Trahanas With Mushrooms, Chicken, and Mizithra (Τραχανάς με Κοτόπουλο, Μανιτάρια, και Μυζήθρα) A ‘clearing out the fridge’ recipe turned into this wonderful dish! It is earthy, warming, and comforting, and the mizithra cheese on top adds some freshness and tang. 🌿 Recipe (1 serving) 📜 Ingredients • 50g sour trahana (ξινός τραχανάς) • 25g mizithra (μυζήθρα) • 75g lean ground chicken (I used 90/10) • 125g brown cremini mushrooms • 1 small shallot (20g) • 1 clove garlic • 5ml (1tsp) olive oil • 20ml white wine • 250-350ml chicken stock • 1tsp dried oregano • salt • pepper 📜 Method 1) Halve the mushrooms, then cut them into slices. 2) Dice the shallot and garlic. 3) To a pot, add 2.5ml olive oil and brown the chicken, breaking it up into chunks instead of a fine mince. Do not overcook it, as it will continue to cook in the stew. 4) Remove the chicken, then add the mushrooms. Add salt, cover the pot, and cook them down. Then, uncover the pot and allow the liquid to evaporate. 5) Remove the mushrooms, add 2.5ml olive oil, and sauté the shallot and garlic. 6) Add the trahanas and brown it slightly on low heat until golden, then add back the chicken and mushrooms and deglaze with the white wine before adding the chicken stock. 7) Add pepper and some oregano, then simmer for 10-15 minutes until the trahanas is fully cooked and the liquid is mostly absorbed (add more chicken stock if you prefer runny soup, otherwise simmer until a thick stew forms). 8) Add salt to taste, then serve topped with crumbled mizithra, the rest of the oregano, and more pepper. ⚖ Macros (approximate): 470kcal, 50c, 18f, 27p. #cooking #food #recipe #stew #trahanas #traxanosoupa #chicken #mushrooms #mushroomstew #mizithra

A childhood memory in a bowl🫠 It is a simple tomato soup, with warm spices of cinammon, sweet &/or smoked paprika, bay leaves and the addition of kritharaki (orzo) pasta, then served with a good helping of mizithra or parmesan cheese! It is a Corfiot soup with Byzantine influences. Kolopibiri comes from the Venetian word "collu pimpiri" meaning 'with pepper'. Either sweet or hot paprika can be used. Ηρθα να σας πω τα τι,πως κ γιατι!να κανω ενα τσιγγαρο κ να παρω το δρομολογιο για 💤💤💤 Υλικα -500 γρμ χυλοπιτες -500 γρμ.κολοκυθα σε κυβακια παχους ενος δακτυλου -1 μετριο πρασο το λευκο μερος σε ροδελες -1 μετριο κρεμμυδι στο χοντρο τριφτη -μισο ματσακι ανιθο ψιλοκομμενο -μισο ματσακι καυκαλυθρες ψιλοκομμενες -1 κιλο γαλα -8 κ.σ κορν φλαουρ -100 γρμ. μυζηθρα -μισο φλ. του ελλ.καφε ελαιολαδο -1 φλ.του ελλ.καφε λευκο κρασι -αλατι,πιπερι Εκτελεση -Στρωνουμε τις χιλοπιτες σε ενα ταψι. -Σε ενα μπολ ριχνουμε το γαλα κ προσθετουμε βροχειδων ενω ανακατευουμε συνεχως να μην σβολιασει κουταλια κουταλια το κορν φλαουρ. -Σε ενα βαθυ σκευος ριχνουμε το ελαιολαδο να καψει. -Ριχνουμε μεσα το πρασο,κ το κρεμμυδι να γυαλισουν κ μετα προσθετουμε την κολοκυθα κ αλατοπιπερονουμε. -Αφινουμε μεχρι να ροδιζουν και σβηνουμε με το κρασι. -Μετα απο 3 λεπτα προσθετουμε το μειγμα με το γαλα κ το κορν φλαουρ και αφου παρει μια βραση,προσθετουμε την μυζηθρα,ανακατευμε συνεχως και ριχνουμε το μειγμα επανω στις χιλοπιτες. -Πασπαλιζουμε με εξτρα μυζηθρα και φουρνιζουμε σε προθερμασμενο φουρνο στους 180 βαθμους μεχρι να ροδισει. #souffle #pasta #hilopites #syntaghthshmeras #greekrecipes #pumpkin #mizithra #comfortfood #healthyfood #food #greekblogger #westgreece #greece #village #farm #garden #συνταγη #χωριό #ζυμαρικα #μυζήθρα #φουρνος #enoorez01
Καλημερα!🙌☀💚 Τελευταια μερα του χρονου με μια παραδοσιακη πιτα, μπομποτα (καλαμποκοπιτα) με μυζηθρα.Θρεπτικη και χορταστικη, που θα σε κρατισει μεχρι αργαμιση!μην σου πω μεχρι του χρονου!😁 Ευχομαι σε ολους,για το νεο ετος! Υγεια!Δημιουργικοτητα! Εμπνευση! Θετικη Ενεργεια! και οτι επιθυμει ο καθενας να το παθει εις διπλουν! Υλικα για μαντεμι ή ταψι 25εκ -200 γρμ. νερο -50 γρμ. γιαουρτι -125 γρμ. καλαμποκαλευρο -75 ελαιολαδο+1 κ.σ για το αλλειμα του σκευους -100 γρμ. μυζιθρα -1 αυγο -1 κ.γ μπεκιν -1 κ.γ δυοσμο -Αλατι-πιπερι Εκτελεση - Σε ενα μπολ βαζουμε το νερο,το ελαιολαδο και το γιαουρτι και ανακατευουμε. -Στην συνεχεια προσθετουμε το καλαμποκαλευρο και το μπεκιν,και τελος την μυζηθρα,αλατι,πιπερι,δυοσμο. - Θελουμε ενα πυχτο χυλο να δημιουργηθει. -Αδειαζουμε σε αλλειμενο ταψι με ελαιολαδο. - Ψηνουμε στο φουρνο μεχρι να ροδισει - Κοβουμε οταν ερθει σε μετρια θερμοκρασια -Αν επιλεξετε στο τηγανι στα καρβουνα,τοτε σκεπαζετε αυτο με καπακι και δεν ανοιγετε τα πρωτα 15 λεπτα και οταν ξεκολαει απο τα τοιχωματα,αναποδογυριζετε με την βοηθεια του καπακιου και αφεινετε αλλα 10 λεπτα να ροδισει κ η αλλη πλευρα. *Προσοχη,δεν χρειαζεται φλογα κατω απο το τηγανι αλλα καρβουνα,για να ψηθει ομοιομορφα. #bobota #cheesepie #syntaghthshmeras #greekpie #corn #mizithra #firecooking #castironcooking #food #greekblogger #westgreece #greece #village #farm #garden #συνταγη #χωριό #πιτα #μυζήθρα #enoorez01
