One name given to sake produced over the winter/spring and released in autumn of the same year is aki-agari (秋上がり). ⠀ 🍶⠀⠀ Unlike the legal designations (honjōzō, junmai, ginjō, daiginjō) aki-agari has no legal definition and different breweries can use it in different ways.⠀⠀ 🍶⠀⠀ Generally, it's used to describe sake that has been left to mature for around six months, and has lost the rough edges it had as shinshu. If you're in Japan and able to visit a brewery during the winter, they may be offering shinshu (新酒) - just-brewed sake.⠀⠀ 🍶⠀⠀ Most sake that is shipped abroad has been pasteurised, which means it doesn't need to be refrigerated. The other advantage to starting in October or November is that the annual crop of rice has been harvested and the grains are ready to polish and brew with. (Although it's also perfectly possible to use rice harvested in previous years.)⠀⠀ 🍶⠀⠀ This seasonal cycle, where brewing runs from October/November to March/April of the following year, is also reflected in the Brewing Year, or BY, used as a date on some sake labels. For example if you see a date of BY 2021, that means the brewing year between summer 2021 and summer 2022.⠀⠀ 🍶⠀⠀ Brewing for the vast majority of sakagura (酒蔵, sake breweries) is a very physical, labour-intensive process that keeps the kurabito (蔵人, brewery staff) busy throughout the winter. Did you know that sake brewing is seasonal?⠀⠀ 🍶⠀⠀ Wine is brewed soon after the grapes are picked, but as grains like rice keep for much longer in theory you can brew sake at any time of year.⠀⠀ 🍶⠀⠀ Long ago, brewers discovered through trial and error that the best time to brew was in the winter, when low ambient temperature protects the fermenting mash from contamination by unwanted microorganisms. Low temperature also stresses the yeast, which makes it produce interesting flavour compounds.⠀⠀ 🍶⠀⠀ Today, many small and/or traditional breweries start brewing around October (which is why 1 October is "sake day") and finish up around March or April. ⠀⠀ 🍶⠀⠀ This seasonal pattern used to have another big advantage - people who worked as farmers or fishermen could switch to sake production during the cold winters. Absolutely phenomenal event from @dcsake at @sushitarodc ! Miyasaka-san from @masumi_sake brought his knowledge and passion about sake to an intimate lunch at the best sushi restaurant in DC. Miyasaka is a famous sake brewery, founded in 1662 in Nagano, that discovered the most popular sake yeast in the world, which is now used by about half of all sake breweries. Still using their traditional yeast, their sake is classic and elegant. You could really get a house style from tasting through the lineup - crisp, subtle, yet complex. The Hiyaoroshi (fall seasonal sake) was the standout, with the nutty notes from aging complimenting the base sake extremely well. Highly recommend picking up a bottle of it, or any of their sakes, if you see it. The food from @sushitarodc paired perfectly as expected, with the chef making food from Nagano to compliment the sake. Went to this great restaurant where you basically help yourself to the large format sakes they have. It was unbecoming that I could stay long enough to only sample a few, but this #kikuhime #junmai #hiyaoroshi #菊姫純米ひやおろし was the one I enjoyed the most. Slightly yellow. A warm, sweet hit of funky banana, then this spreading umami, followed by flashes of something really clean and mineral, then a dry, serious finish. A friend remarked this was like an aged white wine. Also, from a bit of Googling, the label sets out the poem #登高 (or “Climbing High”) from the Tang Dynasty poet #杜甫, which was apparently written for the Chongyang festival. Why might they have selected this poem? Because in the old days, during the Chongyang festival (which occurs in early autumn and is actually a public holiday in Hong Kong), you’d ward off bad luck by climbing a mountain and drinking wine (you have people hiking in the hills even today). And this is a hiraoyoshi, literally an autumn wine or #秋酒, intended to be enjoyed with autumn flavors. So maybe during the next Chongyang festival I’ll find a bottle of this to drink whether or not (most likely not) I’m climbing a mountain …

C’est quoi, cette boule verte ou marron qu’on trouve devant les restaurants ou les brasseries de saké ? En voilà, une bonne question ! Kinasé vous explique. Appelée « Sugidama » (littéralement « boule de cèdre ») ou « Sakabayashi » par les connaisseurs, cette boule est constituée d’un tas de branches de cèdre enfichées serrées dans une petite sphère en métal ou en bambou, puis taillées afin d’obtenir cette apparence mousseuse. Suspendue au fronton des établissements de boissons, elle signale un lien fort avec le monde du saké, à la différence des endroits ne servant que du vin ou de la bière, par exemple. Devant une brasserie de saké, elle est souvent décorée de la corde sacrée « shiménawa », car elle symbolise le vœu que ce nouveau saké devienne délicieux. Verte en début d’année, elle annonce la fin du brassage du nouveau saké et accompagne sa maturation au fil des saisons, sa couleur marron à la fin de l’été coïncidant avec l’arrivée du saké d’automne « Hiyaoroshi » pasteurisé une seule fois au printemps. Ce type de saké saisonnier accompagne parfaitement les légumes du moment : châtaignes, champignons, ou encore potimarron. Saku no Hana junmaidaiginjō Aiyama rice: Aiyama polishing: 49% yeast: Nagano D ABV: 16% SMV: ? acidity: ? amino acid: ? When I first tasted this at Sakunohana's shop in Saku I was immediately grabbed by the full umami and complex blend of aromas and flavors. Some of these might be a little 'off' in the sense of undesirable in a typical Japanese assessment, but I think people who like big and bold flavors would appreciate. Actually Aiyama is often said to be a particularly easy-dissolving rice and to produce umami and a kind of 'zatsumi' that some drinkers love. The Nagano D yeast also produces a whopping 2 times the amount of apple-like ethyl caproate compared to the famous 'Alps yeast,' and again this is something some people love and some don't. For me, it's the big finish of this sake that does it. Too many high-caproate sake these days have a weak and bitter finish, but this one is rich and juicy with balanced sweet/umami/bitter that pleasantly lingers. On top of that is a kind of stimulating spiciness that rises into the back of the palate, recalling the Japanese pepper called sanshō. Serve in a big wine glass for the aromas, either chilled for a more focused fruitiness and crispness or room temperature for more complexity and umami. Pair with a mind to quenching saltiness, lightening butter or cream, and adding a bit of zestiness. Ōyoshino Tateshinayama hiyaoroshi junmai genshu rice: Miyama-nishiki polishing: 60% yeast: ? ABV: 17% SMV: ? acidity: ? amino acid: ? The groundwater that flows to the 13 breweries in and around Saku in Nagano originates from 3 mountains that surround the Saku basin: Yatsugatake, Asamasan, and Tateshinayama. Ōsawa-shuzō's water comes from the last one, but for this sake they take it a step up by using water from a spring called Gosensui located on the upper slopes of the mountain. The water is extremely soft and low in minerals, thus the yeast grows very slowly and fermentation is slow, resulting in a rich and mellow sake. I've found the Ōyoshino brand overall quite aromatic for being designated just junmai, and though this has some sweetness and thickness on the palate, it's exceptionally well-balanced so is never syrupy. The aromas that rise in the mouth are particularly notable, and keep one wanting just one more sip to savor. Serving it chilled in a wine glass accentuates the aromas and crispness, and it can go with just about anything. Local delicacies are going to be especially suited, so you can't go wrong with things like oyaki, soba, trout, horse sashimi, maybe a Waldorf salad made with locally grown apples and walnuts. Ōtora ōkarakuchi junmai hiyoroshi rice: Haenuki polishing: 70% yeast: Kyōkai no. 7 ABV: 16% SMV: +10 acidity: 1.5 amino acid: 1.4 Chiyokotobuki-toraya began as a branch kura of Kotobuki-toraya located in Sagae so as to take advantage of the local hard water known as 'Tōhoku Miyamizu' after the famed Miyamizu of Nada in Hyōgo. In 1922, it became an independent company, and at peak production in the 1970s was making 5000 koku of sake -- that's a lot! Now their production volume is much less and they've eschewed the use of brand rice like Yamada-nishiki in favor of local varieties grown by area cooperatives. This sake, whose name means 'big tiger,' is made with one of those varieties called Haenuki, which I mentioned in connection with another Yamagata sake I reviewed recently. I don't usually reach for a very dry sake (remember, it's still much less dry than the average wine) but the balanced amino acid level of this gave it smoothness, body, and texture that were really highlighted by drinking at room temperature in a wide rustic guinomi. Somewhat uncommon aromas of grape, oak, and smoke made it a bit intriguing as well. It's the body and smokiness that made me want to pair with an umami rich dish like buri daikon, and pickled vegetables, aged cheese, and sausage would work wonderfully as well.
