Itās also a good opportunity for me to use up some of the weekend leftovers so that they donāt linger ā¦ here in the U.K. it was #fathersday for the #mainmonsieur so there was more variety on offer than usual. šTodayās offering is therefore going to be a sort of chilli Buddha bowl with chilli beans, cauliflower rice, grated cheese, tomato salsa and fresh coriander in the mix - all brought together with a squeeze of lime. SOLO DINING I think much of this week I shall be dining solo - not because Mr B is away but we seem to be out of sync with our mealtimes. I am also continuing with my #intermittentfasting and #timerestrictedeating hybrid regime and so donāt want to eat much later than 6 pm - he prefers to eat later. šŖ“Usually this works fine with slow cooker food that can be kept warm and for other cooked dishes that just need a zap in the microwave to reheat to just cooked perfection but not everything is ideal. šŖ“I therefore have a couple of solo dishes that I donāt mind cooking for just myself and many are #meatless (not a theme Mr B opts for given the choice). šŖ“Hereās one for tonight - a baked sweet potato topped with light and creamy ricotta, crunchy vegetables (celery, radishes and cherry tomatoes) and seeds. Itās a great weekday meal and provides a great source of slow-release energy when the temperatures start to plummet. I didnāt hand-make the rigatoni, but I did think up of a sauce idea, so this warrants getting posted. Now weāve all had tomato sauce and cream sauce, but have you ever fancied the idea of using mascarpone cheese as a base to your pasta sauce? It gives a silky and light mouthfeel versus your average Alfredo thatās normally heavier. I browned some mushrooms with a ton of onion and garlic, stirred in some corn and removed that mixture from the heat after seasoning, let it cool and stirred in the softened mascarpone. I then added some pasta water to create a sauce and tossed it with the al dente rigatoni. HAPPY MEATLESS MONDAYš±š This previous friday, my mother suggested we braai. Oh the b-word. A South African vegan's awkward nightmare. I never know what to do during a braai situation. I would rather use the oven or order in instead. The braai space is always filled with meat and cooking on the same space is not for me unless it can be cleaned before I use it. Luckily, since I was at home, there was a separate braai rack where I cooked a @frysfamily burger patty bought from @picknpay and @beyondmeat italian style meatballs bought from @woolworths_sa . So many warming spices (cumin, coriander, paprika and red chili) and awesome combination of vegetables: onions, ginger, garlic, butternut squash, lacinato kale, and chickpeas. This week is #GreatBritishPeaWeek so we decided to make this for our #meatlessmondaymeal yesterday. To make these delicious #vegan pea fritters you'll need:ā 240g frozen peasā 150g frozen spinachā 1/2 white onionā 2 cloves garlicā 1 Tbsp fresh lemon juiceā 60ml oat milkā large handful of fresh mint ā large handful of basilā 65g plain flourā 1 tsp baking powderā 1/4 tsp saltā Black pepper to tasteā Method:ā Thaw your peas and spinach in warm water for 10 minutes.ā Meanwhile, dice your onion and sautĆ© it in a frying pan with some oil until translucent. Finely shop the garlic and add that it until it softens (careful not to burn it!)ā In a food processor and the drained peas and spinach along with the onions and garlic, lemon juice, herbs and oat milk. Blitz until roughly combined (not so it's completely smooth).ā In a separate bowl mix together the flour, baking powder, salt and pepper. Then add to the pea mixture and gently stir it in.ā Heat 1 Tbsp of olive oil in the frying pan saved from earlier. #MEATLESSMONDAYMEAL Iāve been jonesing to make this dish for a while now! So happy that no obstacle stood in my way tonight to make this. No dentist appointment, women cramps, Motherās Day errands, last minute prep for tornado warning, forgotten tofu to press was going to stop me from creating this super flavor bomb veggie bowl. My brown rice was perfection. That always makes me happy, when the rice turns out the way I want it. Meet my tofu bulgogi with bibimbap. I didnāt have pears for the bulgogi, subbed it with Guava Goddess Kombucha; didnāt have fresh ginger, subbed it with Japanese pickled ginger; Supergreens needed to be eaten so I braised that instead of spinach. It turned out soooo good! Thank you @damn_delicious for the marinade recipe, @cookieandkate for the baked crispy tofu recipe. All my veggies turned out great! I didnāt forget a single thing, considering how many components this dish has. I even had seaweed grass to take it to another level and snipped off some green onions from cut bottoms that I regrew in my garden. A recipe for spinach and garlic omelette caught my attention. The recipe has high praise so weāre trying it. May we suggest spinach a few ingredients from our farm, fresh, just harvested spinach and eggs from our free ranging hens. We have garlic planted, weāll let you know when itās ready to harvest. #MeatlessMondayMeal Plant-based shawarma (seitan recipe adapted from @wickedhealthy) with babaganoush (recipe adapted from @cookieandkate) and Greek salad with arugula instead of romaine lettuce. For the seitan, I added more cumin, subbed in other ingredients for coriander powder, zaāatar and oregano to boost the flavor profile for the shawarma and played with the dry/wet ratios a bit. Pretty happy with the texture has a good chew and heat and meaty flavor. The babaganoush was delicious, didnāt have lemon, so used lime and added more tahini to boost the creaminess and flavor. The puso ng saging is a rich source of energy, micronutrients, and fiber, according to health and wellness educator Maribel Jane Galang of Manila Adventist Medical Center. ā¢ We added seaweeds for the extra umami flavor. It is said that āSeaweedĀ is much more nutrient dense than any land vegetables. It isĀ an excellent source of micronutrients including folate, calcium, magnesium, zinc, iron, and selenium. More importantly, seaweed is a great source of iodine.ā ā¢ Lastly, as a surprise we gave away home baked chocolate oatmeal cookies. Fiber rich because of the oatmeal and just about the right sweetness for those cravings. . We truly hope that you enjoyed your meal as much as we did in preparing it. Add frozen artichokes, chickpeas and any herbs & spices you likeāS&P, red peppers, spice blend. Once cooked through top cooked quinoa with this delicious sautĆ© medley to make it a meal!ā ā I tested two pairings with it--a rosĆ© and grenache blanc. Both worked & most white wines will pair well with it. The artichokes make red wine a risky pairing because of their tannins. Hey yall, Just sharing this week's #meatlessmondaymeal, #stuffedsweetpeppers Swipe šš¾ šš¾ -First I cut off the tops of the peppers and make sure no seeds are left inside. -Brush virgin olive oil with a dash of seasoning before popping them in the over. They'll cook while preparing the rice and beans. -Mix rice and red kidney beans once they're cooked. -Stuff peppers, top it with shredded cheese and pop it back in the over for about 15mins.
