Well hello there my friends! I have been MIA because I have been moving to a new home. Can’t wait to show you guys my cute kitchen. Still fixing everything up the way I like it. On New Years Day I had made one of my yiayia Anneta’s traditional recipes called diples. You will either see these as large fried dough rolls or large bow ties. They are considered a celebration food! I wanted to have something sweet available for us once we settled in, to celebrate our new apartment. So, I made mini bow ties because I wanted to have MORE on hand. The exciting thing is that if you don’t drizzle them all with honey, they will store VERY well in an airtight container. Diples These pastry delights originate from the southern Pelopponesse in Greece. Called δίπλες in Greek, they are usually served during special occasions like Christmas Makes 50-60 diples Equipment Deep frying pan Pasta Machine Deep pot to boil the honey Food mixer Dough 7 eggs 1 shot (45mls) ouzo 4 tsp fresh lemon juice 1/4 tsp bi-carb soda 600 grams of all purpose flour Frying 1 litre of olive oil Honey syrup 1 kg honey 1 cup of water & Cinnamon stick Topping 450 grams of crushed walnuts Cinnamon Method: Seperate the egg whites & place into mixer bowl, mix for around 5 minutes until it forms soft white peaks. Transfer egg whites into a bowl with the flour, egg yolks, bi-carb soda, ouzo & lemon juice. Mix with your hands until it forms a soft dough & not sticky. If you find the dough is still sticky, add some flour onto your hands & mix until dough should be medium smooth to firm. Allow dough to rest for 30 minutes, cover loosely with a tea towel. Whilst the dough is resting, make the syrup. Transfer honey, cinnamon stick & 1 cup water into a deep pot. Bring your boil, then remove from stove top & allow to cool. To roll the pastry Using the pasta machine, cut a small section of the dough & start passing the dough a section at a time until very thin. The pasta machine numbers I used were (2,4,6,8). If your dough is too sticky whilst using the pasta machine add more flour onto your work surface & hands. Cut dough in square pieces 8x8 cm. Place them on a clean non stick surface. Using a deep frying pan, pour in the olive oil & heat the oil. Once ready, carefully place a flat piece of dough into the hot oil. The dough will expand quickly, this is the time when you need to shape the dough. Using two folks, place one folk onto the surface of the dough & the other folk to start creating a roll. It takes around 20 seconds for the dough to cook. Transfer the diples & place in an upright position using a colander. Repeat this process until you have rolled out all of your dough & fried all the diples. Bathe the diples in the cool honey syrup, then place on serving platter. Sprinkle crushed walnuts & cinnamon over each diples. #diples
