It's thought to have been made by Amish women in Pennsylvania and found its way to Maine, where it became a staple at bakeries and kitchens alike. The classic Whoopie Pie involves baking rounds of chocolate cake batter to form the "cookies" and then filling them with a sweet, marshmallow-cream-inspired filling. Over the years, bakers have gotten creative, introducing a variety of flavours like pumpkin, red velvet, and even maple-bacon! Why not try our simple recipe for a Whoopie Pie? Ingredients for the cakes: * 250g all-purpose flour� * 60g unsweetened cocoa powder� * 1.5 tsp baking soda� * 0.5 tsp salt� * 125g unsalted butter, room temperature� * 200g sugar� * 1 large egg� * 1 tsp vanilla extract� * 240 ml buttermilk� Ingredients for the filling: * 75g vegetable shortening� * 75g unsalted butter, room temperature� * 200g powdered sugar� * 1 tsp vanilla extract� * 150g marshmallow fluff� Instructions: 1. Preheat your oven to 180°C and line baking sheets with parchment paper.� 2. Whisk together flour, cocoa powder, baking soda, and salt in a bowl.� 3. In another bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla.� 4. My love of color and texture doesn’t stop with my floral arrangements. I arrange plants in my garden too, thinking about how the leaves and flowers will contrast or complement one another while also considering bloom time and care. Red, pink and chartreuse aren’t colors I typically gravitate towards, but the house I bought came with an interesting combination of peachy pink and yellow siding. For now, I’m leaning into this palette- choosing plants that work with what I already have while also offering interesting foliage all summer long and more cut flowers (bonus!).
