Last week we hosted The Great Bee Morning Tea at Koala Cherries. Our team enjoyed yummy treats prepared by our staff and local business, all of which contained HONEY! Delicious! Did you know that Bees work from sunrise to sunset, as long as temperatures are over approximately 14°C? That a Honeybees wings beat 11,400 times per minute and in one day a worker bee can visit as many as 10,000 flowers..... This sounds about as busy as a Koala Cherries team member during our summer harvest! 🍒🐝 It was great to raise awareness of these amazing creatures by celebrating World Bee Day (20th May), as they are so very important to the food industry. #worldbeeday #beesarethebest #teamwork

The bees are coming... the bees are coming... to help pollenate our apple trees at Hilltop Orchards! Exciting news.... 25 colonies of honey bees are arriving for a twelve day work siesta in the Orchard from our friends at Rulison Honey Farms. They are a family owned and operated farm located in the rural town of Florida in the Mohawk Valley of upstate New York. With over 125 years of beekeeping experience, the Rulisons work year-round managing approximately 2000 colonies of bees, pollinating orchards in the Spring, extracting honey during the summer and early autumn, rendering beeswax, filling and bottling honey by hand, We actually sell their delicious honey here at our orchard store. We are partnering with them on this excting endeavour to promote the industrious honey bees and their important place in the world of agriculuture and farming in the United States of America. Weekend inspections and the girls have been working hard! 🐝 Lots of stored honey and great brood/laying patterns. Another quick drone uncapping for a varroa mite check and we are all clear! For our followers learning all about bees. This is one of the ways to check if your hive has been infested with the varroa mite. The mite will attach themselves to the drone brood. We still need to check our hives 4 times a year with an alcohol wash and report results to DPI. The jars of creamed honey we did on the weekend were a huge hit!! 🍯 We thought we would let you know a little bit about creamed honey………The only difference between creamed honey and regular honey, besides the colour is texture. There is nothing added to creamed honey to make it creamy – to be clear there is no dairy in creamed honey. 🐝 Creamed honey, also called whipped honey, spun honey, and churned honey is honey that has crystalized with very small crystals. One of the characteristics of raw honey is that over time it will crystalize. Some raw honey will crystalize quickly and some won’t crystalize for a year or more. There are many variables that contribute to how quickly raw honey crystalizes. Some of those variables are if the honey has been filtered or not and what temperatures the honey has been exposed to – before and after harvesting…. Did you know... Almost 90% of wild plants and 75% of leading global crops depend on animal pollination. One out of every three mouthfuls of our food depends on pollinators such as bees. If you find a bumblebee which appears to be struggling, it may be that it is just resting, particularly if the bee is a queen in early spring. If you think the bee is struggling the best thing to do is gently put the bee onto a bee-friendly flower. If there are no bee-friendly flowers around, mix 50/50 white sugar and water to give the bumblebee a one-off energy boost, providing the carbohydrates it needs to fly. Simply offer a drop or two of sugar water up to the front end of the bee on a teaspoon or an upturned drinks cap in a sheltered place and allow the bee time to recuperate. Did you know that pure Honey NEVER goes off…. 🍯 A common question we get asked about honey crystallisation. While honey is certainly a super-food, it isn't supernatural–if you leave it out, unsealed in a humid environment, it will spoil – but as long as the lid stays on it and no water is added to it, honey will not go bad. Our honey is sooo yummy that it is usually consumed very fast, but if left untouched honey can crystalise (especially when it’s cold)This happens as its unusually high level of dissolved glucose separates from water (i.e., granulates). Primary factors influencing honey crystallisation are its proportions of fructose, glucose, and water; amount of particulate matter such as pollen; method of processing; and storage temperature and duration. Honey crystallisation is NOT a sign of spoiling. On the contrary, crystallization indicates that honey is natural and unaltered PURE HONEY🐝 🌸 Just pop the jar in the microwave for a touch to soften or stand in hot water and your good to go!!! NOW….
