Her and her team have been hard at work the past four years to create an ADA Transition Plan, put together a staff and board accessibility management team, assign an ADA Coordinator, form a Citizen’s Advisory Team on Accessibility, make measurable progress on eliminating some barriers around the MRD, and put together some awesome programming! A new report from the U.S. Fish and Wildlife Service reveals that as of 2019, wetlands—95 percent of which are freshwater, occupied less than 6 percent of the contiguous United States! Wetlands rank among the most fertile and species rich environments, providing a home or breeding ground for 40 percent of all plant and animal species, including numerous threatened and endangered ones. Across the nation, groups are advocating for and actively participating in wetland restoration efforts. Locally, ReWilders have championed the restoration of 225 acres of tidal wetland in the De Anza Natural Plan, set to return 5% of the bay to its natural state by 2030, in line with the City of San Diego’s Climate Action Plan. The future of wetlands holds promise, despite the historical losses. ✨ Meet Aliyah Farhan! Aliyah has been working alongside Chef Scott for the past ten weeks! This week is her last week with us, and we are so sad to see her go! To celebrate the end of her rotation we wanted to share her and her work with you all! 📣 "My name is Aliyah Farhan, and I am currently in my second semester of my masters program at Grand Valley University, where I am a part of the clinical dietetics program. I completed my bachelors of science at Western Michigan University, and have a bachelors in nutrition and dietetics. Nutrition is something that I have always had an interest in since I was an athlete my whole life, and it was not until my second year of college where I decided that I actually wanted to pursue a career in nutrition. My goal now is to become a registered dietitian, ideally specializing in eating disorders. When I am not in supervised practice or doing homework, I enjoy going on walks, going to the gym, and trying new coffee shops. I am here at IKUS for 10 weeks doing my community nutrition rotation that is a part of my program, with the goal to see a side of nutrition other than clinical nutrition. My time at IKUS has not only been rewarding but also has expanded my knowledge greatly. The main thing that I have been doing is creating programs, which is something I have never done before. I have learned how to create programs from scratch, and then have been able to lead the programs I have created, which is cool to see my work being able to teach people new things. Leading these classes has also helped me come out of my comfort zone when it comes to public speaking, it is a huge plus that all of the individuals are extremely engaged and welcoming which makes it way easier and less scary. 🥞 It’s National Flapjack Day! To celebrate, Chef Scott and R.E.C. Connect made some traditional British flapjacks with the syrup we made last Thursday from trees right here at camp! 👉 In America, we think of flapjacks as pancakes, but the two are very different! Traditional flapjacks are made with oats rather than flour, and can be chewy OR crunchy, depending on how long they are baked. 🍞Happy National Toast Day! ✨R.E.C. Connect celebrated by learning about and MAKING maple syrup and french toast with sap collected from trees RIGHT here at Indian Trails Camp! Chef Scott shared some fun facts about syrup, french toast, and peanut butter with our group today, and we wanted to share them with everyone! ❓Did you know that there are SEVERAL types of maple trees, and that they all have varying concentrations of NATURAL SUGARS? The most common maple trees used due to their sugar content for syrup are: Sugar Maple, Black Maple, Red Maple, and Silver Maple trees! 🍁 ❗The best time to tap a tree for sap collection is NOW. Late February and early March is the ideal time to tap your maple trees! 🤯 It takes FORTY gallons of sap to create just ONE gallon of syrup! 🥜 Some peanut butters contain maple syrup, and it takes about 850 peanuts to make ONE 16 oz. jar of creamy peanut butter. 🍞 French toast was created by the French as a way to eliminate waste by adding eggs and milk to stale bread to rehydrate it, creating the pastry we know today as French Toast!
