The new wine of the week is our 2020 Montepulciano!!🍷 Our latest Montepulciano is a true Texas interpretation of this Italian favorite. The deep ruby purple color compliments a nose of rich black fruit, plum and dry spice potpourri with tobacco, vanilla and liquorice notes. On the palate the wine opens with fresh fruit, gaining a bright red fruit dimension adding to the blackberry, plum, thyme and baking spice signature, and a finish with dark chocolate hints. The mouth feel is full bodied and well balanced with medium acidity and rounded tannins. This is a wonderful pairing wine with a variety of foods including tomato sauce-based Italian dishes, pizzas, grilled chicken, pork and beef as well as a variety of cheeses.
Our small Mule Deer population mowed down 100% of our tender shoots on our Super Nova (P Verdot block) plants from @novavinenursery - amazing how fast a dozen deer can strip an area. We installed ventilated @shellt_us grow tubes on the top end to protect new regrowth - but time to bring on the hail netting - albeit a year earlier than we planned. The time has come to announce the new 2022 Bellissima as our wine of the week!! A wine from the earlier days of Perissos returns after a long absence! We have focused on creating a lighter, refreshing red wine in the Beaujolais Villages style, blending Sangiovese (70%), with Aglianico, Malbec and Viognier (all 10%). Limiting skin contact to 60 hours during fermentation has resulted in a lighter, brighter, fruit driven taste profile enriched and rounded by a modest amount of oak aging (6 months). Bellissima is medium ruby-garnet in the glass, with a nose of candied black cherry, strawberry and dried spice with some earthy hints. The palate is bright ripe cherry, black cherry, and strawberry with a dry spice background. The tannins are light with a mediumplus acidity creating a rich, refreshing mouth feel. Enjoy Bellissima paired with charcuterie, a variety of grilled, braised or sauced veal, pork or chicken dishes and lighter Italian fare.

Bloom! The sweet aroma of Cabernet Sauvignon flowers are filling the air in the Paradis Block. We had our first “hot” day (90° is hot for us) yesterday, and the extra heat intensified the perfume as we walked the vineyard. Fruit set will be here before we know it. The vines are all tucked in to their hail nets, which provides protection from hail but also reduces mechanical stress from wind and provides some shade. The nets don’t always make for the prettiest photos but they serve a very important purpose. Calyptra (those green mini-cluster shapes) are our first indication of potential yield. Inside each sphere is a white flower waiting to be revealed, the same way buds conceal flowers in other plants before they bloom. We’re starting to see the very first signs of flowering on some vines, and expect the vineyard to be filled with the delicate honeysuckle-like fragrance of Cabernet Sauvignon blooms soon. Fertilized flowers eventually turn into grapes, so this first step on the journey to an eventual harvest is important. We have the vines tucked into hail nets to protect them from any hail we might get during this fragile phase. The deep ruby purple color compliments a nose of rich black fruit, plum and dry spice potpourri with tobacco, vanilla and liquorice notes. On the palate the wine opens with fresh fruit, gaining a bright red fruit dimension adding to the blackberry, plum, thyme and baking spice signature, and a finish with dark chocolate hints. The mouth feel is full bodied and well balanced with medium acidity and rounded tannins. Come visit us this month and give it a taste!🍷 Daughter Jillian’s wine is back with a 2021 blend of 37% Aglianico, 36% Montepulciano and 27% Dolcetto, all grown on our Hill Country estate. Medium ruby in hue, this Jillianico features an inviting nose of cherry and blackberry with clove, smoke and brown sugar hints. The red and black fruit signature is confirmed on the palate with warm spice notes from extended two-year barrel aging, complimented by a crisp acidity and medium tannins. Four years ago, we planted the first new vines on this site in over a decade. The old vineyard, originally planted by the indomitable Gretchen Glasscock in the 1970s, had sadly been neglected and died. So we hiked up Blue Mountain a bit and established the Paradis Block, bringing wine grapes back to this ranch. Planting that first year, and frankly planting every year, was tough. By the end of the week, we were absolutely exhausted but at the same time filled with pride and joy. It’s hard to explain just how good it felt to finally have vines in the ground. In year one, everything was new. We learned A LOT. And all that newness made for an incredibly happy growing season, even when we faced the usual challenges that come with any kind of farming. The last three seasons since have been rough. We’ve had terrible hail at the worst possible time, dry conditions, what felt like an invasion of ants, and sometimes all three. But this year, we’re — dare we say it — joyfully optimistic again. Not sure what it is, but we’ve been spending even more time in the vineyard and it’s become a happy place once more. Maybe it’s the normal cycle of renewal and the hope that spring always seems to offer. Or it could be the help we’re getting from our professional vineyard crew. (Let’s be honest, that is the major factor.)
