After a brisk walk on the beach, headed to breakfast at the Seaglass Bistro in Newport, Oregon minus my usual spice travel pack…. Menu had a couple of vegan dishes, but nothing without oil. After chatting with the waitress about options, the chef made me a delicious fresh pico de gallo with beautiful fresh steamed green beans and a slice of dry sour dough toast. Perfect and delicious! WFPB SOS-free mock Brabant potatoes air fried and seasoned with our Guajillo Chili Powder blend. Used small creamer potatoes from Costco, steamed to fork tender and refrigerated a day early. Disclaimer…while in New Orleans, I ordered a spicy vegan Brabant Potato dish and loved it! Our cooking instructor said Brabant refers to the cut size. They are typically made with lots of butter and garlic, fried and served on a creamy sauce. I made this with creamer potatoes cut in half pressed in our Guajillo Chili powder blend, which has a fair amount of garlic in it, air fried at 400 for 10-15 minutes.
