So of course I forgot about my egg yolks preserving in salt didn’t I! Was meant to be about a week and it has been 12 days. Anyway, moving forward I’ve taken off the bulk excess salt and will brush a bit more off before wrapping in muslin then air drying for a few days. According to @practicalselfreliance they should still be ok but harder to grate. I’ll report back after next stage. The amount of moisture drawn out is amazing! I’ve been keen to try salt preserved egg yolks for ages so today was the day. Apparently the drying leads to a very tasty, umami flavour that can be shaved or grated onto dishes like pasta, eggs (ironic), into salads etc. some say it can be used as a substitute for Parmesan! I had a glut of eggs so 8 egg yolks have been nestled into sweet & salty divots, then covered where they will remain for five days after which they will be air dried. Will be interesting to see how they evolve. Day 6 of CNY 初六 - I fancied a nice bowl of congee, so I made ginger fish & century egg congee using my Ninja rice cooker. My eldest daughter and I had a bowl for lunch, and I had another bowl for dinner. It was so comforting and satisfying. Congee is an anti-inflammatory and gut healing food. One thing I learnt living abroad is, you have to be able to adapt and learn new skills in order to getting things done. In this case is my homemade salted eggs. In my hometown Bangkok I would just pop in at the nearby market and buy them. But here in Germany I just find them very overpriced - so I started to do them by myself - and the rest is history.

I don't eat egg because I feel nausea after working and serving breakfast in Ireland, which is almost 10 years ago. They were tasteless, but to me there was some pig meat in there 🤔🫢 3- Indian food at Rajdarbar restaurant, my favorite indian restaurant outside of India 4- Burmese food- kind of a wrap made from rice flower, some tomato paste sauce, cabbage carrot, green onions and lots of flavor. A small little restaurant with many great dishes, lovely owners and incredible food.
