Currently the Italian basils are still in abundance at our garden. Harvested some today to make pesto. This time not using pestle and mortar - instead we use a new hand blender that was acquired recently. End product is beautiful. Could taste slightly coarse texture as compared to using pestle and mortar. But the pesto is still very tasty with crackers, bread and pasta. Somehow I still prefer the pesto made out of pestle and mortar. This week, we had not only the honey bee, but also a couple of other special guests visiting our herbs 🤗 - the hornet and the stingless bee!! We are so happy to see them here, busy collecting nectar and pollinating the flowers 😍 They are such beautiful flying creatures - especially the tiny little stingless bee. This evening, wifey picked some herbs from the pots - sage, flat leaf parsley, and rucola - to make butter sage tortellini (spinach ricotta) for dinner. Cooked the sage and thyme in lots of butter, and throw in the mushrooms to cook. Once the sauce is ready, add in the cooked tortellini and mix well. Lastly, garnish with rucola, parsley, pine nuts, crushed black pepper and parmigiano reggiano. And there we have it! The lemon balms have been ready for a while. We took some leaves last weekend, to make lemon balm tea for an online tea session with some friends. The tea was awesome and aromatic as always. Failed a few attempts trying to grow coriander from seeds - not passing seedling stage. But this time it not only reached seedling stage, it actually grew until bolted out of control… The seeds used were not from any nursery pack, but those u can get in the market - meant for cooking. Our two young Rosemary plants (they are siblings) are well over a year old, since propagated in beginning 2020. They have grown taller and lush over the one year - getting out of hand. Often seen them dancing wildly with the wind during the recent crazy windy season - looked messy. I gave them a hard prune - to let new foliage grow. Ended up harvesting a huge amount of rosemary in the process. Unfortunately we are not in need of any rosemary for cooking at the moment. So I dried some of them, and made some new cuttings. Also trying to see if they make good fragrance pouch.
