AmberChes Spriits call the Swan Valley home, one where the Rheeston-Stewart family all contribute to making award winning gins & other spirits. During Head distiller Alicia’s final year of Masters in Chemical Engineering she worked of a project involving distilling whey, a dairy by-product, into gin and vodka. Inspired, she and her father Dean undertook further study at the Distillers Institute. With the help of Mum Heather, and sister Lauren, the plan to open a distillery took flight. It just needed a name. Enter Chester, the family’s beloved Irish Setter who just happened to share the name of the first still the new distillers purchased - his pedigree name is Aednat Ambercheses. Here is a recipe for a 𝐂𝐥𝐚𝐬𝐬𝐢𝐜 𝐍𝐞𝐠𝐫𝐨𝐧𝐢 🍊 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬: - 30ml McRobert Juniper Botanical Gin - 30ml Campari - 30ml sweet vermouth - Orange twist for garnish - Ice cubes 𝐌𝐞𝐭𝐡𝐨𝐝: Fill a mixing glass with ice cubes. Add McRobert Juniper Botanical Gin, Campari, and sweet vermouth to the mixing glass. Stir well until chilled, about 30 seconds. Strain the mixture into a chilled rocks glass filled with ice. IN FOCUS: Black IPAs The darling style of the early 2010s had all but disappeared by mid-decade as citrus imbibed IPAs arrived, then a nascent mist which would bloom into Haze. And while the earliest commercial release dates to 1990, the style has always been an outlier, even at its peak. The balance of dark malts and hop forward attitude, without astringency, presents a fine window of opportunity, and there were many that just didn't make it, probably marginalising BIPAs further. Ten years on and 2024's Winter appears to be Black IPA's Renaissance. With new hop products, diverse yeast offerings and overall better equipment, early signs of this year's releases are very positive. Here are three West Australian examples that show the scope of Black IPA's style. Freestyle's Break Sea (Pic #1) presents the most understated, yet this is as well fitted as the label's BCFing-style angler's apparel. Milk choc and crushed Milo carry proceedings, with feint pastis and moderate bitter ompft - there's almost a hoppy Porter vibe but at +8% abv. It's another tidy release from the small Bassendean outfit, one which adds to a list of dialled in beers. Rocky Ridge's Karl, I Am Your Father (Pic #2) welcomes straight forward milk choc, piney dust and fruity filter coffee. Hints of caramel, charred apricot, dates elevate, but this is really a drinking beer. Meanwhile, Cheeky Monkey offers the most complex of this trio, a beer which lives up to its Wookie Jack aspirations, and without the grey market O2 nostalgia.  Instead, Takeover (Pic #3) is tantalisingly vibrant. Front palate dark choc, molassus, kecap manis and flat cola offer a generous ruse before rye spice bolsters coarse bitterness in an extremely fun, textural attack.  Citrus elements appear Negroni garnish-like as torched orange peel meets grapefruit, all the while a resinous through line becomes increasingly jowel sucking as the Brix vanishes.  Purchased: @copperandoak #goodtimesbeer #beer @freestylebrewingaus @rockyridgebrewing @cheekymonkeybeer

I'll humbly admit that the last time I tried a @swingsyallingup wine (about 10 years ago) I was not impressed. This 2022 Rosé (gifted to me by a lovely client) has changed my mind. A delightful Mediterranean style rosé, it's a blend of Margaret River Merlot, Shiraz, and Malbec with plentiful strawberry, tangy rhubarb, and creamy rose petals, with a lingering dry and acidic finish, and a stunning coral pink hue. The @pierro_vineyards 2022 L.T.C (Les Trois Cuvées) is a blend of 53% Sauvignon Blanc, 42% Semillion, and 5% Chardonnay. This blend is designed to encourage complexity with age, yet still be enjoyed young. Zesty yet creamy with plenty of 'green food' flavours such as lime, apple, fresh herbs, and earthy grass notes, with a pashionfruit tang, there's a lot going on. I appreciate the craftsmanship that goes into making such an involved wine, but it's just not my style.
