Although not the prettiest, this is the tastiest loaf I have ever made I think 🤤 I make us a huge loaf every week, I freeze half of it and use it as needed. Every week when it comes to scoring and baking, I get so disappointed as my loaf doesn't hold its shape. However, after baking it it still turns out amazing. This one I accidentally added too much water so it has a hydration of over 85%. It made for a really nice crumb and I might try to do higher hydration breads more often. I also want to try mixing in different kinds of flour for some diversity but I am scared it will mess it up a bit 😅 Any advice regarding using different kinds of flour in sourdough baking is appreciated 🙏🏻 #sourdoughbaking #organicbaking #breadfluencer #realbread

Fuldkornssurdejsboller på Mariagertoba, fuldkornsdurum og mel fra vores hjemmedyrkede farvede majs 🌾 De her boller blev simpelthen så skønne at vi lige måtte dele opskriften. Det er første gang vi bager brød med vores hjemmedyrkede majs, som vi plejer at bruge til tortillas. Men kombineret med 2 stærke meltyper som Mariagertoba og durum, giver det lidt ekstra sødme og en flot farve til brøddet. Tippet er hermed givet videre til andre selvforsynere der dyrker de farvede majs 👍🏻 Vi havde vores 1. Overnatning i telt i haven i nat. Og traditionen tro vågnede børnene til bålgrød og nybagte boller 🤓 De brøddeje vi laver herhjemme er tit med meget høj hydration og er dermed meget våde. Det giver en mere fugtig bolle som holder sig lækre i længere tid. Men det kræver også en god varm ovn og en bagesten at bage dem ordentligt. Vi bager ved 275 grader i forvarmet ovn og ‘stykker’ bollerne ud direkte efter dejen er hældt ud på bordet. Det kræver en god dej spatel og lidt mel til bordet. Bollerne bages i ca 10-12 minutter. Herefter hviler dejen i 15 min., hvorefter salten tilsættes og dejen æltes på maskinen på højeste hastighed indtil den ‘klasker’/slipper skålens sider - helt! Herefter bliver dejen vendt/strammet op et par gange over en times tid i skålen (brug vand på hænderne når du vender dejen/strammer op) Dejen hviler i skålen over natten på køkkenbordet med et klæde over.
