A few weeks ago I got into the habit of watering the shaded area in what we will generously call my “garden” 😎…it only took a few days for the magical star maiden herself to grow in abundance. Although sweet and soft like a nice cool breeze, Stellaria is quite fierce at confronting the tough things. Ovarian cysts, check, pink eye, check, skin irritations and scar tissue…double check! Chickweed is the great saponin queen, gently dissolving, cooling, watering and smoothing our wounds, lumps and bumps. More adventures in Spring foraging! Today I harvested chickweed, and started an oil infusion as well as a tincture. Chickweed is a highly nutritious herb than can be eaten raw and in salads! Internally, chickweed is commonly used to ease digestive troubles, and soothe the stomach. Externally it’s great for cuts, wounds, itchy skin conditions, and can be added to salves, balms and poultices for eczema and psoriasis. I also harvested some mugwort, which is drying in my dehydrator, and can later be used for teas, herbal bath blends, and more! Like chickweed mugwort is good for digestion, however mugwort also adds as a nervine and can aid in relieving stress, anxiety, and help with sleep. Mugwort is also said to aid in lucid dreaming.

Making chickweed oil with cold method. I wanted to try this method as I like the idea of keeping the raw qualities of the plant and the olive oil. Just cut up fresh herb, loosely pack into sterilised jars, add a teaspoon of vodka (or whisky if that’s all you have 😉) give a stir, then fill to the absolute brim with extra virgin quality olive oil and shake every day for 4-6 weeks. ❤️ the. Am smiling ear to ear right now..just because the outcome of trying a new approach worked out well. Yesterday I strained Chickweed ,Helichrysum and Turmeric infused oils.. Its nothing ground breaking , it just made my work easier and clean up easier ! Straining with coffee filters is it ! No mess , no spillage best of all ..see the clear oil after straining just once ! No need to double or sometimes triple strain. The best part this morning I just discarded the filters which held the spent herbs well. No spillage , no scrubbing of strainers , cheesecloth and oily table ..just discard ! I find the infusion better rather than letting it dry completely and then slow infusing. “Eat My Backyard”, 2018 Though this dish wasn’t a complete winner, it is a great example of the direction I want my cuisine to take. 85% of this dish came straight from my backyard or from within 30 miles of Chattanooga. A very thin layer of Magnolia Panna Cotta made with Holley Hill Farms Fresh Cream, and a salad of foraged greens and flowers from my yard dressed in Chickweed Oil made with GA Olive Oil and Lemon Juice, which were two of the 3 ingredients that weren’t from within 30 miles of Chattanooga. (I could use a local Vinegar and Oil supplier. Hint* Hint*) This dish started off very bitter, then went sweet and finished off with an earthy, creamy, floral taste that reminded me of really Vegetal Fresh Milk. Almost as if the Cattle had been eating the weeds as well.
