Pretty slim pickings in Tebay (South) Services. They have items marked as gf but sadly a sign indicates that it is "not suitable for Coeliacs ". Given we were heading for York where I knew I was in for a weekend of fabulous gluten free goodies (I'll do a review post of what I had) I was happy just to have a latte and a cake, however it's such a beautiful place to stop it would be great to have something a bit more substantial. They have a selection of "Gleefully Gluten Free " cakes by Pullins Bakery I usually go for the Trillionnaires Slice but they didn't have any, so opted for the Balboa Rocky Road instead. Living with coeliac disease: 6 months in and it’s definitely a rollercoaster! I was diagnosed back in October, after a long process of testing and waiting but I’m officially 6 months gluten-free. To say it’s been an adjustment is an understatement. There are good days with delicious discoveries, but also frustrating days where I just miss a simple sandwich or not having to think ahead when I’m out or taking snacks everywhere I go. The cost of gluten-free options can be stupidly spenny! It shouldn’t feel like we’re being penalised for a health condition that’s out of our control. One of the toughest parts is the inconsistency of symptoms. Even when I’m super strict, some days I feel awful and struggle to do anything. It’s like my body plays its own guessing game. Right now, I’m really struggling mentally. Food, which used to be a fun and enjoyable now feels limited and stressful, especially since I’m pretty sure I’m now reacting to dairy too. If I felt consistently better, I think I could manage, but these ups and downs are tough. Especially when it’s hard to not only see what you’re missing out on in these early days but yet still suffering. I’m sure there’s loads of us out there with coeliac disease just trying to navigate our way through, I’m sending support and solidarity and always a listening ear! Yesterday we went to nec for the national outdoor expo and the homebuilding and renovation show. Highlight of the day was tryna find our car for over half an hour and threatening security and nearly calling the police... Turns out they need to redo their signage as its more than misleading bumping into another 3 people losing their cars... “Gluten free” isn’t a diet. It’s a lifestyle. Once you switch how you think about gluten free living, you will FINALLY be able to find joy in food, cooking, and exploring new restaurants again (yes it’s possible)! But, like any diet, if you tell yourself it’s a “diet” your brain tricks you into focusing on ALL THE FOOD you “CAN’T” have! You put blinders on and you fail to see all the foods you GET TO have that’s good for you and tastes great! Gluten free living can be isolating, we convince ourselves we are a burden when friends invite us out to eat (so we cancel) And we can be scared to cook food for others that question “is it gluten free?” Before they even taste the food because everyone expects GF food to taste bad! Food becomes the point of stress because it comes up so many times throughout the day (after all, we still have to eat!) But food is supposed to be a way to bring people together but often can feel isolating. It doesn’t have to be that way! Ja, ja, ich weiß, Weihnachten ist vorbei. Aber nach dem Weihnachtsfest ist vor dem Weihnachtsfest. Und es ist doch immer ganz nett, wenn man schnell ein paar Kekse für seinen Besuch zaubern kann😉 Hier ist eine Variante der italienischen Weihnachtskekse, die ziemlich sicher gelingt und sehr gut schmeckt. ORANGEN-MANDEL-KEKSE 🍊🍪 200 g Mandeln 80 g Zucker 2 Eiweiß Abrieb eine Orange (Bio, ungespritzt) 1 Msp Zimt 1 Tl Backpulver 2 El Orangensaft 120 g Puderzucker Orangenmarmelade(Aprikosenmarmelade) Orangenblütenwasser zum Anfeuchten der Hände (alternativ Wasser) Mandeln mit Zucker in der Küchenmaschine fein mahlen. Eiweiße dazugeben. Abrieb eine Orange hinzufügen. Alles vermischen. Orange auspressen und 2 El Orangensaft dazugeben, vermischen. Zuletzt Backpulver unterrühren. Mit angefeuchteten Händen kleine Kügelchen formen, diese in Puderzucker wälzen und auf ein mit Backpapier ausgelegtes Backblech setzen. In die Mitte von einigen Keksen eine Mandel rein drücken. In die Mitte der restlichen Kekse eine Mulde hineindrücken(mit dem Stiel eines Holzlöffels oder mit einem Finger). Ungefähr 12-15 Minuten bei 180° (Ober-u.Unterhitze) backen. 3 El. Orangenmarmelade mit 1 El Wasser vermischen, aufkochen und 1 Minute köcheln lassen. Die Marmelade in die Vertiefungen der leicht abgekühlten Kekse geben. Wow, über zwei Jahre ist es her, dass ich hier mal ein Rezept gepostet habe... Kein Wunder, dass Instagram sich wundert, ob dieses Konto überhaupt mir gehört 🙈😂 Was soll ich sagen, ich habe eine falsche Entscheidung getroffen, die mich ein paar Jahre gekostet hat. Letztes Jahr habe ich nicht einmal etwas zu Weihnachten gebacken, zum ersten mal seit ich in Deutschland bin. Mir war gar nicht nach Feiern zumute. Mein Leben fühlte sich an, als wäre ich in einem falschen Film, bzw. einem Albtraum gefangen. Ich habe immer noch daran zu knabbern, aber langsam erkenne ich mich wieder🙂Zu diesem Anlass habe ich mir pünktlich zum 1.Advent ein paar Kekse gebacken. Ich wünsche Euch eine schöne Vorweihnachtszeit! ORIENTALISCHE MANDELKEKSE 250 g Mandeln 70 g Zucker (oder etwas mehr) 2 Eier 1 Teelöffel Zimt 1 Esslöffel Kakaopulver 8 g Backpulver ca. 50 g Puderzucker 20 Walnüsshälften Puderzucker in einen tiefen Teller geben. Die Mandeln in einer Küchenmaschine ganz fein mahlen. Zucker, Zimt, Backpulver, Kakaopulver hinzufügen und gut vermischen. Zwei Eier dazugeben und schnell mit einem Esslöffel vermischen bis alle Zutaten feucht sind. Mit einem Teelöffel kleine Mengen Teig portionieren und mit gut angefeuchteten Händen kleine Kügelchen formen. Jedes Mal die Hände neu mit Wasser anfeuchten. Für eine orientalische Note nimmt man statt Wasser Orangenblüten-Wasser oder Rosenwasser (gibt es in einem arabischen oder türkischen Lebensmittelgeschäft), es klappt aber auch ohne ganz hervorragend. Die Bällchen im Puderzucker wälzen, auf ein mit Backpapier ausgelegtes Backblech setzen. Zum Schluss jeweils eine Walnusshälfte in die Mitte des Kekses reindrücken, so dass an den Seiten schöne Risse entstehen. Im vorgeheizten Ofen(Ober/Unterhitze) bei 180° 15 Minuten backen. Like this post if you agree ❤️ Too many times, we hear people saying these things to other people who are living with coeliac disease 😔 It is so important to understand that the gluten free diet is not a choice when you have coeliac disease. It's the only medical treatment available for your condition, and it has to be followed for life. Also, very small amounts of gluten can cause issues for people living with this condition. So, people are not making a fuss when asking for food to be prepared in a safe way for them. They are just trying to ensure they don't get unwell. I cant help but feel this is a recipe for disaster. I've visited a few @asda stores recently (I'm desperately on the hunt for their gf Oat breakfast biscuits and cannot find them anywhere 😩). MOZZARELLA & TOMATO SALAD Tonight dinner was this mozzarella and tomato salad. Unfortunately at the restaurant there were very limited gluten free options, plus adding in being a veggie too, it was a nightmare! In the end, I settled for this HUGE salad, although incredibly basic it was very filling and so fresh! It’s not always easy finding things being both gluten free and veggie, plus when we are abroad the language barrier is often quite stressful. I always bring snacks when we go out, just incase as it really does make it easier when there isn’t a guaranteed safe option. GF 6" SUB WITH HAM, CHEESE & TOMATO SUBWAY, LARGS I tried a gf sub from Subway for the first time the other day and have to admit it was with some trepidation. Will it be enough food for a day at a friend's house? 🤔🙈 For the first time after a whole year, I spent a day somewhere else. It was too hot and unbearable in my flat so I was seeking refuge at a cooler friend's place. 🥵 My flat had 30°, outsides was 36°. It's quite a lot of preparation/cooking to stay somewhere else for longer than a few hours if you don't use processed convenience products. 😐 And of course, I forgot half of it at home 🙈🤦🏻♀️ cutlery, dinner ingredients for cooking... I think I have been to every @asda in the West of Scotland to find my favourite Asda own brand gluten free breakfast biscuits. Hey there, I'm Andrea! I was diagnosed with Celiac disease at 29, and now I'm 33. Let me tell you, finding affordable gluten-free options can be quite a challenge! Whether it's at the grocery store or eating out, gluten-free products tend to be more expensive (and unfortunately, this has worsened thanks to the pandemic). Dining out can also be tricky because it's important to trust that a restaurant understands what celiac disease is and will prepare the food safely. It would be a game-changer if restaurants could be more transparent about their ingredients online. That way, I can make an informed decision before choosing where to dine. Thankfully, my husband is an amazing cook and has mastered many of my old favorite dishes. His gluten-free lasagna is simply incredible! But, Winnie's eclair is my absolute favorite treat to enjoy when I'm out and about. We are truly lucky to have a variety of gluten-free options available, but grocery shopping and eating out can still be stressful. My advice? Start small and experiment with different brands until you find the ones you love. And don't forget to join supportive communities like the Gluten Free Collective. Important topic that I was discussing a few times this week: just because a chronically sick person says they are 'improving' it doesn't mean they are fully recovered/healthy yet! ⛔ And just because you can see them once or twice being outside again for a short time and smiling doesn't mean they are able to do so ALL the time. ☝️ It is understandable that healthy people project their experience and standards onto sick people. I get that. But it's not like the flu that is over after 2 weeks. 🙅 I still have to manage my energy, I am still resting on the couch most of the time spending my days isolated at home alone. But at least I don't need the wheelchair anymore and I am able to at least go outside for a short time again. 🍀 It is still far away from a normal life. But outside people don't see the daily struggles. They only see the short moment but not that it took several days of saving energy and planning to do the smallest things that healthy people don't even have to think about because it's normal for them. A beautiful day 🍀☀️ In the morning I had an appointment with the healthcare insurance to get some caregiving help (household help). The lady even knew about celiac disease (she has a family member with celiac) which was very helpful. 🙏 Then I went to a massage shop and got super relaxed afterwards 🤗 And finished with enjoying a meetup with two friends in the park. It was exhausting and I'm hungry as I didn't plan my lunchbox meals well enough. Good news: I found a clinic for treating my eating disorder (sed/arfid/orthorexia) and that is willing to cater gluten-free for me. 🍀🙏 They will get some gf breads and buns and take care of cross-contamination. Even when we will be cooking together. There are just a few clinics in Germany that treat a non-typical eating disorder like mine. We had our first phone call appointment and I could start soon, my stay would be at least for 5 weeks. I just have to get the yes from the pension insurance. It will be very hard and challenging there but that's what is needed to get healthy again. Proud of myself! 🤗 I finally tried some rice protein powder to get more protein into my diet. It's an important step in gaining weight and overcoming my food anxiety/orthorexia/sed/arfid disorder. It's glutenfree and I started with very small doses, like just a few crumbs dissolved in water after a meal. My body needs to get used to new foods slowly. I had given my body a full month of gluten-free diet to rest a bit before I started trying new things. First attempt at the monthly celiac meetup @arepas.world_leipzig 🌮. Unfortunately, when the doors were closed the noises and smells were still too much input. Also I'm not used to being out in the evening. So I got migraines with aura and had to leave after 1 hour. 😔 But still proud that I tried to attend. 🌱 I still cannot feel relaxed when not wearing masks though. It's a balancing act between the need for safety and the need for connecting with other humans. Baby steps are also steps forward 🍀💪 I also didn't know how to handle my arfid/eating disorder/food anxiety as I really craved the delicious food they served but am still afraid to try new things. 🙈 Hopefully soon!
