White flowers with triangular stem, also called #threecorneredleek, it's got a delicate oniony vibe, the flowers are much stronger in taste. It’s wild ramp time! 🌱 Thankful for food from the forest. I tried to be all Instagrammy and zen tonight among the trees, but in reality, I was getting eaten alive by black flies! Some of you may be wondering what wild ramps are. Allium tricoccum (also known as ramps or wild leeks) = a species of wild onion or garlic. We practice ethical/sustainable harvesting and do not pick the bulbs. I read somewhere that ramps take a very long time to complete a growth cycle. The article I read years ago stated that from seed to flower, it takes anywhere from three to ten years, depending on the soil, habitat, and climate for a single plant to reach seeding maturity. We just pick one leaf per plant so the other leaf can continue for the plant to survive for next year. Also, do not dig them up by the roots, as it threatens their survival as a species. We harvested just enough ramps to make some wild ramp compound butter and some potato soup. I might make some wild ramp & cheddar scones. We’ll see. Have you ever had wild ramps? Late to the game this year picking ramps for Ramp compound butter, ramp pesto and pickled ramps. Disclaimer: We pick from a patch that is at least 50 acres of ramps and they are so dense that they nearly choke each-other out. We selectively harvest the leaves to bulb with care to leave the rhizome (root base) to allow for continued growth in the coming years. This is a sustainable harvest for this patch. Many areas can be over harvested with an uptake of individuals getting into foraging and improper harvesting. In areas where a patch is frequently harvested or a smaller size patch it is recommended to only take one leaf from a single plant. Other ways to help promote a healthy ramp patch include assisting with the spreading of seeds and not over harvesting patches. If you told me A few years ago that I would be foraging in the forest, I would have laughed at you but here we are… lol 😂 🌱 Ramps or wild leaks are native to North America and grow only a few weeks a year in the spring. They have a beautiful garlicy/ oniony taste. We were lucky to find them growing among the trilliums in Stratford ,ON. I was able to make a compound butter and a loaf of sourdough with my haul…. Plus a ton of them will go into the freezer. 😋 🌱 Disclaimer: foraging is not allowed in city/provincial parks here as it can disturb the wildlife. We went to crown land (hence the road trip out of the city!). Yesterday we made ramp pesto from the leaves of the ramps we had picked last Saturday. We use sunflower seeds instead of nuts due to Lex having severe food allergies. We don’t measure for this recipe but we use ramp leaves finely chopped, lots of garlic cloves, olive oil, shelled sunflower seeds, shaker Parmesan cheese, salt and a little bit of water. 9 jars topped with a layer of olive oil are now in the freezer. The layer of olive oil keeps the ramp pesto green and fresh in the freezer.
