Do you garden or have a CSA? We have a summer garden and enjoy a CSA with @tangerinisfarm. This year I experimented with ways to preserve our bounty to enjoy during the colder months. I’ve been drying herbs using a dehydrator for a few years now and it works well. This year I dried jalapeños and tomatoes, too. Now I need to come up with creative ways to use both powders! I made hot sauce in the past and this year’s batch has an extra garlic punch! I always make applesauce but added apple butter this year- lots of it! My last two projects involved drying garlic and onions for powders. It worked really well! If you love carrot cake, you will love this parsnip cake. As soon as it was shared by @tangerinisfarm when we picked up our CSA, I knew I had to try to convert it to gluten free. Thanks to @gfjules flour, we enjoyed this cake yesterday. My mother in law made the very best carrot cake and I’ve made her recipe gluten free in the past. This parsnip cake, while different, brought back many dinners around her dining room table enjoying Ma’s homemade carrot cake. I like to think she would have liked this cake, too. Whew! Thanksgiving came and went in a blur, didn’t it? When we decided to make our home gluten free after my diagnosis, I was determined to make sure everyone had their favorite dishes, especially at the holidays. Turkey- we brined our turkey, spatchcocked it and seasoned it well using the brine kit by @oceanstatepepperco . We’ve used this kit in the past and it’s fabulous! Try a spatchcocked turkey next time. It saves so much cooking time and it’s so tasty! Cranberry- I use the recipe by @tylerflorence and love it. Green bean casserole- I follow the traditional recipe and use fresh beans, tamari, cream of mushroom soup by @pacificfoods and whichever gluten free fried onions I find each year. This year we used the @wholefoods onions and they’re great! Mashed potatoes- I mix white and sweet potatoes from our CSA @tangerinisfarm and cook them with a little broth. Dinner rolls- This year I used a mix from @momsplaceglutenfree . Stuffing- The breads by @glutenfreeartisanbread are the REAL DEAL and they worked so well in stuffing. I followed the instructions for warming them up and once they cooled I cut them into large chunks and toasted them. From there, follow your favorite stuffing recipe. They didn’t not fall apart and made an amazing stuffing! Gravy- We love @inagarten gravy recipe using both turkey drippings and broth. Chocolate chip cookie pie- I used a crust by @mainepieco and it is fabulous! I found two packs at @wholefoods in the freezer section. The recipe is by @averiecooks and I substituted gluten free flour. Chocolate peanut butter pretzel bars- This no bake recipe is by @wolfiesmom and is also delicious! It’s CSA season! Which means tons of produce, some of which you may not be familiar with. I’m always looking for inspiration on how to use up my veggies from @tangerinisfarm. Here is what I made last week: lemongrass chicken with stir fried bok choy, Napa cabbage, haruki turnip and tatsoi. I’m addicted to the recipe from @recipe_tin . I used up the rest of my Asian veggies for a stir fry using the recipe from @keyingredientrecipes and added carrot, pepper and water chestnuts. I served that on the side of Asian style ribs. Last, I made an Asian style salad with the Napa cabbage, red cabbage, chicken, wontons and a carrot ginger dressing. #csa #tangerinisspringstreetfarm #eatlocal
Who loves a great salad? A really good salad has been high on my list for a while and was the plan for dinner last night. I marinated 2 very large boneless and skinless chicken breasts- pick your favorite gluten free marinade. @wegmans labels their marinades if they’re gluten free and they have some great Asian marinades. The salad was mostly veggies from our @tangerinisfarm winter share: green and purple cabbage, kale, cucumber, carrots, green onion. Add your favorites and toss. The gluten free crispy noodles came from my stash from Passover, believe it or not. Check @amazon! The dressing was fabulous! I used a recipe from @foolproofliving and substituted creamy peanut butter and Siracha as suggested. Make double, just saying! It was such a good and filling salad. 🍏Tangerini’s Spring Street Farm in Millis, MA🐐 We stopped by one of our favorite farms tonight for some milk and produce and caught an amazing sunset that really showcased what a beautiful place it is. Tangerini’s has a lot to offer, such as their farm stand, an ice cream shop, farm animals, Farmer’s Porch outdoor restaurant, UPick fields and CSA’s. 🌟Tips: like many local farms (especially this time of year), this place gets PACKED on the weekends, so plan ahead! Similarly, like many places they are experiencing a labor shortage, so best to check their website for their hours (particularly for Farmer’s Porch) before you go. Dress for mess! Being a farm there’s always a chance things could get dirty. Hubby and I enjoyed sloppy joe boats for dinner. I sautéed some fresh onion from our CSA @tangerinisfarm and added a package of @impossible_foods meat. Once it was browned, I added some soaked TVP (soaked in veggie broth). Finally I added the tomato sauce as instructed on the sloppy joe mix and the seasoning packet. If, because the protein amounts to a bit more than the seasoning packet suggests, you can add a few tablespoons of water. I let the meat rest while I scooped out the seeds in the squash. After filling the squash boats, I sprinkled just a little cheese on them and baked at 350 until the cheese melted, the filling bubbled and the squash were tender. I served them with arugula salad. We love the sloppy joe mix! You can use your favorite meat to make sandwiches, too potatoes, fill squash or peppers… so many options! It's National Egg Day and we are thrilled that we FINALLY have eggs again, after our girls all went on strike for about 2 months during a spring molt! Scroll for a snap of our first egg after the long hiatus; this is from our gal Pea. (You can check out more chicken drama and antics in my Highlights under "Chicken Life"). Look how oblong it is! We find that the eggs are usually sort of funky looking for awhile after a laying hiatus. Sometimes the shells are bumpy and the shape and size is often off for a couple of days/weeks. We also often get double yolkers during this period! The eggs eventually return to normal but it's cool to see how they look in the meantime. Nature in action! Pea has been laying her blue-green eggs almost every day since she started up again about 2 weeks ago. Anna produces brown eggs, and has laid a few of them in the past couple weeks; we're hoping she'll increase production soon. Elsa is our other blue egger, and she still hasn't laid any yet, but hopefully she will start up soon. It's really funny because our girls laid eggs at close to their normal volume throughout the winter for the first time ever. We were so thrilled but I guess this spring molt was our punishment for robust winter egg production. 😂 Keep your fingers crossed for us that everyone gets back into full production mode asap! We've been giving them extra protein, calcium, etc., so with any luck, it won't be long. 🤞🏻 Anyone else relate to the chickens striking? We enjoyed an Asian chicken salad last nigh and used tons of veggies from our garden and CSA from @tangerinisfarm : green cabbage, carrot, cucumber, radish, salad turnips, green pepper and green onion. We added rice noodles and avocado. The chicken was marinated in @epicureofficial Asian stir fry seasoning mixed with soy sauce (tamari), seasoned rice vinegar, avocado oil and water, then grilled. Another shout out to @tangerinisfarm! Our family grabbed lunch last week before picking up our CSA share. The menu changes a little periodically, depending on what’s in season. I chose the Mexican salad, chock full of fresh greens, black beans, corn and more. I added grilled chicken. It was a fabulous choice! It was hot, so we decided a little ice cream was in order. I learned that they have allergy protocol at the ice cream stand that includes disinfecting the scoop and opening a new container of ice cream for customers with allergies! There really is a difference between an ordinary BLT and one with farm fresh veggies and bacon, and this is what a good one looks like, folks! We love visiting @tangerinisfarm, even when we aren’t picking up our CSA. Today was the first day to pick sunflowers and we ventured out in the heat, starting with lunch. A good and healthy dinner doesn’t have to take hours to prepare, especially if you “cheat” a little. The chicken came marinated and prepackaged from @wegmans. Many of their house products are clearly labeled if they are gluten free. The green beans are from our CSA @tangerinisfarm, I steamed them and mixed them with a sesame tahini vinaigrette. The quinoa/rice mix is from @Costco and can be warmed up in 90 seconds in the microwave. They all come together with the challah I posted earlier for a perfectly easy and delicious Friday night dinner.
