What to cook this MAY! in season fruits and veggies! Follow @chefdaniellechristy for all the delicious recipes! Here is a list of what is in season in May and some tips on ways to cook and shop for these delicious fruits and veggies! Beets - one of my absolute favorite root vegetables they are high in many nutrients and help with exercise recovery. Try them roasted, in hummus and even raw Avocado - Feel the fruit and if it is soft to the tough it is ripe as well as the darker skin the closer it is to ripening. When buying look for ones that are longer like a football they have more avocado and less seed. Eat them straight with a spoon :) Strawberries - When buying strawberries follow your nose if they smell sweet and fragrant they should be delicious.They should be firm, bright and have green stems small to medium size is best . Strawberries do not ripen once they are picked so choose ones that are ripe and ready to eat Arugula- One of my favorites a delicate green I love using in sauces, pestos and salads. Store like you would lettuce Peas- fresh or frozen peas are a staple for me. Mash them and make a pesto, toss into literally any dish great source of fiber! Apricots- stone fruit is upon us and nothing better than a juicy apricot. I love them in salsas , on toast, grilled and pick them like you would an avocado. French Onion Soup Style Caramelized Onions 🧅 I absolutely love onions and keep these in my fridge weekly! They are great to mix into ground meats before cooking , mix into dips , eggs the possibilities are endless!! A few ingredients is all you need : 2 large sweet onions - Thinly sliced 1 tbsp grass fed butter 3 garlic cloves thinly sliced 1 tsp bay leaf @burlapandbarrel 1 tsp kosher salt 1/4 cup beef bone broth @kettleandfire 1 tsp balsamic vinegar Heat olive oil in medium sized skillet over medium heat. Add onion and bay leaf. Season with salt and cook over medium heat 20-30 minutes or until onions are almost caramelized. Add garlic slices and cook an additional 5-8 minutes. Add the beef broth and vinegar cook an additional 2-3 minutes. WHATS is in season in March and some tips on ways to cook and shop for these delicious fruits and veggies! Asparagus- look for solid green tips and store in a jar with water like flowers in the fridge Cabbage - Cabbage, a potent anti-cancerous cruciferous vegetable (cousin to broccoli), is great raw, in slaws, roasted in pieces, or used as a wrap for tacos. Select cabbages with compact heads that feel heavy for the their size. Whole cabbage is a good ingredient to keep on hand since it generally keeps for a pretty long time in the vegetable crisper Citrus fruit - look for firm unbruised skin, should smell citrusy and love to use in salads, roasted in the oven and eaten raw. Store in the fridge ! Brussel Sprouts - Nothing better than a roasted sprout, also delicious shaved for salads and steamed with your favorite Greens- Kale, collards, spinach etc. look for smaller leaves for tenderness and mild flavor. Eat them raw, satue with garlic and wine, roast kale in the oven! Dreaming of freezer garlic bread 😍 and wishing I had picked up a baguette with my shopping yesterday!! This is such an easy #batchcook Melt a block of butter with a clove of garlic bulbs and some dried parsley Once the butter is melted and the garlic bulbs are softened, smush the bulbs gently with a fork. Brush this onto a halved baguette and leave to cool. You can put the remaining butter into a tub and store it in your fridge, OR you can freeze it into silicone icecube tray - ideal for making homemade chicken kievs! Once cooled, wrap in cling film and freeze. You can then use from frozen or defrost first, just adjust your cooking time accordingly. My goal for this weekend is to stock our freezer with some baked goods for upcoming camping trips. New Recipe!! Creamy Tomato Soup! Nothing better than a cozy bowl of soup especially on a snowy day! This soup is a one pan wonder and the oven does all the work! 2 cans whole peeled tomatoes 1 Parmesan rind 2 bay leaves 2 whole peeled garlic cloves 1 small onion diced 1 cup dairy free or regular milk @addjoi ( danielle10) 1/2 cup grated Parmesan 1 tbsp apple cider vinegar Kosher salt and pepper to taste Heat oven 350 ‘f . In an oven safe baking dish add onion, garlic, rind, bay leaves and tomato season with salt and pepper. Stir and bake 1 hour. Remove from oven and discard rind and leaves . Add mixture to blender add remaining ingredients blend until smooth! Taste to adjust seasonings and serve! Last week the weather was gorgeous. This week we are under the threat of severe storms. Which makes me quite happy that tonight’s “camping” is actually a Cub Scout lock-in and we will be sleeping indoors. I will be packing my air mattress though because this body does not want to sleep directly on a gym floor! Anyway, pizza is on dock for dinner, and I hope we can pull off our tasty #pizzalogs. Although we will have delivery as a backup if we can’t make a fire. We love these pizza logs that can be customized as each person wants and they are faster for batch cooking that our favorite #pieironpizzapockets because I may have a #pieiron addiction, but I still don’t own enough for all of our scouts! Chicken Tortilla SOUP!!⁣ ⁣ ⁣ Whats your favorite soup? ⁣ ⁣ ⁣ Soup season is upon us. I love soup because you can pack in all the veggies and tons of flavor with little effort. Here are some great tips for the next time you make soup!⁣ ⁣ ⁣ ⁣ Make homemade stock- it is really a game changer, just throw all of your scraps in a pot cover with water and simmer for 30-45 minutes. ⁣ ⁣ Roast the vegetables you are using before you puree the soup. This adds so much flavor. If the recipe asks you to sweat the vegetables take 1/2 the vegetables and roast them with salt and pepper the other half sweat like the recipe calls for. ⁣ ⁣ Flavor boosters- parmesan cheese rinds and toasted spices. I love to add rinds into the soups and let them cook with the base and when ready to serve I pull it out. ⁣ ⁣ Brown or sear the protein you are using - this adds that delicious crust and also helps the meat from drying out ⁣ ⁣ Mix up textures - add beans, grains, crunchy slaw for topping or herby breadcrumbs ⁣ ⁣ Add a ton of fresh herbs and salt throughout the cooking process. ⁣ ⁣ Finish with a splash of acid - lemon juice your favorite vinegar etc. This just really brings out the flavors but wait to do this until the end of cooking! ⁣ ⁣ Add creaminess without cream - use coconut milk, puree the soup in the high speed blender, add a dollop of yogurt at serving. ⁣ ⁣ Don’t boil it to death - cook it low and slow ⁣ ⁣ Finally make enough to freeze - I personally think soup tastes better the next day and I love to freeze it so you can savor the flavors of seasons all year around!⁣ ⁣ ⁣ Recipe for the Chicken tortilla soup is on the blog! ⁣ ⁣ https://savorthekitchen.com/chicken-tortilla-soup/

Due to our work schedules we sometimes have to practice “the weekend warrior method of camping.” This is where we hit the road Friday as soon as the workday is done…pull into a camping spot…and get that fire started. Happy #tiptuesday everyone! It’s a new month which means new fruits and veggies that are in season. Here is a list of what is in season in August !⁣ ⁣ ⁣ Red Cherries -Check the stems — fresh cherries have green stems. Give them a feel — cherries should be firm, no soft spots or bruising. Look for the good color — depending on variety, ideally they should be deep, bright red to mahogany. Roast cherries for a sauce, toss into ice cream and dip in chocolate for a sweet treat ⁣ ⁣ Corn - Check out the color of the husk. If it's a bright green and tightly wrapped against the cob, then the corn is fresh. Wrap in a damp towel and store in the fridge if you don’t use it the day you buy it. Love to grill, make succotash, and pickle ⁣ ⁣ Berries - Buy organic if possible, look for bright colored firm berries and when they are on sale buy double and freeze them so you can enjoy them all year round! I love making jams, pies, crisps, savory sauces and so much more! ⁣ ⁣ Tomatoes - Juicy summer tomatoes, follow your nose buy firm tomatoes and they are delicious with just salt, slow roasted and made into sauces. ⁣ ⁣ Watermelons/ Melons - pick a melon that has a strong, consistent stripe pattern. The green stripes should be a deep, dark green, while the pale stripes should be a creamy, light yellow. Additionally, you may want to choose a dull looking watermelon. If the melon is very shiny, it is likely underripe. Grill it, toss in salads or just eat it plain and let the juice run down your arm ⁣ ⁣ ⁣ Zucchini - Look for squash that's small to medium in length in length and still relatively thin. The zucchini should feel heavy for its size. A little-known fact about me: I am not a fan of combining fruit and chocolate. I know most people love it, but while I will eat pretty much anything, fruit and chocolate together has just never done it for me. So it was a huge surprise when I made these muffins and loved them. I like that they offer a hit of chocolate without being too sweet and that they are super moist. I recommend adding the chopped walnuts for a protein boost and, if you like things on the sweeter side, throw in some chocolate chips as well. Like here instead of using bread for the bun I used golden beets! Simply just roasted them whole in the oven once cooked I peeled them and sliced thick enough to hold the burger and fixings. Happy #tiptuesday everyone! It’s a new month which means new fruits and veggies that are in season. Here is a list of what is in season in February and some tips on ways to cook and shop for these delicious fruits and veggies!⁣ ⁣ Beets - one of my absolute favorite root vegetables they are high in many nutrients and help with exercise recovery. Try them roasted, in hummus and even pickled. ⁣ ⁣ Brussel Sprouts - Nothing better than a roasted sprout, also delicious shaved for salads and steamed with your favorite sauce.⁣ ⁣ Citrus fruits - Feel for fruit that is evenly firm but shows some resistance when you press into it. Store on the counter for a couple days then transfer to the fridge ⁣ ⁣ Avocado - Feel the fruit and if it is soft to the tough it is ripe as well as the darker skin the closer it is to ripening. When buying look for ones that are longer like a football they have more avocado and less seed. Eat them straight with a spoon :) ⁣ ⁣ Kiwi - choose plump, fragrant fruit that yields to gentle pressure. Also you can eat the skin just take sure you wash them well before you do! ⁣ ⁣ Greens- Kale, collards, spinach etc. look for smaller leaves for tenderness and mild flavor. Eat them raw, satue with garlic and wine, roast kale in the oven for chips! ⁣ ⁣ Sunchokes - One of my all time favorite roots and a great source of prebiotics. So I decided to use up some bananas I had and made banana ice cream! It tastes nice and makes a change from making banana bread! Mixed Fruit Muffins Muffins are another fool proof bake in my opinion. You mix the dry ingredients,  add in the wet ingredients, pop the batter in some cases and bake. So simple but so rewarding considering how little effort is required and once cooled you can freeze them and have the tastiest little breakfast at your finger tips on busy days. Here is a list of what is in season in January and some tips on ways to cook and shop for these delicious fruits and veggies! ( recipe for the salad on the blog) ⁣ ⁣ Beets - one of my absolute favorite root vegetables they are high in many nutrients and help with exercise recovery. Loosely wrapped in a paper towel or in plastic, parsnips will keep in the vegetable drawer for up to two weeks⁣ Greens- Kale, collards, spinach etc. look for smaller leaves for tenderness and mild flavor. Eat them raw, satue with garlic and wine, roast kale in the oven for chips! ⁣ Pomegranate - pomegranates should be hard, with no mushy spots. Select pomegranates with smooth, unbroken surfaces. The rind should be soft enough to scratch. Love them in salsas, salads and oatmeal! ⁣ Winter squash - should feel heavy for its size, the stem should be firm and show no softness, deep and rich in color, the skin should be smooth and avoid bruises. ⁣ Potatoes - Keep potatoes in a cool, dark, dry place. A basket, bowl, or paper bag is better than a plastic bag. Happy #tiptuesday Everyone!!! Today is all about soup! Soup season is upon us. I love soup because you can pack in all the veggies and tons of flavor with little effort. Here are some great tips for the next time you make soup!⁣ ⁣ ⁣ ⁣ Make homemade stock- it is really a game changer, just throw all of your scraps in a pot cover with water and simmer for 30-45 minutes. ⁣ Roast the vegetables you are using before you puree the soup. This adds so much flavor. If the recipe asks you to sweat the vegetables take 1/2 the vegetables and roast them with salt and pepper the other half sweat like the recipe calls for. ⁣ Flavor boosters- parmesan cheese rinds and toasted spices. I love to add rinds into the soups and let them cook with the base and when ready to serve I pull it out. ⁣ Brown or sear the protein you are using - this adds that delicious crust and also helps the meat from drying out ⁣ Mix up textures - add beans, grains, crunchy slaw for topping or herby breadcrumbs ⁣ Add a ton of fresh herbs and salt throughout the cooking process. ⁣ Finish with a splash of acid - lemon juice your favorite vinegar etc. This just really brings out the flavors but wait to do this until the end of cooking! ⁣ Add creaminess without cream - use coconut milk, puree the soup in the high speed blender, add a dollop of yogurt at serving. ⁣ Don’t boil it to death - cook it low and slow ⁣ Finally make enough to freeze - I personally think soup tastes better the next day and I love to freeze it so you can savor the flavors of seasons all year around!⁣ ⁣ ⁣ ⁣ What is your favorite soup? Happy #tiptuesday everyone! Today is all about BEETS and Root veggies! How to cook and store them! I also just posted a delicious Pomegranate molasses roasted beets recipe today using @justdatesyrup molasses and if I have never tried it please do its amazing and a staple in my kitchen!! (use code danielle10) at checkout for a discount!⁣ ⁣ 1.Buy your root vegetables with the greens attached if possible - but make sure you cut the greens off and store them separately so the nutrients dont get pulled from the vegetables themselves⁣ 2.Eat and treat the greens like you would kale/spinach - they are packed with nutrients and delicious made into pesto, braised, sautéed, steamed and in salads. ⁣ 3. look for vegetables that are free of blemishes and the skins a smooth, most skins are edible so just wash, chop and cook ⁣ 4. Because root vegetables grow underground, they absorb a great amount of nutrients from the soil. They are packed with a high concentration of antioxidants, Vitamins C, B, A, and iron, helping to cleanse your system. They are also filled with slow-burning carbohydrates and fiber, which make you feel full, and help regulate your blood sugar and digestive system. ⁣ 5. Best stored in a cool, dark, humid room. When storing them in the refrigerator, keep roots in a paper or plastic bag in the crisper. Storing them uncovered causes them to soften and go bad quickly.⁣ 6. Here is a list of what is in season in October and some tips on ways to cook and shop for these delicious fruits and veggies! 1. Apples - its fall which means its apple season when buying make sure you get organic. Apples are on the dirty dozen list and highly sprayed with pesticides. They are fabulous raw, sautéed with onion and baked into your favorite treats. 2. Beets - one of my absolute favorite root vegetables they are high in many nutrients and help with exercise recovery. Try them roasted, in hummus and even pickled. 3. Cabbage - Red, green and napa are a few of my favorites. Great for slaws, using as a taco shell and braising with apples and pancetta. 4. Carrots - Full of 5. Cauliflower - literally the vegetable that has changed the world LOL. I love to roast it, make a mash, pizza crust add into smoothies and oatmeal the possibilities are endless. 6. Grapes - should be firm, plump and tightly attached to the stems. Place them in the freezer for a delicious treat and I love to roast them and serve them with pork or chicken 7. Greens- Kale, collards, spinach etc. look for smaller leaves for tenderness and mild flavor. Eat them raw, satue with garlic and wine, roast kale in the oven for chips! 8. Mushrooms - look for dry and smooth mushrooms store them in a open paper bag in the fridge for optimal freshness 9. Pumpkins - are ripe if when you knock on it sounds hollow, of course delicious as pie but don’t forget about the seeds, clean them and add spices roast in the oven for an amazing snack! 10. Winter squash - should feel heavy for its size, the stem should be firm and show no softness, deep and rich in color, the skin should be smooth and avoid bruises. Delicious roasted, grilled, mashed and in soups. 11. Pomegranete - The brighter deeper red the sweeter it will be. The lighter pink the more tart.
