Another great salad tonight. One of the best things on a salad is strawberries coated in flavored vinegar. Tonight I had @zi_olive white mandarine orange vinegar on my salad. Lettuce, avocado, strawberries and some seeds. When I was in the grocery store, the smell of the hot bar got to me! I got two very small Parmesan Wingettes. In the past, I probably would’ve gotten 8 to 10 pieces to have for dinner. I was actually satisfied with two. I wanted to share a picture of the nook over my stove. When we had our kitchen remodeled, I had a special nook put in just for my vinegars and oils lol. My husband thought I was crazy but it’s one of my favorite pieces of my kitchen. Zi Olive vinegars are my latest find, and I absolutely love them. Homemade Hummus!!! This was very easy to make using canned chickpeas. I only had a small taste because it’s for the weekend but it was very good. 1 15 is can of chickpeas 3 tablespoons of lemon juice 2 tablespoons of tahini 1 large clove garlic 1 tablespoon avocado oil Put all of it in a food processor till smooth. I then mixed in a tablespoon of @traderjoes bagel seasoning. I need to find more chickpea tofu. I made crumbles and sautéed them in a mix of olive and avocado oils. It wasn’t much food but I did separate the batch into the 4 servings that the package says there are. I sautéed some broccoli and yellow squash. Update: Looks like my photos aren’t showing up as the full view and the test names are cut off, sorry. So this is the blood tests that I have been working so hard for 5.5 months of being 98% perfect. Sacrificing so many foods I love. Being hungry because I have used up my calories, fats and carbs for the day so the only thing I could have is water and lettuce. So disappointed!! Most of the numbers have gone in the wrong direction 🥺😭😡 I’m not discouraged yet, I’m going to make some more changes. I need to figure out what they will be and then ask to be rechecked in a few months. I’m not a huge fan of overnight oats but I do eat them occasionally. I made really good ones for breakfast. 3 tablespoons of oats, 1 tablespoon chia seeds, 1 tablespoon pumpkin seeds, a small hand full of walnuts, 2 teaspoons psyllium, 1 cup of cashew milk and a squirt of vanilla liquid Truvia. So, I was looking for something crunchy. I didn’t want to do chips chips, or simply Doritos what something healthier. OMG I CANT EAT LIKE THIS!!!!!! Since I just had my blood work done and I have a busy weekend I really thought I would give myself a reprieve and not worry about what I’m eating for a few days. This is crazy. I had a half of an empanada again tonight, three ribs and some brussels sprouts. For dessert I had four brownie bites . So previously, I would’ve been hungry after this, now I feel like a Thanksgiving stuffed turkey. I can’t do this, I think the empanada and the carbs from the brownie bites was just way too much. I’m very happy that this may be uncomfortable And I hope I remember the next time I try to eat like this. I finally went for my follow up blood work today. I have been on a healthier way of eating for 5 1/2 months and have lost 25 pounds. But the big test is seeing what my new cholesterol numbers are. I’m giving myself a little bit of reprieve to the end of the weekend, and then I’m going to be completely back on track. No matter what my numbers are I’m staying with a healthier way of eating, but if they haven’t gone down enough, I’m probably going to have to move to a more vegetarian way. I am having a couple brownies that I had in the freezer. Oh what an amazing burger, perfectly cooked bacon and delish sweet potato fries with a horseradish sauce. Had dinner tonight at @mohegansun at the @bobbyflay @bobbysburgerpalace I amazed myself at how much of it I ate. I finished the burger and lettuce. Greek Turkey Meatballs with Simple Tomato Cucumber Feta Salad from @erinliveswhole ⭐⭐⭐⭐⭐⭐⭐⭐ I airfryed the meatballs instead of pan fried them for 10 minutes at 350 degrees (turn at 8 minutes). My new thrift store gadget is a Miracle Ware microwave egg cooker. I got it for our camper but needed to try but first at home. One side has an egg and the other egg whites with @applegate turkey pepperoni. I did need to flip the egg and pop it back in but in less than 2 minutes I had eggs. I’m impressed with my skills this morning 😝 I made @bobsredmill grain free brownies and I wanted walnuts in them. Not our whole family likes walnuts so u used parchment 📜 paper to make a divider and line the pan. Both sides got @enjoylifefoods mini morsels and one side nuts. The brownies came out a bit dense but a good flavor. The package called for 3/4 cup oil but I actually used only 1/4 of avocado 🥑 oil and the rest I used 1/2 cup apple 🍎 sauce. Great substitute for lowering the fat. Oops, I forgot topmost yesterday. Breakfast was delish! Air fried squash, onions and peppers with a sliced duck sausage and 1-2 an avocado. I had the last 1/3 of the raisin bagel from @modernbreadandbagel Dinner was the left over veggies with a few scallops cooked in @meltorganic spread. I pan fried a couple of @sietefoods almond flour wraps in the left over spread ( they were really good).
