My new favorite place is @gideonsbakehouse @disneysprings - a library filled with delicious baked goods! Wow. I had heard about it years ago from my friend Kelly (who was nice enough to bring me a triple chocolate cookie) and from the first bite, I was enchanted. With Anna having a show there this past weekend, I made sure we went. What an experience. Luckily, we only had a 30-minute wait, (apparently it can be hours to get in), and then I tried the Limited Edition Peanut Butter Cold Brew Cookie (with Peanut Butter Nitro Cold Brew) and it was incredible. Kids chose Key Lime Pie cake, chocolate chip cookie (and that Triple Chocolate cookie was a must.) The merch designed by @mr.eyes.art is so adorable as well, so when I learned there was an owl character (Thaddeus Bubo) featured in March that supported @auduboncbop , I had to have a shirt. Magic Kingdom ✨ Another perfect day. We walked in right as a fun little parade was starting so we got to enjoy that and again, lines were short so we got to do it all! And, as we were preparing to leave, we noticed everyone was congregating to stare at the castle and apparently we were there just in time for fireworks! Seriously, the best day. I have a video I will share with you via Reels because I could not stop laughing. I was filming the fireworks over the castle and Paisley says to me, “WHAT IS SO PRECIOUS ABOUT THIS CASTLE?!” 😂 My absolute favorite memory from Magic Kingdom is the rollercoaster. It wasn’t anything crazy, but it was a “real” coaster. My mom and I, Paisley and Winter went on it first and they LOVED IT. Giggles galore! Afterwards Olive expressed to us she wanted to try it too. TJ was in immediate opposition: “No way, not our baby! She’ll be terrified!” Honestly, I was a little nervous too but after a quick chat we decided to let her try it! Worst case scenario was that she’s realizes she hates rollercoasters…. NOT THE CASE. She and our older girlies kept chanting “AGAIN! AGAIN!” I think we rode it four times before we convinced them to move on to new things. 😂 One of the most special parts of it all was that my mom and dad got to join in on everything. My parents and I even squished in together for the Haunted Mansion ride together 😂 I will cherish these memories forever. I reallyyyy wish I shared photos of the girl’s faces here because, Pure. JOY!
After 30 hours, a doozy of a hotel situation, and a whole lot of excitement we arrived at my grandma’s house! Naturally, the girls immediately wanted to swim so we took a dip in the pool at a the nearby campground and then settled in and went to bed at my grandma’s. 😴 We spent the night and zoomed off to Orlando with my parents the very next morning to visit Animal Kingdom! We could not have had a more perfect day. The weather was great, the lines were short so we got to enjoy all of the things— treats, every ride we could manage, admiring the all of the animals… It was PERFECT. ☺️♥️

How to travel with kids— JUST GO. Seriously, just take the trip. I was a little nervous to see how our girls would handle long days of driving but they were better than I ever could’ve dreamed of! We traveled 30 hours across the country on our first family road trip and I get choked up at just how special each moment was. Two weeks of quality time with each other and loved ones. We’re back out on our monthly cookie adventure to Disney Springs! The way I jumped up and ran to Gideon’s Bakehouse when I saw my all-time favorite cookie and cake are back on the menu for May! Peanut Butter Cold Brew is back on the menu, boys! If you’re in the area this month and love Reese’s like me, you have to get this cookie. We’re also working our way through the Summer House on the Lake cookie bar! We got Peanut Butter and Apple Oatmeal this trip and they were both phenomenal. Big day for peanut butter cookies and ladies who love peanut butter (me). Since it’s almost Star Wars day of course I had to wear my new Disney Store x Ashley Eckstein i am no jedi hat and check out the Star Wars merch! Hey folks, Chip here! First stop of my trip, Gideon's Bakehouse! Well, Polite Pig was the first stop, but that was so amazing that I forgot to take any pictures as I devoured it. This month's specialty cookie is the Peanut Butter Cold Brew. It's a peanut butter cookie covered in chopped Reeses Pieces and Peanut Butter Cups, dusted with espresso bean. I am a big fan of both peanut butter and espresso, so this one was a win for me. The sweetness is balanced by the saltiness of the peanut butter and the espresso perfectly. The specialty cold brew of the month is a banana cold brew. This was a bit sweeter than I like my coffee, but the banana flavor was excellent and tasted like real banana, not that artificial banana flavor. Overall another excellent haul from Gideons. It should be overly sweet, but that Espresso Bean works to balance it all out for a unique and flavorful experience! Available every day of May at both locations. It’s a Double Frosted Cake that covers three layers of super soft Chocolate Cake with a full layer of addicting Peanut Butter Buttercream and our Mocha Espresso Buttercream!
