15 minute chipotle stew My ‘open the fridge and throw it together’ invention for the week. You know I like quick, easy food which tastes awesome. I don’t have the time or patience for faff. Dinner tonight was a chicken & pepperoni box used 4 slices of pepperoni 1 syn each I got 3 portions from this. I added mixed peppers, mushrooms, chicken seasoning, lazy garlic, lazy chilli to pan then chicken, pepperoni & little chilli powder. When serving I added mixture to a bowl in the microwave to melt the with 10g of grated cheese. Chilli Berry Jam Tarts 🌶 🍇 I love cooking, but I am clearly a terrible baker... even using ready made short crust pastry I managed to mess it up! #rustic ... they are yummy though and the jam is all me - Another bored creation after finding a bag of foraged/homegrown blackberries/raspberries whilst clearing out the freezer, with added chilli because why not. Chilli Berry Jam 🌶 🍇 To a pan add 250g deseeded raspberries, 250g deseeded blackberries, 2 thinly sliced red chillies and the zest/juice of 2 limes. Put on a low heat, then add 500g granulated sugar. Keep stirring on a low heat until the sugar has dissolved. Once it has, turn heat up and keep on a rolling boil for 15 minutes. After his time check the consistency by putting a small blob on a cold plate and running your finger through it - if it leaves a small channel where you finger has been then it is ready! If not then keep on the rolling boil and check regularly. Once ready transfer in to sterilised jam jars and keep in the fridge.

Sweet Potato Rösti Breakfast 🍳 Mash 2 cups of roasted sweet potato, add sliced spring onion, an egg and 2 tbsp corn maize (flour). Shape into patties, coat with extra corn maize and dry fry for a few mins each side, until golden and crisp. Top with smashed avocado 🥑 with extra virgin olive oil and a squeeze of lime juice, a poached egg and some chilli flakes for a delicious brunch. Great for using up leftovers!
