It’s just a plain old salad. Refreshing and all. But add a few pieces of toasted matzo farfel and it transforms into a holiday treat. Fattoush. The word means “crumbled bread” in Arabic and of course, during the year you can use croutons and such. This is a special version, especially good for Passover. MATZO FARFEL FATTOUSH 2 cups matzo farfel 6 tablespoons olive oil 3 cups shredded Romaine lettuce (6-8 large leaves) 2 medium tomatoes, chopped 1 medium cucumber, chopped 1 ripe avocado, peeled and chopped 1/2 medium red bell pepper, deseeded and chopped 2-3 scallions, chopped 1/2 cup chopped parsley 1/4 cup chopped mint 1/4 cup lemon juice salt and freshly ground black pepper to taste Preheat the oven to 350 degrees. Place the farfel on a baking sheet. Pour 2 tablespoons olive oil over the farfel and toss, coating all the pieces. Bake for about 15 minutes, tossing the farfel occasionally, or until it is lightly browned. Remove from the oven and let cool. Place the lettuce shreds, tomatoes, cucumber, avocado, bell pepper, scallions, parsley and mint in a bowl. Mix the remaining 4 tablespoons olive oil and the lemon juice together. Pour the dressing over the salad, sprinkle with salt and pepper to taste and toss the ingredients. Add the toasted farfel, toss again and let rest for a few minutes before serving. I’m experimenting with some snacks for Passover and decided to make these matzo farfel chocolate clusters. It’s an old recipe but instead of using the usual chopped almonds I substituted chopped dates to make these nut-free. Still delicious, now with a chewier texture because of the extra dried fruit. Here’s the recipe (use equivalent amount of chopped nuts for the dates of you prefer). The cayenne (optional) is a terrific surprise — not enough to make these spicy but enough to give it some pizzazz. MATZO FARFEL CLUSTERS 2 cups matzo farfel 12 ounces semisweet chocolate 1/2 cup chopped dates (or toasted almonds) 1/2 cup dried cranberries 1/3 cup shredded coconut 2 teaspoons grated fresh orange peel pinch cayenne pepper, optional Preheat the oven to 350 degrees. Place the matzo farfel on a baking sheet and bake for 10 minutes, tossing the farfel around once. Remove the pan from the oven and let the farfel cool. Melt the chocolate. Add the farfel, dates, cranberries, coconut, orange peel and cayenne pepper, if used, to the chocolate and mix to distribute the ingredients evenly. Spoon heaping tablespoons of the mixture onto parchment paper or aluminum foil. Let set. OMG! These Matzo Farfel Kit Kat bars were amazing and tasted just like a Kit Kat bar. I was somewhat skeptical about this recipe but wanted to try something different for our Passover dessert. It’s so good that you’d be delighted to eat it all year long. Made with farfel—broken bits of matzo—and coconut as the base, this recipe is easily customizable for whatever you fancy. CHAG SAMEACH!!!! It is time once again to make Mom-mom Dorothy Kaplan's fried matzo farfel recipe (but of course now gluten free): take one container of matzo farfel; 6 eggs; copious amounts (meaning more than what should be reasonable) of kosher salt; pepper; onion powder; garlic powder; and paprika. Mix well until coated thoroughly (add extra eggs if it seems dry). Put the mixture into a deep frying pan or a wok with boiling oil and then fry that sucker up until it is black and gold (basically the color of my father's pipe tobacco, may his memory be a blessing). When finished dry the fried farfel on a tray with paper towels to zup up the oil, and then add more kosher salt. This is perfect accent for (gluten free) matzo ball soup or just an great unhealthy treat. #glutenfreefarfel #matzofarfel #glutenfreepassover. Yesterday, we went to the QFC in University Village. They have one of the largest selections of Passover stuff in the area. (Also, a huge selection of regular kosher stuff.) It was earlier than I usually go for that stuff. Passover starts the night of April 10th until the night of April 18th. I didn't expect there to be anything yet. Didn't even have a list yet. Anyways, this is what I got for it: a chocolate chip cake, a dark chocolate seder plate, egg kichel, triple chocolate macaroons, candy fruit slices, egg noodles, matzo, large marshmallows, graham crackers, matzo granola, matzo farfel, garlic garden dressing, and toffee crunch macaroons. I love Osem's Passover cakes. Haven't had them in a long time. I think I saw the chocolate seder plate last year, but thought it was too decadent and out there. This year, I thought, why not try it? It looks really thick according to the box and illustration. Haven't had the triple chocolate macaroons either. That should be interesting. Don't think I've had the marshmallows, although I could be wrong. They also have a coconut version. Even though the graham crackers taste nothing like graham crackers, they're really good. I decided to not make the granola myself this year, and this one should be interesting. The dressing looks and sounds good. Passover Granola. I love this stuff! It's easy to make, too. Not many ingredients. Matzo farfel, nuts (any type you would like), honey, oil (to keep it from sticking too much), and raisins. I used crushed walnuts and slivered almonds for the nut part. I usually just use walnuts, but we had a variety, so I thought why not. I used half of what they called for with each nut. So, still the same amount. There was just enough honey leftover from last year, too.
