One of the more wild funky ferments we did this year was a 144 hour lactic natural. There are a few approaches to engineering a lactic ferment but one way is to control for your environment to allow lactobacillus to flourish. That is to curate the party for specific guests as @lluciasolis would say. You can do this by making a 2% salt solution (think kimchi or lacto-ferments for all you fermentation fanatics). For this process, we really wanted to tell a story about Hawai’i and the importance of place, how we think about farming from mauka to makai. We harvested some ocean water from one of the cleaner parts of O’ahu over in Kaneohe, then pasteurised and filtered the water before starting the whole fruit fermentation. Ocean water typically has a salinity of 3.5% so just to be safe we diluted the ocean water to 2% to stay in line with what lactobacillus is known to thrive in. The ferment was really slow to take off (an extended lag phase), it was 48 hours before we started seeing any activity. After that we saw a drop in brix in the cherries and a lower pH, indicating the ferment was starting to fire. After a few more days we saw a nice krausen form (picture 2) at the top of the bucket and after 144 hours we finally hit our markers to stopping the ferment. With some advice from Lucia we decided to save our brine from the first ferment (first picture)and continue to use it as an inoculant. This could (and did) reduce that extended lag phase time we experienced during the first ferment. This was our first round with anything lactic - we usually depend on our sweet #yeastieboys for most of the fermentation work but we also wanted to explore more of not only our local microbes but also different potential outcomes of flavor. The results for this process scoring an 84-ish from @oliverscustomcoffee but not every experiment is a success. Some processes just require some finessing. For example, from here we might consider a sequential fermentation with lactobacillus starting the ferment but then ending with a yeast. I can tell you one thing for certain, the smell from the brine was absolutely incredible and I am so excited to try again.

The half and half means the 20 inch(!!) can be shared between two 👌🏻 We went for half and half with the Brass Funghi; mozzarella, mushrooms, red onions, Parma ham and truffle drizzle. The other half was Meat Feastie Boys; pepperoni, fried pancetta, Italian sausage and hot honey drizzle. Absolutely spot on and the crust was doughy and pretty perfect.
