete Un puñado de judías verdes largas cocidas enteras 2 cebollas rojas picadas 2 cebolletas chinas picadas 3 cdtas de jengibre fresco picado 300 gr de arroz basmati o jazmín cocido 125 ml caldo verduras 1 zanahoria rallada 1/2 bloque de tofu escurrido y cortado en dados 2 cdas de salsa de soja 50 gr de anacardos tostados 1 manojo pequeño de cilantro picado 1 Chile rojo sin semillas picado 🌱Preparación Cortar la parte tierna de la piña en dados. Reservar Calentar el aceite en un wok, incorporar la cebolla, los ajos y el jengibre. Saltear 1 minuto. Añadir el arroz y el caldo y saltear para integrar el arroz. Agregar la piña, la zanahoria, el tofu, las cebolletas chinas, el chile y saltear 3 minutos. Añadir la salsa de soja y el zumito que ha soltado la piña al cortarla. Remover bien. Winning Wednesday: Hoisin 'duck' bowl 🤤 This has a great amount of protien, is cheap & QUICK ⏱️ For two of these bowls it only costs u ✨£3.70✨ like always it can be made cheaper by using what veg u have at home! What u'll need: 🍚Edamame Beans 75G 65p 🍚Sushi Rice 250G 85p 🍚Radishes 60G 10p 🍚 @bluedragonuk Hosin Sauce 49p 🍚@lindamccartneyfoods Shredded Hosin Duck 150G £1.10 🍚Baby cucumber 100g 50p Method: 🍚Wash the sushi rice 3 times & then place in a pot with 330ml cold water. Cover with a lid & being to a boil then let simmer for 10 mins. After 10 mins, keep the pot covered for a further 10 mins. 🍚 Add the 'duck' to a lightly oiled pan & let warm/defrost 🍚 Slice the radishes & baby cucumbers thinly & washing the edamame beans 🍚Once the 'duck' is warmed add the sauce & mix thoroughly! 🍚 Plate up & enjoy! Fried rice made healthy!! I love rice in all it’s beautiful forms, Indian and international ways of eating it! One is the fried rice which normally is heavy on soya sauce and is literally fried with lots of oil ..., So I made a healthier version where I can indulge guilt free😝 Ingredients: 1 cup brown rice(small variety goes well) 2 & half cups water 2 tablespoons oil 1 carrot 5 to 7 French beans 5 cloves of garlic 1 onion 2 sprigs if spring onion 1/4 cup cabbage 1/4 cup green peas 1/4 cup corn kernels 1 tablespoon vinegar 1 tablespoon soy sauce 1 to 2 green chillies 2 star anise Salt to taste Method: Soak the brown rice for an hour or two. I have used indrayani here. Rinse a couple of times then Cook it with salt and dash of oil till done but fluffy and grains are separate. Set aside. Heat the oil in a pan and put in all the veggies diced small. Fry till veggies are cooked yet retain a bite to them. Put in soy sauce and vinegar and star anise. Add the cooked rice and mix all together. Add a little water if too dry. Spicy Black Bean Rice Bowl with oven roasted plantains for dinner tonight.... also got to try some @jiantkombucha hard kombucha on the side. I'm definitely a fan. It has super bright and crisp flavors with a satisfying bubble to finish off. All in all the hard kombucha was probably the most expensive part of the meal. A delightful and budget friendly dinner that provided more than 4 servings so perfect for a family meal or for a weekly meal prep. Arroz caldoso con verduras Ingredientes 2 alcachofas en trozos 2 setas ostra grandes troceadas 100 gr pimiento verde troceado 100 gr pimiento rojo troceado 1 cebolla juliana 2 dientes de ajo 1 taza de arroz integral cocido 100 gr judías verdes troceadas 1 tomate rallado 1 cda cúrcuma 1 cdta pimentón de La Vera 2 tazas de caldo de verduras 2 patatas pequeñas AOVE yo también añadí una punta de chorilomo de @veganraskal y unas tiritas de alga wakame pero no es imprescindible. Digging this insane Kimchi Fried Rice Recipe 🍚🥢Missing our virtual date with @nycfoodie18 😍 Method: 1. Make the sushi rice as per the instructions on the package 2. Add 1 tbsp of Mirin Japanese sake and one spoon of sushi rice vinegar 3. Toss all of it till it’s evenly distributed into the cooked rice while it is warm 4. In a hot wok, heat up 2 tbsp of toasted sesame oil and once the oil is hot, add the homemade kimchi to your liking 5. Add the sushi rice; toss it all together till it’s warm and remove from heat.
