I winged this recipe the other night and it turned out so good! 2 cups winter squash in noodle form, 2 cups peppers and onions, 16 oz ground italian turkey sausage, 4 cups marinara sauce (preferably no sugar added), 11/3 cups shredded cheese (I used mozzarella and parmesan), 4 tsp. olive oil, salt and pepper to taste and 2 tsp minced garlic. 1) Drizzle squash with oil, sprinkle on salt and pepper. Bake at 450 in casserole dish for about 30 minutes. 2) While baking, brown sausage. Remove from pan and saute garlic, peppers and onions in the pan. 3) Add sausage back in and add tomato sauce. Combine and mix with squash in casserole dish. 4) Top with cheese. 5) Reduce heat to 300. Bake until cheese looks so good you have to eat it. About 10 minutes! 6) I served each portion with 1/2 cup of whole wheat noodles.
