Very intriguing. So this morning I got up and gave it a try… and the aroma that filled my house! This scone like dense bread consumed warm with some butter and honey was like the world fuzziest, coziest hug and you NEED to give it a try right NOW. You already know I’m on a journey to go around the world in easy, low ingredient breads that anyone can make (and turning it into a cookbook)! Follow minoomakesstuff to come along 🥰 Here’s how to make this 3 ingredient Australian damper bread: 1. In a bowl, add 2 cups of self rising flour, along with 20g cold butter, cut into small cubes. With your hands, massage the butter into the flour till it’s all combined. 2. Make a well in the centre of the flour and add in either 1 cup of milk or 1/2 cup milk and 1/2 cup water (up to you). Combine this with your hands and knead until a smooth, thick dough ball forms. 3. Transfer your dough ball to a baking tray lined with parchment paper. Using a knife, cut a cross into the top of your bread, then bake it for 30 minutes at 350 degrees. 4. A little bit overproofed but I still like it. Hand mixed with 82% hydration and 20% whole wheat flour. The bulk fermentation took 6 hours and 30 minutes at 25 degrees Celsius. I'd like to share with you a little story or update. Last week, it was exactly one year since I started making croissants and even though they are far from perfect, they look much better now and I'm happy with the progress. Of course it would take much shorter if I did it more often and without long breaks. Unfortunately I don't have photos from every batch, so there's a few from 5 batches, starting with photo from the last week going back to May 2023. Anyways, what have I learned? It's relatively easy to make croissants look like croissants from the outside, I achieved it already few months ago. But as you might have guessed, the real challenge is the inside, the crumb. That is really tricky and so many factors play a role here. Beside needed patience and precision - it's the temperature, the tools and how you work with the dough. The tools may not be mandatory, but they definitely make a difference. Especially the perforated baking pan and perforated pad that I got recently. It got so much better since then, and it would be even better now, if it wasn't for the oven. I'm still convinced that I'm limited mine 😏 still, I'll do the best I can to improve the results. I will share more insights later. For me, croissants are quite difficult, need precision, time and practice, and that's exactly why they're my favorite. Bi-colour sourdough. 1) Shaping 2) Crumb 3) Folding dough together. This is a 75% hydration dough. After finishing mixing the dough, I took one-third of it and incorporated turmeric paste. The turmeric paste was made using 2% of the dough's weight and hydrated with three times its weight in water. Next time, I'll try different folding techniques to achieve different patterns. I love a pine forest. I love the pine smell. It’s one of my favorite smells and evokes all kinds of memories. Speaking of…they say smell actually is the strongest sense for bringing up memories. My favorites are: that pine forest smell, the smell of earth after a strong summer rain (this is childhood), that familiar men’s cologne (old spice for my grandfather another for my man), bread baking (particularly potato bread for my Dad and nut roll for my grandmother), the salty sea air (in particular New England salt), lake water/fresh fish (so many summers spent fishing), Johnson and Johnson shampoo and lotion for babies (my sweet baby boys fresh out of the bath) and roasting or smoking meat (countless holidays and barbecues). I was pleasantly surprised by this week’s loaf - I’ve been working with a 50/50 mix of whole wheat spelt and white spelt that I mix into white bread flour at ~20% of the total flour. My big secret as a baker is that I don’t really care that much for whole wheat flours. I don’t think they add much flavor and result in flatter, close crumbs. But this little gem of a loaf surprised me - great height and crumb texture and I’m not sure what I did differently this time! I did give it a shorter bulk ferment (~3h) and a longer final (~4h) before putting it in the fridge to retard over night. You’re thinking; “what the h… is that?!”😁 Well…I was SO excited when I discovered @lilsipper ‘s / Bethany Ugarte’s book: Digest This and couldn’t wait to make her Green Bread recipe with our Redhook Dreams Maple Sunflower Seed Butter (you can use any of our flavors to make this bread; I can’t wait to make it with our cacao sunflower seed butter!). This recipe uses eggs; if you can’t eat eggs maybe you can try this recipe with your favorite egg substitute. I am not posting the recipe because we do not have permission. The book is filled with many recipes that look awesome for folks with food allergies or intolerances such as; gluten, dairy, and sesame (you can always sub-in seed butters for the nut butters but remember; if you use sunflower seed butter with baking soda the final product will be green due to the chlorophyll in the sunflower seeds reacting with/the baking soda). This bread was absolutely delicious and it toasts well; just like regular bread! ✨FOCACCIA✨ featuring my exclusive olive oil -an easy and fun way to impress anyone sitting at your table- and only 4 ingredients! 👩🏾‍🍳To make your own: Mix 2 teaspoon (1 packet) yeast with 3 cups warm water and honey , let sit 5-10 minutes. Add yeast and 5.5 cups of Ap flour to (now)foamy yeast water and and knead in a kitchen aid with a dough hook for 3 minutes or until it just comes together Let rise , covered on the countertop in a bowl with olive oil, for 3-4 hours Place in a baking dish with more oil and spread out. I like to let it rise again here for another 20 minutes Push down with your fingers to create the dents, add more oil, herbs, and bake! 425 for 20 minutes or so. Но зачем же останавливаться только на одной вариации? Будем экспериментировать 🥁 Общая рецептура: Мука пшеничная 1 с - 85%; Мука пшеничная цельнозерновая - 15%; Вода - 64%; Соль - 1.8%. Тесто: Закваска пшеничная 100% влажности - 160 г; Мука пшеничная 1 сорт - 260 г; Мука пшеничная цельнозерновая - 60 г; Запеченная свекла - 125 г; Вода холодная - 350 г; Соль - 7 г. Процесс: Подготавливаем свеклу - запекаем до готовности в фольге, остужаем, перетираем в пюре с небольшим количеством воды из общей рецептуры. Пюре вносим на стадии замеса теста. Аутолиз с закваской - 30 мин; Активный замес до умеренно развитой клейковины. И тут меня ждал сюрприз: тесто оказалось слишком непослушным, долго липло к рукам, дополнительная вода из свеклы добавила ему влажности и мне уже казалось, что ничего не получится. Это было больше похоже на сражение с большой розовой жвачкой, чем на процесс замеса теста. Однако, чуть больше времени на замес и все получилось. Oh yeah. It's all coming together. I've been baking a loaf of bread every week for a couple months now, gradually experimenting with flour types, hydration, rise times, and scoring. I feel like I'm getting REALLY close to finalizing a basic, everyday loaf good for toast and sandwiches. I love me some fancy sourdough, but sometimes you just need to dial it back and create something that meets the needs (and palate) of the common person. Keep it simple! #breadbaking #bread
