Tonight's dinner! Laetiporus sulphureus/the stunning chicken of the woods. Great for non meat eaters. Or for us who eat both meat and quality fungi! 🙂 Picked up en route home from the weekend in a graveyard! The host was a yew tree, and it's great to be able to demonstrate/remind/educate folks that you can eat this safely and worry free. The yew 'toxins' don't get absorbed by the fungi. I'm sure others can explain this more concisely but in layman's terms... Some folks can have it disagree with them irrespective of the host tree, so it's one worth sampling a small amount in the first instance, then you're good to go! Supper, last night. A spring chicken (of the woods) pizza, with mozzarella, asparagus, bracken fern fiddleheads, and spring onion. Flaky salt. The tender mushroom was so good - succulent, moist - that I abandoned restraint and cooked it all, holding some back to scatter onto the pizza as it came out of the hot oven. While we were unable to score a table @tinder.hearth for pizza, this evening, we did score some impeccable, perfect-stage baby chicken of the woods on our walk today, for our own pizza, at home. 13 years ago in May I harvested my first #Laetiporus off this stump. Was a really nice flush. About 10lbs worth. This stump didn’t pay off this year but two downed logs nearby did. I tried my damndest to sell that flush back then to no avail. Tonight these will headed to some of the best chefs in the country. Humbling.

Guess who’s back! …. Chicken of the woods!!! A beautiful mushroom that I took home and made dinner with as soon as I got my hands on it!! Very excited to find it 💛 I’ll never get over the feeling of getting caught in the rain and finding delicious mushrooms in beautiful green spaces whilst in the company of my amazing friend. I took a little instagram break on this account and it turned into 7 months of not posting a thing 🤣 I’ve still been foraging in my spare time in-between a busy work schedule still enjoying going to beautiful places and spending anytime I have spare in nature. Since February I’ve been working really hard with my mum and daughter on a very overgrown allotment plot, what’s really exciting is all the established plants that were already in the plot. We have grape vines, gooseberries, raspberries, Logan berries, honey suckle, strawberries to name a few (basically every berry you can think of I wont list them all 🤣) we’ve planted lots of veg and we are growing sweetcorn, pumpkins and beans in one plot called the three sisters technique. Coronation chicken of the woods I made some coronation chicken earlier this week, so I recreated it forage style! Sautéed diced onions in curry powder with bay leaf. Cooked pasta and rinsed to cool. Assembled with: chicken of the woods, sultanas, dried apricot, mango chutney (Indian), flaked/chopped almonds, mayonnaise, creme fraiche/greek yoghurt, dash of cream (traditionally whipped but I leave as is when with pasta), white pepper, salt, a bit more curry powder (heat to preference), squeeze of lemon, and herbs (I used wild garlic and chive, basil, parsley). I topped with some sautéed hogweed shoots and buds. All very adjustable to taste depending on how sweet or spicy you like it! Gaaanz am Schluss meiner letzten Tour gab es dann doch noch was für die Pfanne. Normalerweise sammle ich diesen Pilz eigentlich nicht, aber in Anbetracht der langen Durststrecke an Speisepilzen habe ich den doch mal eingesammelt. Früher hat er mir nämlich überhaupt nicht geschmeckt und war deshalb komplett vom Speiseplan gestrichen. 🍴 Aber ich muss sagen, in diesem Zustand, in dem er noch butterweich und sehr zart ist, hat er paniert doch ganz gut geschmeckt (nach der Panade...😂). Schwefelporling, Chicken of the Woods (Laetiporus sulphureus) 🍄 Vorkommen: Stammfuß bis mehrere Meter Höhe an Laubbäumen, gern Obstbäume und Weiden (hier auf Esskastanie) 🌳 Speisepilz 🍴 Angeblich soll man ihn nicht von Robinie und Eibe einsammeln, weil er sonst Giftstoffe der Bäume enthalten soll. Allerdings habe ich weder an Robinie noch an Eibe jemals einen Schwefelporling gesehen und zweitens konnte mir noch nie jemand eine Quelle nennen, die diese Aussage bestätigt und begründet. Is Fungus Friday a thing? Yes? No? Well it is today. While riding through Cades Cove, we saw a downed tree close to the side of the road that had about an 8-10 foot section that was covered in this stuff. The bright orange/yellow color really stood out against the darker color of the tree. Recently, a photographer friend shared wildflower images and talked about how they liked to photograph them with a wide angle lens as it showed more of the environment. After using a 16-35 lens for this image, I completely get it. I love having the leading lines of the tree bark in the foreground leading you to the fungus while still having a background of the woods. I think it gives the sense of being in that spot. I'm so glad that we stopped to photograph this when we did. 15. April …. Nachmittagsrunde im hinteren Teil meines Hauswaldes vor der Wetterumstellung🌦️😊 Der Fund der flockenstieligen Hexe gestern ließ mir keine Ruhe und so machte ich auf, zur frühesten Runde ever in diesem Habitat, um einige mir bekannten Stellen des Hexenröhlings gezielt nach Fruchtkörpern abzusuchen. Auf dem Weg dahin machte ich noch einen Abstecher, um nach der mir bekannten, einizigen Stelle des Schwefelporlings zu schauen. Der schon von Weitem leuchtende Fruchtkörper des selbigen war im perfekten Alter, blieb aber an Ort und Stelle, da ich den Stumpf an dem er wächst nicht bestimmen kann, Also ging es noch gute 5 km weiter, bis ich im hinteren Teil des Waldes angekommen war. Found this rotted Laetiporus conifericola next to a heavily damaged and rotted fir tree. I know it is L conifericola because of its distinct smell, orange color, how it is situated in the woods, and the state of the closest tree. Springtime is a great time to spot L conifericola and L sulphureus, as the leaves in bushes and the undergrowth hasn't come in yet. It is spectacular preparation for the fall season. Specimens become hard like corkboard and persist through the winter then fall off in the spring. I will absolutely be coming back to this tree and harvesting a ton come fall. This also tells me more grows nearby. With this genus, if there is one, there is always more. Especially now that I used this rotted fruit, its mycelium, and its remaining spores to inoculate another nearby tree. I chose one close because I know the habitat is suitable. I might not have found the mushrooms I was seeking today but I certainly stumbled across a gem. This mushroom bread was inspired by an idea @thomushed had about a year ago, that’s along time fermenting this idea. His concept was to make powder from a Australian Chicken of the woods, Laetiporus versiporus and then use that powder to make bread, and then break that mushroom bread with friends and make breaded “cow” or the fungus known as chicken of the woods , as it shares the texture and look of chicken the flavour is mild and conducive to marination and butter chicken of the woods has been a winner Thomas shared previously. Now, this is where the mush bread gets interesting, so I used @modernforager recipe for mushroom boule, a long fermented no knead bread, that I fermented for 20 hours, the dough consisted of sautéed onions and fresh thyme, frozen native chanterelles, some viscous some conncinus, and powdered chicken of the woods recently foraged and gifted to me by @hinterlandfungi a true mush man of the mountain.
