S is for SEED CRACKERS in the Reshmom A to Z protein series – when I saw @rekhakakkar post this recipe for seed crackers, I knew I had to recreate them as a grain-free, protein rich alternative to crackers. Use them to scoop up all your high protein dips for an awesome snack! INGREDIENTS: 1 cup flaxseeds ¼ cup pumpkin seeds ¼ cup sunflower seeds ¼ cup sesame seeds ¼ cup chia seeds 1 tsp sea salt 1 tsp dried oregano ½ tsp red chili flakes (adjust to taste) 1 cup hot water METHOD: 1 Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper 2 In a mixing bowl, combine all of the dry ingredients and add the hot water stirring continuously until you have a thick, sticky dough 3 Let the mixture sit for a few minutes to allow the chia seeds to absorb some of the moisture and help bind the dough 4 Transfer the dough onto the baking sheet and spread it out evenly using a spatula. Aim for a thickness of about ¼ inch 5 Use a knife or pizza cutter to score the dough into desired cracker-sized pieces. This makes it easier to break them apart after baking 6 Place the baking sheet in the preheated oven and bake for 25-30 minutes or until the edges are golden brown and the crackers are firm to the touch. 7 Once baked, remove the crackers from the oven and let them cool completely on the baking sheet. They will continue to crisp up as they cool 8 Once cooled, break the crackers along the scored lines into individual pieces. Store them in an airtight container at room temperature for up to a week 9 Enjoy your homemade flaxseed crackers as a nutritious snack on their own, or pair them with your favorite dips or spreads!
