Del Maguey Vida mezcal, Carpano Antica vermouth, Campari. โThe Negroni got its shot because of all the tired men and women sitting in their wintry Chicago apartments and dreaming of a little round table under the orange trees that line Via Veneto; of tiny dishes of olives and potato chips and white-jacketed waiters; of honey-skinned blondes and tall, wavy-haired men in Ray-Bans. Until there was a dolce vita, there could be no Negroni.โ - David Wondrich (2019). There is always a greater sense of pressure when fielding a twist on a firmly entrenched classic such as the Negroni, the ultimate apรฉritif and also our favourite. Some of the more successful ones weโre fans of are the Boulevardier, white Negroni, and sakura Negroni. In this particular case, it is the earthy smokiness of the Del Maguey Vida mezcal that has compelled us to offer this. The mezcalโs character gives it enough clout to dance with the spiced, sweet notes of the Carpano Antica vermouth, and also the bitter Campari. New York Sour. Woodford Reserve Bourbon, lemon, simple syrup, Mancura Etnia Merlot red wine float, Angostura bitters. The New York Sour is definitely not a modern twist, but has a history dating back to the 1880s (Wondrich 2010), making it more of a forgotten classic that has experienced a revival in the last 5 years or so. The innovation here is to reinforce the citrus-whisky-sugar base of the whisky sour with a red wine float, either in place of the egg white, or to form an intermediate layer in addition to the egg white. We found the key to unlocking the character of this drink was in selecting a complementary pairing of rye/bourbon and red wine; both of which need to co-operate with the citrus element. An oaky Woodford Reserve Kentucky bourbon was the most outstanding candidate, possessing a richness that holds up to the citrus elements without being too sweet, and yet blending well with the dry tannic fruitiness of the Mancura Etnia Merlot. What results, is in our opinion, superior to the more popular whisky sour. Particularly surprising, given that we are big fans of sours (with an s not a z!), and because we were initially apprehensive about the addition of the red wine. Char siu BBQ pork laksa (ๅ็งๅๅฑๅๆฒ) Wheat noodles in a coconut curry broth, with shallots, tofu puffs, and our char siu BBQ pork. Laksa. A dish most commonly associated with Peranakan cooking, a regional Malaysian cooking style. Genealogies as to its origin vary, but many agree on the prospect that it was the outcome of Chinese immigrants having to adapt their cuisine using local ingredients commonly found in Malay cooking, such as lemongrass, shrimp paste, and coconut. In South East Asia, laksa has too many variants to possibly account for. Some choose to include congealed pigโs blood curd, others omit; some Penang varieties are spicy and sour, using mackerel and tamarind, others are more coconutty; some make laksa with shrimp paste or sambal belachan, others omit. Weโve chosen to omit the shrimp paste, and offer a vegan version of this dish so no one is excluded from sampling this beauty. And so laksa is an example of successful fusion, one which came from a considered mutual understanding of the cuisines that were fused. If thatโs the case, then what would fusion from deficient mutual understanding look like? Anything motivated solely by a desire to capitalise on โAsian food trendsโ - kimchi mayo, deep-fried sushi, โchar siu pulled porkโ and any other dishes recruiting a dishโs identity solely in name, but never in spirit. We guarantee you won't find the latter kind of fusion here at Cocomee.
