Wash the cabbage in a sink full of salty water 2. Cut either side of each stalk to remove it from the leaf - I did this because I wanted to use the leaves to make crispy cabbage, but the stalks can take longer to cook anyway if they’re thick!! 3. Remove stalk ends and chop into approx 1cm chunks 4. Slice leaves into >1cm strips (you can pile them up/fold them over to speed this up). 5. If you didn’t already wash, rinse the cabbage now and drain in a colander! Garlic Butter Cabbage Stalks: 1. Heat a generous knob of butter in a frying pan 2. Slice a few garlic cloves 3. Once the butter is melted and starting to bubble, add the cabbage stalks, garlic and a few grinds of black pepper 4. Cook, stirring regularly, until the stalks are soft but not mush (use a knife to test one of the thicker stalks, it should feel soft but with a bit of resistance, I.e your knife doesn’t slide straight through to the pan!!) 5. Serve! Spicy crispy cabbage: 1. Preheat the oven to 180 (160 fan) 2. Place your cabbage leaves in a thin layer in a baking/roasting tray 3. If your cabbage leaves are still quite wet from washing, cover the tray with foil and place in the oven for 5 mins to dry them out. If not, go to next step! 4. Drizzle some olive oil of choice over your cabbage, along with a few grinds of pepper and some salt. Mix so that the cabbage is evenly coated in oil. Place in the oven for 10 mins. 5. Remove from the oven and drizzle some honey over, stir the cabbage again. Return to the oven for 5 mins. 6. Remove from the oven, the leaves should be dark green and crispy to touch. If they’re not, return to the oven for 3-5 mins and check again. Serve!
