Ogni amante dei cocktail in effetti, ha un grande debito nei confronti di questo periodo storico in cui l'Avana, soprattutto con l’inizio del proibizionismo negli Usa, divenne il centro della scena mixologica globale. È un errore comune, tuttavia, considerare i baristi cubani dell’epoca come meri esecutori. Oltre che dotati di grande preparazione tecnica, infatti, i cantineros sono stati anche dei prolifici innovatori. Se il bar Floridita proprio in quegli anni divenne noto come “la cuña del Daiquiri”, in generale la Repubblica di Cuba è stato il luogo dove nacque l’idea stessa di miscelazione tropicale! Per rendersi conto dell’originalità di questi anni basta sfogliare qualche libro di cocktail dell’epoca, come ad esempio il “Manual Oficial” edito nel 1930 dal “Club de Cantineros” che riuniva i migliori barman cubani. (Questa associazione professionale fondata il 28 maggio del 1924 oggi esiste ancora con il nome di Asociación de Cantineros de Cuba - Dirección Nacional e dunque tra pochi giorni ricorrerà il suo centesimo compleanno. Auguri!) A un occhio attento non sfuggirà quanti dei cocktail cubani dell’epoca siano a base di vermouth (a partire dal classico dei classici del periodo della Repubblica di Cuba: "El presidente"). So much work but it paid off big time at the end!! It always brings us so much joy when we make a cocktail that is a riff on a popular cocktail. We made a clear espresso martini and also made a classic espresso martini for the comparison. Hands down, one of the best cocktails we have made. All thanks to @kevin_kos and @the_cocktailguy for the delicious recipe and inspiration. Clear Espresso Martini: *Coffee oil washed vodka Crème de Cacao Simple Syrup Pinch of salt Egg white *Coffee oil washed vodka: Blitz freshly ground coffee and neutral oil (I used canola oil) in a blender for 40-60 seconds. Chill the mixture in a refrigerator for about 6 hours or overnight for the most flavor. Filter the oil and mix with approximately 4x volume of vodka. Put the mixture into a freezer until the oil solidifies. And finally filter out the solids using a coffee filter or a paper towel. And you have your clear coffee oil washed vodka.
