A popular Bun Tikki cart in Dehradun (Indra Road, Dwara store). I am told this is a roughly 40-year-old shop, and everyone loves them. People queue up to enjoy this deliciousness.  What makes them unique are the crispy potato tikki with Chana Dal, the tangy chutney, and the homemade seasoning spice (chat masala).  Dishes like this usually make me wonder about how our streets have practically identical offerings of food. Ceramics, Khurchan, and Kanji vade are just a few of Khurja's popular crafts.  Since kanji is usually found in Rajasthan, seeing it in Khurja is always interesting. In Khurja, you get dahi phulki with various spices, sweet and tangy chutney with curd, and a separate glass of Kanji. They claim it aids digestion, but I have no proof. I can surely talk about the flavor. You get the earthy and funny flavor from hing and black salt, along with the pungency of mustard and chili. I don't think one can give one flavor or spice more value than the other.  Also, keep in mind that you're in Uttar Pradesh; the Kanji Pani you'd get in Rajasthan tastes very different. There is a localized version in each state. Yesterday at a panel discussion, @chefgunjangoela talked about Purani Dilli. As an example, she mentioned that samosas and kachoris, which are now available all day, used to be available only between four and six in the evening thirty to forty years ago. However, now you can find the same dishes anytime of the day.  While it increases accessibility, the novelty of the dishes has diminished. Any self-respecting Desi or home cook worth their salt will have the kadahi, cooker, and tawa on hand. Just like a well-stocked pantry with daal, kadahi is a need. Do it all with just one pot. All your deep-frying, slow cooking or quick-cooking needs are met with kadahi. In addition to maintaining a consistent internal temperature, the kadahi's bigger opening facilitates regular air movement. Even though it is a mystical pot, kadahi is typically treated with such casualness. Because you will scorch your food in an instant with a really hot kadahi and miss out on the perfect flavor with a cold one, you should probably figure out how to control fire. Midway through is where the flavor is. A simple kadahi has always been the first item purchased upon relocating, whether it be to a new home or a different country. Not every day you meet humble and fantastic people. I met Bilal in Mahabaleshwar serving delicious Strawberry Fruit Cream. A few days back I was invited by @taiyabaali at @roohnewdelhi to try her special pop-up menu celebrating Awadh and more specifically Lucknow in a modern avatar. Phalsa Sorbet and Balai Aam were two of my absolute favourite, despite the fact that there were many delectable foods that were presented in contemporary ways and fashions. The only ingredients in the sorbet were phalsa and sea salt, whereas the balai aam featured fresh Alphonso as well as thick cream in the traditional Lucknowa style. Balai is one such ingredient which Lucknow walas love (many of them). It's rich and creamy thanks to the reduction of milk, and it has the nutty flavour of clotted cream (malai). Dates fruits are associated with fasting & the month of Ramadan. The nutritious fruits are not only the start of iftar meals but also a part of many desserts prepared during the holy month But why are dates such an indispensable part of Ramadan food? Historians believe that dates are one of the ancient fruits and their cultivation traces back to around 8,000 years ago. There are more than 200 varieties of dates with different shapes and flavors, however, all of them are rich in nutrition. Dates are a popular food item, not just in the Middle East but all over the world. They have amazing nutritional properties and just a few dates can keep you energised for hours; one of the many reasons people buy them. Dates or the date-palm are mentioned in the Qur’an 22 times, which is more than any other fruit tree, so we know their significance is rooted deep in Islam. Prophet Muhammad (ﷺ) knew of their benefits & greatly enjoyed eating them & encouraged those around him to do the same. The date was one of Prophet Muhammad’s (ﷺ) favourite and most desired food items. For this reason, many Muslims today consume dates not just during Ramadan but throughout the year, regarding the fruit as part of the blessed prophetic diet. For Muslims, adopting the habits and practices, or Sunnah, of the Prophet Muhammed (ﷺ) is regarded as something praiseworthy and blessed. Ramadan is a very popular time to eat dates because the Prophet (ﷺ) said, “When one of you breaks his fast, let him break it with dates for they are blessed. If they are not found, let him break it with water for it is pure.” [Tirmidhī] It is customary in many countries for Muslims to break their fast at the time of Iftar by consuming dates. Am I showing off, yes I surely am. This is my fan moment. Seeing a person on TV forever and learning from him. A man inspired millions and I was one among them. In Delhi, you're never far from a chaikhana or a small cycle cart selling tea. Wazir Tea and Coffee Shop remains open around the clock, without missing a single day on the calendar. It is owned and managed by Maulana Wazirudin and his sons. I met one of the sons, Azeemudin, at the shop. He puts on his skull cap and says "Bismillah" before we start talking. The family is religious, and the work shift is based on the timings of the azaan. Wazeer bhai comes in the evening to manage the shop, while the sons are present through the day. While most chai stalls use a stovetop, they have a coffee maker usually found at wedding venues. The electric espresso coffee machine boils the full fat milk and adds a nice foamy finish. They don’t use regular or low-fat milk, because they believe chai must me made with the full fat version for best results. "15 rupaiye lekar agar zayka nahi diya to kya fayda (what is the point of charging ₹ 15 per cup if we can't serve good, flavorful tea)," says Azeemudin. Tea helps understand the tea seller. The next day of Lohri is Makar or Til Sankranti. You will surely see me eating Poha and Curd (दही चूड़ा) and celebrating or starting my day with light food. According to Indian astrology, Sankranti marks the day when the Sun moves from one zodiac sign to another. Traditionally, Hindus celebrate a total of 12 Sankrantis throughout the year. However, the only time this event is observed is on Makara Sankranti, when the Sun moves from Sagittarius ('Dhanu' Rashi) to Capricorn ('Makara' Rasi). In this example, the precession of the Earth is taken into consideration by measuring the zodiac sidereally rather than tropically. It is also believed that Aryans used to worship the Sun and seek protection from the change in weather. The Sun is revered on Makar Sankranti because it is believed to be "Pratyaksha-Braham," "a manifestation of the absolute," bestowing knowledge, spiritual light, and wisdom. Consequently, Surya, the Sun God, is thanked and prayed to throughout the country on this day. Sankranti, like Lohri, celebrates the harvest, especially in rice-growing regions. On Makar Sankranti, fresh grains are offered to the Gods before being eaten. Ayurveda recommends light, readily digestible khichdi. Khichdi prepares the body for spring's warmer weather. The body is thrown off by sudden heat. Khichdi is the perfect supper since it fills hunger and provides nutrients. Ayurveda advises eating sesame seeds and jaggery on this auspicious day. Since the holiday is also called "Til Sankranti," "Sankranti" and "Til" (sesame) can be used interchangeably. Sesame seeds' ability to negate harmful emotions and improve "Sattva," or purity, kindness, and harmony, aids spiritual practise. On Lohri, people in Punjab, India's most fertile region, celebrate the sugarcane harvest. Sesame seeds, palm sugar, radishes, mustard, and spinach are also grown. These are the main things that people come to see at the festival. People celebrate Lohri to thank Surya, the Sun God, for blessing everyone with his presence and giving them a harvest that has never been seen before. One of the first Hindu festivals of the year is called a peasant holiday. It is a harvest festival where peasants can thank God. But how did Sundar Mundariye become linked to Lohri? (Maybe through folklore.) Just because it all happened on the same night as the Lohri festival. A legendary Punjabi hero named Rai Abdullah Khan Bhatti or Dulla Bhatti, who was a Muslim farmer and was known as the Robin Hood of his time, saved two innocent Brahmin girls named Sundri and Mundri from the hands of Emperor Akbar. Dulla Bhatti became the godfather of these sisters, and it is thought that he married them off at Lohri with a lot of pomp and celebration. This was a direct challenge to Emperor Akbar's authority.
