Tsourekia ( Greek brioche style bread) - the last lot of the Easter traditional bakes . I leave Tsourekia last as this dough is temperamental and I feel calm and patience is needed . The usual shenanigans of the bowl was covered with what seemed like 10 blankets , then it was moved around the house chasing the sun , to even having the dishwasher on the which helped as it sat on the bench (it was a cold wet day in Sydney). TSOUREKI CHEESECAKE 🍰 I know you still have #TSOUREKI leftover from Easter! This dessert is the most delicious #nonbake cheese cake you will ever make. The hardest part is waiting for it to set overnight 🤣 Ingredients Base ▪️ 500grams of tsoureki bread cut into pieces. This needs to be dehydrated in the oven for 1.5 hours on 100° fan forced. Keep an eye on it 😉 you don’t want it to burn ▪️150 grams of unsalted butter ▪️1/2 cup brown sugar Mixture/filling ▪️300ml thickened cream ▪️750gm cream cheese ▪️1/2 cup caster sugar ▪️2 tbsp icing sugar ▪️3 tbsp crème crèche ▪️1 tsp lemon ▪️2 tsp vanilla extract 1/ Line a tray with baking paper & turn the oven to 100° (fan forced). Tear up the tsoureki into smaller pieces and allow it to dehydrate for at least 1-1.5 hours. Keep an eye on it so you don’t burn it. The tsoureki should harden and once blended form a crumb like texture 2/ In a food processor add the tsoureki, butter & sugar. Blend until a crumb like texture is formed 3/ Line a spring form cake tin with baking paper. Add the tsoureki mixture into the tin & even it out with a spoon. Make sure to press it down so it holds its shape. Leave it in the freezer to set, for at least an hour 4/ Using a mixer, whip up the thickened cream to create stiff peaks. I put it on medium speed for about 7-8 mins. Set aside 5/ In a bowl, mix the cream cheese and caster sugar until well combined. Add the rest of the ingredients. Mix until you get a smooth texture. 6/ With a rubber spatula fold in the cream. Mix it through gently. You don’t want the air to leave the cream 7/ Once the cake base has set, add the filling & smooth out the top. Refrigerate over night. Decorate in the morning or just before serving. Did you know that each Orthodox Easter Monday is celebrated as a national holiday in Egypt? Since antiquity, colored eggs were seen as a symbol of new life in Egypt. They were originally decorated with natural dyes to celebrate “The Smell of the Fresh Breeze” or Sham an Nassim festival. Hard-boiled colored eggs symbolized rebirth. The children traditionally used the eggs to play games with. Once Christianity was established, the eggs began to represent the resurrection of Christ. Interestingly, the image of the hare represented longevity, and is the origin of the modern Easter bunny! This celebration began during ancient times and, once Christianity became wide spread, used to be held in the middle of the Coptic Lenten period. This meant that the Coptic Christians, who were abstaining from meat, fish, dairy products, and sweets for Lent, could not participate. Under Fatimid Muslim rule, the date was changed so that everyone could participate in the festivities. The Fatimids changed the date to Coptic Easter Monday, so that the festival would still be in springtime, but after the Lenten fasting period was over. Since the holiday has no religious connotations, Egyptians of all faiths celebrate with picnics, outings, and family gatherings. Each menu item was symbolically important. Fresh sardines and fish in general, were symbols of fertility, and an item which was available to commoners and pharaohs alike. The fish were also symbolic because ancient Egyptians would make offerings of fish to the gods during holidays and then fast. They would salt cure and marinate the fish to enjoy after the day’s fasting. I don't make them often, but when I do, I go all out! These tsourekia took 3 days using @zinonaschristofidis updated recipe. I was skeptical at first, given I had such good results with the original version (see previous post), but the flexibility it gives worked great with the nap schedule of our 3 month old daughter 😊 Thanks again, chef! And I'm not ashamed to show that it took me three tries to get the new braid right. It was worth it, though. It's many hours over many days spent preparing delicious tsourekia, koulourakia and dyeing eggs. It wouldn't be Easter for me without these traditions. The intoxicating aromas of orange, vanilla, mastic and mahlepi permeate throughout the house. These aromas are comforting and nostalgic.
