Here's your recipe: Ingredients: - 1 cup Native Again Joshimath Rajma - Water for soaking and cooking - Salt to taste - 3-4 medium onions, thinly sliced - 4 tablespoons oil (50 ml) - 2 tablespoons ginger garlic paste - Puree from 4-5 medium tomatoes - 1/4 teaspoon Native Again Lakadong Turmeric powder - 1 tablespoon coriander powder - 1 tablespoon Native Again Byadgi Red Chili powder - 1 teaspoon garam masala - 1 teaspoon kasuri methi (dried fenugreek leaves) - 2 tablespoons fresh coriander, chopped Instructions: 1. Wash and soak rajma overnight. Drain. 2. In a pressure cooker, cover rajma with water, add salt, and cook for 3 whistles. Allow natural pressure release. 3. Sauté onions in oil until caramelized. Cool on paper towels. 4. Blend onions with a bit of water to form a paste. 5. In the same skillet, fry ginger garlic paste, then add tomato puree and salt. Simmer for 5-6 minutes. 6. Stir in turmeric, coriander, and chili powders, then onion paste. Cook 15-20 minutes. 7. Add rajma with its liquid; simmer 15-20 more minutes. 8. Season with salt, garam masala, kasuri methi, and fresh coriander. 9. Adjust gravy thickness with hot water if needed. 10. Serve with rice, parathas, or roti. Their commitment to bringing traditional ingredients to the forefront not only enriches the culinary experience but also supports local farmers and preserves cultural heritage. Here is the detailed recipe for an authentic Maharashtrian Puran Poli 1. Soak one cup of chana dal with water just enough to cover it. 2. Add a little haldi and oil and cook it in the cooker giving 3-4 whistles. 3. Once cooked, drain out the excess water and mix it thoroughly to a smooth tight paste. 4. Add one cup of Native Again Jaggery Pearls, Kesar, 1/2 tsp Cardamom Powder, a generous pinch of Nutmeg Powder. You can adjust the ingredients as per your taste. Keep it aside. 5. Knead 2-3 cups of Khapli Atta with 1/2 tsp of salt, 1 tsp of oil and water enough to make a loose dough. Once the dough is ready, coat it with a generous amount of oil and keep it aside for an hour atleast. 6. Roll out your puran polis just the way you roll your parathas. 7. This salad meal showcases the versatility of Sorghum grain. It is also a way to pack as many vegetables on your plate as possible. I love topping this with pomegranate seeds or dried fruits like raisins, cranberries, cheese and avocado. This salad can also be served as part of a bowl meal MIGHTY SORGHUM SALAD Serves 4 Ingredients: 2 cups Sorghum grain 8 carrots, sliced in half lengthways. 2 whole sweet corn, cut into ribs 3 zucchinis sliced lengthways. 200g broccoli, cut into steaks ½ cup pomegranate seeds Handful coriander, chopped. Handful mint, chopped. Handful Italian parsley, chopped. 2 tablespoons pickled onions ( recipe in pantry staples) For dressing: 1 cup lemon juice ¼ cup olive oil Salt and pepper to taste. ½ teaspoon cumin 1 teaspoon honey 1 teaspoon garlic 1 teaspoon ginger, grated. METHOD: 1. Preheat the oven to 200°C. 2. Cook sorghum according to instructions and leave to cool. 3. Place the carrots, zucchini, broccoli steaks and sweetcorn ribs on a baking tray and grill for 20mins.Remove from the oven and allow the veggies to cool, set aside. 4. Whisk together all the ingredients for the dressing, season with salt and pepper to taste. 5. Mix half the dressing with the sorghum and add the chopped herbs and dried fruits 6. A busy week at the Community Farmer Network! Our dedicated Food Production team has been hard at work, transforming locally sourced sorghum grains into a wholesome delight for our customers. From the moment the grains arrive from our farmers, we ensure they meet our strict quality standards. The sorting and cleaning process is meticulous, and preparation starts a day before production. This includes checking the moisture content of the grains, which usually are perfect, but if needed we carefully soak the grains to prevent burning during the popping process. Using a high-temperature gas Puffing Pot, we roast the sorghum until it reaches maximum pressure, resulting in the creation of sorghum 'popcorn' or puffed sorghum grain. Each batch undergoes a thorough check to guarantee the highest quality. Our grading and sorting process separates the finest sorghum from any burnt grains, and the powdered grain, a delicious cereal on its own, is sifted out. The approved puffed sorghum is then carefully packed for our customers to enjoy. Not only is our puffed sorghum a tasty treat, but it also serves as a healthier alternative to traditional GMO maize popcorn, known for its potential harm to health. Millet and Mushroom risotto for this cold and rainy Jozi day. This warming and delicious dish is the perfect meat free Monday winter warmer. Millet is another indigenous African ingredient that has been forgotten on our menus. Foxtail millet is readily available at most shops. Wild Mushroom and Millet risotto Serves 4-6 2 tablespoons (30 ml) olive oil 1 tablespoon (15 ml) butter 500 g mixed mushrooms, chopped Handful of fresh parsley Handful of fresh oregano Handful of fresh thyme 1 onion, chopped 2 garlic cloves, finely grated 1 cup (250 ml) millet grain 3 cups (750 ml) vegetable stock 1 cup (250 ml) white wine (optional) ½ cup (125 ml) Parmesan cheese 1. Heat the oil and butter in a deep saucepan and fry the mushrooms until browned. Remove from the pan and place in a bowl, add half the fresh herbs and set aside. 2. In the same pan used to fry the mushrooms, add the onion and garlic. Cook for 3 minutes on medium heat, then add the millet grain. Fry the millet in the onion mixture for 5 minutes, stirring constantly to make sure it doesn’t stick to the pan. 3. Add the vegetable stock and the wine, cover the pan with a lid and cook at medium to low heat for 20 minutes, stirring constantly. 4. After 30 minutes of cooking, the millet should be soft. Add a bit of water if the millet is slightly dry, then add most of the herbed mushrooms and cheese, and simmer for a further 5 minutes, stirring continuously Stir through the rest of the herbs. 5. Similar to most southern states in India, rice is a staple food in Coorg too. The staple crop in the fertile slopes of Coorg is rice, which grows in abundance. And naturally so, rice forms the main part of Kodava diet and is eaten in several different ways. It is believed, every family owns wooden paddy bins called ‘Pathayas’ that store rice for the entire year, until the next harvest season. Akki Otti (rice flatbread, often a breakfast staple), Kadambuttu (steamed rice dumplings), Paputtu (steamed rice and coconut cakes) and Noolputtu (steamed rice string hoppers) are some of the more popular dishes. Biliya and Sannakki varieties grow aplenty in the fertile valleys of Coorg. There are 11 known different types of varieties, or ‘Biliyas’ such as Kiribiliya, Kiggatu Biliya, Halubiliya, Mambiliya and so on. This rice comes to harvest in about 185 days and is grown on the lands where water supply is adequate. The density of this grain makes it a suitable companion for curries and gravies as the grain coats very well. A mildly aromatic grain, we recommend this for everyday consumption. Once lost in the valleys of Karnataka, Biliya is now cultivated in a small village called Manjakkudi as a part of the conserving heritage rice varieties by Spirit Of The Earth. Poongar rice ( @ulamartindia ) uthappam filled with Spring onions chopped finely, grated carrots, minced Birds eye chillies.Was thrilled to find them in #migros supermarket here in Basel. Lots of grated ginger... They tasted just so Divine. I use a nonstick tawa here as the stove top in cooking range here is Induction based . Figuring out various alternatives to fix this healthy here for my son. German turnip / kohlrabi / Navilkosu sambar.. Delicious.. Homemade chutney pudi, Garaney tuppa, Hot rice, Curds.. Pure bliss truly. Happy Son n father.. Happiest Mother.. Pure joys of cooking for your son when he needs us the most... Missing my little one @amareshprahallad ... Usage of indigenous rice for Dosai / idli batters makes it much more healthier than any other.More fiber & More vital Nutrients ensured.....excellent roughage plus wholesome to keep you going great. Recipe for Poongar Dosai ; Poongar rice 4 parts, 1 part urdh dal, a fistful of Thuvar dal, 1/4 methi seeds / fenugreek seeds. Wash all thoroughly and soak for a good 9 hours. Grind (we have an Ultra wet grinder here) like you would for a dosai adding just enough water. Once done mix well with clean hands, add salt, 2 tbspn of a previous fermented batter cover and rest aside overnight (8/9 hours) I mix some veggies inside the batter and some to top up... Choice is unlimited as your ideas come... Enjoy.... Payasam(kheer) always invoked celebrations for me as that was the dessert that my mother prepared most often during childhood . And I preferred the milk based payasam over the jaggery and coconut milk based prathaman. The former used sugar in plenty. My father made excellent prathamans ( the kheer with jaggery and coconut milk) but the birthday payasams were invariably the milk based ones. In our household now, where one of us likes the prathaman and other, payasam, it was wonderful to combine the two with this recipe. The emmer vermicelli made into a payasam with milk and raw cane sugar ( interchangeably called jaggery powder made by drying cane juice over the stove and getting that fine powder) was a wonderful mid point meeting for us. The fine raw cane sugar we have is suitable to use with milk, try it you may never go back to white sugar ... The rich payasam with the golden colour infused by the jaggery and the nutty taste of roasted emmer vermicelli was as delicious as it was quick. This delicious ancient wheat variety with a different protein structure is an amazing option, versatile and healthy. If you haven't tried it yet, please do...Recipe shared on the recipe card ! I always wonder if the taste is the ingredients or is it also enhanced by the small bronze uruli that we prepare it in? Passed down from my great grandmother through my mother, the uruli was used by valiya ammumma to make the offerings for the sarpa kaavu ( sacred grove ). Appam Has always been Our family favorite since childhood. I recall Our Amma pouring the fermented batter into a Heavy Iron Chetty and serving us 4 children Steaming hot Appams.. Chutney and sweetened Coconut milk. We were a Big family and as youngsters had an Enormous appetite 😅. We would await the delicacies our mother cooked for us. Those were the days.. She would never tire cooking and feeding us fresh food daily. The joy of simply having to watch her swirl the iron appa chetty was pure Bliss.. I am personally a pucca appam fan and try out variations .. I have used a combination of Poongar / red rice & unpolished Boiled rice from Tamil nadu. Fresh coconut goes in too... And soaked ingredients ground well to the right texture required, let to ferment well for 7/8 hours depending on the region climate ... You are ready to 🌀🌀Swirl the Appam. . . GMO. Mostly I think our brains use this as a shorthand for good one vs bad one, and whether you think GMO seed is good or bad depends upon your worldview. But the conversation seems to be solidifying along two basic tracks: corporate vs Independent. And did you know that the government put over 3 million dollars into helping commodity Ag corporations develop marketing campaigns to counter the growing public resistance? There are many farmers growing commodity crops who have little depth of historical knowledge about the crop they are growing. Sure, they can tell you all about the yield and their system for growing it, and quote all the commodity markers of price and profit, and sure do know their equipment, but. Their working knowledge of the flavor & performance crops like soy, corn, and wheat as an ingredient grown for culinary use is so erased, very few commodity farmers even know it is a thing. But it very much is. One variety of corn, ground for flour, tastes and performs very differently from another. Ask farmers if they have ever cooked with their grain crops, and you will get lots of cackling laughter emojis, much ridicule, and zero awareness of the point. I have neighbors growing spelt who did not even know people could eat it, or how to cook it, or why one would want to do such a thing. The nutritional content of our food has been watered down from the very beginning of the process, the seed, all the way through the processing, transport, and storage systems, and most of us do not even know that there are choices, and differences. It is encouraging to see a resurgence of books about grains, and the emergence of farms going back to explore and develop markets for old fashioned crops. We tend to believe that a switch was flipped, suddenly taking agriculture from some lone guy working rocky ground with a single homemade plow drawn by some skinny ox to the machine-and-chemical-powered Green Revolution.
