Did you know we also make grappa, known as husk spirit in South Africa? Our Blackwood Spirits Husk Spirits (grappa)   is made from grape pomace sourced from a local Hout Bay winery. The pomace is fermented by ourselves and then double distilled, first in a stripping still and then in a copper still. What we love about this product is that we are making use of grapes which were destined for the compost heap, but before reaching this useful recycling phase we first upcycle it into our flavoursome grappa! We are delighted to share that our Blackwood Spirits Old Tom gin was awarded a Silver @intercontinentalchallenge 2024 competition. A smooth aromatic gin ideal for these cooler evenings The name Old Tom gin purportedly came from wooden plaques shaped like a black cat (an "Old Tom") mounted on the outside wall of some pubs in 18th-century England. The British government tried to stem the flow of gin with prohibitive taxes and licensing. To avoid these taxes the pubs solution was to find a way to serve gin without the taxman seeing so under the cat's paw sign was a slot to put money in and a lead tube. From the tube would come a shot of gin, poured by the bartender inside the pub. Since then, a cat is often a symbol associated with an Old Tom gin. Using modern distilling methods, our Old Tom Gin has been crafted based on research, methods, and tools available around 18th-century England.  The flavour is enhanced by the use of a grape-based neutral spirit. At the time Old Tom gin was being made, there were no glass bottles, so gin was generally transported in a variety of casks or barrels from distillery to pub. As a nod to this our Old Tom has been lightly rested in oak, which has imparted a sweeter vanilla note. This, together with the addition of liquorish and cinnamon, has enhanced the subtle sweetness. Additional spices have been added to make this a smooth aromatic tipple. Perfect Serve:  perfect on its own as a sipping gin, the addition of a large block of ice with a twist of orange enhances the aromatic flavours.  A splash of tonic or soda is also highly recommended. BeGIN the weekend with a gin sour! 🍋🍋🍋 Frozen Gin Sour Ingredients: Blackwood Spirits London Dry Gin - 2 lemons, zested - 2 cups of water - 1 cup sugar - 1 cup fresh lemon juice - Lemon peel from one lemon - 1 cup sparkling water - Lemon wheels, mint & flowers for garnish 🍋🍋🍋 If you have no lemons use limes instead, or combine lemons and limes. This recipe is sufficient for four generous servings. 🍋🍋🍋 Method: - In a pot, add the lemon zest, water and sugar. - Bring to a boil, reduce heat and simmer for 5 minutes - Remove from the heat and allow to cool. - In a bowl, stir together the cooled lemon syrup with peel, lemon juice and mineral water. - Sieve out solids before freezing. If you have an ice cream maker use according to manufacturer’s instructions. - If you don’t have an ice cream maker, you may freeze the mixture in a tray in the freezer for 1.5 hours. Remove mixture from the freezer and stir with a whisk or fork to break down the icy particles. Return it back to the freezer and stir once every hour for about four hours. A beautiful delicate creature known as a Basket Star (Astrocladus euryale). The name refers to the basket like structure it creates with its fine interlocking tendrils which is uses to catch/ filter out small prey. Basket stars are brittle stars which are close relatives of starfish and also known quite aptly as Gorgon's Head. They have ten arms which each branch multiple times into progressively finer and more delicate tendrils. They are typically a dull blue-grey with dark stripes on their arms and small, black-ringed knobs on their central disc. They can grow very large, reaching over half a metre across. Basket stars typically anchor their central disc onto sea fans or other tall corals situated high up in reefs, and hold their arms outstretched to catch passing prey. The fine tendrils on their arms can interlock, forming a basket-like trap. When not feeding, basket stars can pull their tendrils and arms towards their central disk for protection. When distilling it’s important that one monitors the alcohol levels being produced during the distilling process ⚗️⚗️⚗️ Many stills have a "parrot" - a small, cylindrical collection vessel that catches distillate long enough to get “on-the-fly” measurements of the alcohol levels of what comes out, before the liquid runs into the collecting vessel. ⚗️⚗️⚗️ The glass tube shown in the photo is a hydrometer which is used to measure the alcohol content of the distillate. Wishing all cyclists taking part in the 2023 Cape Town Cycle tour a safe and fun ride today! 🚲🚲🚲🚲🚲 This is the 45th edition of the largest individually timed race in the world, with cyclists riding 109km in the shadow of Table Mountain, one of the most scenic routes in the world. 🚲🚲🚲🚲🚲 At the end of the ride, you will deserve your G&T or tipple of choice!  🚲🚲🚲🚲🚲 The Cape Town Cycle Tour is now one of the world’s leading cycle events, but when Bill Mylrea, John Stegmann and Louis de Waal first proposed the Argus Tour, it was meant to be a protest ride to ‘encourage’ the city council to think about bicycles as part of its urban planning, and look after cyclists on the (by 1978 standards) busy roads. As such, the event failed spectacularly for decades, but what a wonderful deviation from those goals it has become. A Gin Smash using strawberries 🍓🍸, black pepper & balsamic vinegar – I love drinks with a savoury note - lovely drink to end the weekend on. We used our Cape Kelp gin which has a savoury note that compliments the strawberries, balsamic vinegar, and black pepper.  🍓🍸🍓🍸🍓🍸 Ingredients: 50ml Blackwood Spirits Cape Kelp Gin 3 x strawberries 15ml lemon juice 15ml balsamic vinegar 15ml black pepper syrup* Soda water  🍓🍸🍓🍸🍓🍸 Method Muddle strawberries, gin, lemon juice, black pepper syrup, balsamic vinegar together in a mixing glass. Adjust sweetness if necessary. Add ice shake and strain into an iced glass. Top up with soda water and garnish with a strawberry and mint. Cheers! 🍓🍸🍓🍸🍓🍸 Black Pepper Syrup* In a small saucepan bring one cup of water to the boil, add one cup sugar, stir until dissolved, add quarter cup coarsely ground black pepper corns. Leave to infuse for 30 mins. Strain the syrup into a jar and refrigerate. We are  delighted to say our Old Tom style gin and our Lightly Rested aged gin both won a double gold at the recent 2022 SA Craft Awards Whilst our Old Tom is available we are still organising labels and bottling for the Lightly Rested aged gin  🐈 The name Old Tom gin purportedly came from wooden plaques shaped like a black cat (an "Old Tom") mounted on the outside wall of some pubs in 18th-century England. The British government tried to stem the flow of gin with prohibitive taxes and licensing. To avoid these taxes the pubs solution was to find a way to serve gin without the taxman seeing  so under the cat's paw sign was  a slot to put money in and a lead tube. From the tube would come a shot of gin, poured by the bartender inside the pub. Since then a cat is often a symbol associated with an Old Tom gin.  🐈 Using modern distilling methods our Old Tom Gin has been crafted based on research, methods and tools available around 18th-century England.  The flavour is enhanced by the use of a grape-based neutral spirit. At the time Old Tom gin was being made there were no glass bottles so gin was generally transported in a variety of casks or barrels from distillery to pub. As a nod to this our Old Tom has been lightly rested in oak which has imparted a sweeter vanilla note. This, together with the addition of liquorish and cinnamon, has enhanced the subtle sweetness. Additional spices have been added to make this a smooth aromatic tipple.  🐈 Perfect on its own as a sipping gin, the addition of a large block of ice with a twist of orange enhances the aromatic flavours.  A splash of tonic or soda is also highly recommended. Blackwood Distillery Well, you know you have friends, and then you have FRIENDS! The later is the variety who open doorways from what once was a blissful existance, points out a rabbit hole and with an innocent look and softly whispers in your ear, “take a peek”. Oh hell, here we go again, Husk spirit, and you promptly get inundated with hits and threads etc.! Also known as Grappa, Raki, Marc etc. Eish . . . . no ice please Has a long, long history, waste product typically post wine making, usually destined for jam and the compost heap sort of thing. So, the backstreet guys in Europe, scrape it together and huddle away into dark alleys and do a little further fermenting and distilling - afterall, nothing should go to waste. In some areas it is even wood aged to make a brandy varietal, may not use the word Cognac, lawsuit and such #@*% 🤨 So, back to today, saw a post online by Backwood Distillery listing their latest batches of Husk Spirit using different grape varietals. Enough said, another branch to the warren, here we go, nothing ventured, nothing gained. Roped in a few awards to boot, humph, there might be something there after-all, digging this hole a little deeper, in for a Penny in for a . . . there you go, you know what I mean. 😄 So, I will wait for this FRIEND to come a join me for a shot or two of Husk Spirit, be it as a digestive or otherwise. Oh, why the lamp and such, the South Africans know what that is all about, I will not mention the name which may not be mentioned. 4pm to 6pm lights out, flashback to boarding school. 🙄 Thanks to Blackwood for the samples, trying to entice me down another burrow 😉😆
