It is a trailing herbaceous annual vine with barbed stems and triangular leaves. It is native to most of temperate and tropical eastern Asia, occurring from eastern Russia and Japan in the north, and the range extending to the Philippines and India in the south. Lady’s Thumb is an edible species. Its tender leaves and shoots can be eaten raw or cooked as a salad green or vegetable and its fruit is sweet and can be eaten fresh. After feeding the pigs this past Sunday morning, I rode along our back trail because I hadn’t been back there in awhile. To my surprise, these beautiful little plants are covering most of the trail. It was such a glorious sight, so I instantly needed to know what these are. JESUSPLANT. Persicaria Maculosa aka Jesusplant aka Lady’s Thumb aka Redshank is an annual plant in the buckwheat family. It’s thought of as a weed but every part of it is edible raw or cooked. This wild plant tastes similar to lettuce and is composed of high percentages of natural sugars, fiber, phenolic acids, and tannins. Because of this, these plants are commonly foraged to be used as treatments for stomach pains (also good for livestock), and can also be used to aid in minor skin irritations and insect bites. The wildlife around here love it and it has a fibrous root system that can help stabilize soil! Discovering this wild edible on our land made my little homesteader heart so happy. Lady’s Thumb These small, delicate flowering spikes are native to Asia and are considered weeds in rice paddies. It is thought Lady’s Thumb was brought to the US in the early 1900’s via Philadelphia and inadvertently spread along railroad lines. As in the rice paddies of Asia, they prefer moist soil in the US. Thus, Lady’s Thumb can be found lining the banks of streams in the eastern US and indeed we saw quite a few of the plants when hiking the waterfalls of northern Georgia. They are small, low growing plants, the flower spikes reaching only about 2 inches in length, but en masse they were quite colorful. Interestingly, I read the plant is edible and is sometimes called smartweed because its sap “smarts” when tasted; the peppery flavor bringing tears to your eyes! #ladysthumb #toccoafalls

Spotted Lady's Thumb Persicaria maculosa Also known as Polygonum persicaria, this annual herb is native to Europe, northern Africa and central/northern Asia, west from Portugal and Iceland all the way east to Japan; it has been introduced to other temperate and sub-tropical regions, being now present in the Americas, Australia and New Zealand. It can be found in meadows, agricultural fields, disturbed lands, and on the sides of roads, paths and waterways. Growing 70cm tall, often partially leaning over, this plant has lanceolate leaves each up to 13cm long. The ochrea, a membrane-like structure composed of fused stipules, and which surround the stems at the base of each leaf and at the nodes, have short fringes at the upper end, a feature which differentiates it from other Persicaria species. It blooms from July to September, giving rise to a dense spike inflorescence filled with small white-ish pink to deeply pink flowers. The leaves and young shoots are edible, raw or cooked, and may be used as a vegetable. Medicinally, it has diuretic, astringent and vermifuge properties, and is used as an infusion to treat stomach aches; when crushed, it may be applied to eczema and poison ivy rashes. As usual, we advise to not utilise any harvested materials without absolute certainty of its efficacy and safety. RISOTTO Z RDESTEM Ta wegańska wersja jest bardzo aromatyczna dzięki winu i mleku owsianemu. Mnie bardzo mile zaskoczyła. Była bardzo maślana i aromatyczna. 😉 Ale oczywiście, jeśli chcesz możesz podczas gotowania dodać nieco masła, a na koniec całość połączyć z którymś z włoskich serów startym na drobnej tarce. Ja jednak zostaje przy wersji roślinnej. 😉 Składniki: 200 g ryżu do risotto Duży pęczek pędów rdestu (mój nie mieścił się w jednej dłoni 😉) 1 szklanka mleka owsianego 1 szklanka białego wina 3 cebule 2 łyżki oliwy z oliwek Sól Pieprz Olej do smażenia Woda Wykonanie: Na początku myjemy pędy rdestu i oddzielamy od łodygi liście i kwiaty. Po tym możemy pokroić rdest na mniejsze kawałki. Ja zostawiłem liście w całości. Obieramy cebule i kroimy w drobną kostkę. Rozgrzewamy tłuszcz w szerokim garnku i dusimy cebulę 1-2 minuty do delikatnego zeszklenia. Delikatnie solimy. Dodajemy suchy ryż i dokładnie mieszamy, uważając żeby wszystkie ziarna ryżu pokryły się warstwą tłuszczu. Całość mieszamy około 2 minuty po czym dodajemy pół szklanki białego wina i mieszając czekamy aż wino się wchłonie i odparuje. Teraz dodajemy pół szklanki mleka owsianego i przygotowany rdest. Znów nieco solimy. Pozostawiamy wszystko pod przykryciem na 5 minut. Dodajemy pozostałe pół szklanki mleka i wina. Zmniejszamy ogień i gotujemy już bez przykrycia często mieszając. Ryż powinien być miękki po 20-25 minutach. Jeśli płyn wyparuje przed tym, jak ryż będzie gotowy, małymi porcjami dodajemy do garnka gorącą wodę. Na koniec zdejmujemy z palnika, dodajemy oliwę z oliwek, solimy według preferencji i łączymy ze świeżym pieprzem. Lady’s Thumb (Persicaria maculosa) Lady’s Thumb is an annual wild plant that is part of the buckwheat family. It made its debut in the United States from Eurasia during the middle of the 1800s era. Every part of the plant is edible. The leaves, stems, and flowers can be eaten either raw or cooked. Lady’s Thumb has been used in herbal healing remedies by Native Americans. Crushing the leaves and stems was used to treat poison ivy and rashes.
