They combined their imagination, experiences and good mood to make something unique: a wine called "King of Dreams" - a milestone song in rock music! The artistic label was designed by artist and friend of Joe, Angelo Rusciano. 🍇 Cabernet Sauvignon 50%, Cabernet Franc 40%, Merlot 10% 🍷 Medium ruby, permeable, with intense grene accession. Highly charming, sophisticated nose of sophisticated complexity. The deep tones of aniseed, sage, camphor and eucalyptus penetrate decisively into the dried red fruit. The Wild Mountaineer | Akriotou Microwinery 🍇🍇 This dry white wine is from a 60 year old vineyard, that gives no more than 500kg per acre, Vassiliki Akiotou uses wild yeasts and the ''on the lees '' (sur lie) method for 10 months and bottles unfiltered this single vineyard Savatiano, capturing this way the entire formality of the ancient Greek variety. The unfiltered wine shows a cloudy lemon yellow color. The nose is intense and typical of the variety, with aromas of white flowers, citrus fruits and subtly aromatic Mediterranean herbs. In the mouth, the dry Savatiano is full, with balanced freshness, coolness, finesse and a fine melt. Notes of grapefruit, pepper and wild mint are added. The wild mountaineer has a medium body and delights with a long finish and a moderate alcohol content. The wine is definitely in a different league than the price would suggest. Food Pairing: This wine calls out for sweet cheeses, seafood appetizers, grilled fish, risotto and green salads. Spring Time Wines 🥂🍷 Wines such as Pinot Noir, Tempranillo, or Grenache are excellent for enjoying with lighter Spring fare or even the heartier Winter foods we aren't quite ready to move on from. For those warmer Spring days, lighter reds can be enhanced when served slightly chilled and to help bring out the more subtle floral notes. Spring Time Serving Tips 🥂🍷 Temperature is a crucial aspect in serving wines, yet we often serve whites and rosé too cold and reds too warm. Whites and rosé that have been removed from the fridge approximately 15 minutes before serving have enhanced flavour while still achieving a crisp mouthfeel. For red wine, 30 minutes in the fridge before serving can enhance the floral flavours.
