Did you know we also make grappa, known as husk spirit in South Africa? Our Blackwood Spirits Husk Spirits (grappa)   is made from grape pomace sourced from a local Hout Bay winery. The pomace is fermented by ourselves and then double distilled, first in a stripping still and then in a copper still. What we love about this product is that we are making use of grapes which were destined for the compost heap, but before reaching this useful recycling phase we first upcycle it into our flavoursome grappa! We are keen divers so when venturing into distilling we wanted to produce a gin that represented this special underwater world and wanted to share this with others. We are delighted to share that our Blackwood Spirits Old Tom gin was awarded a Silver @intercontinentalchallenge 2024 competition. A smooth aromatic gin ideal for these cooler evenings The name Old Tom gin purportedly came from wooden plaques shaped like a black cat (an "Old Tom") mounted on the outside wall of some pubs in 18th-century England. The British government tried to stem the flow of gin with prohibitive taxes and licensing. To avoid these taxes the pubs solution was to find a way to serve gin without the taxman seeing so under the cat's paw sign was a slot to put money in and a lead tube. From the tube would come a shot of gin, poured by the bartender inside the pub. Since then, a cat is often a symbol associated with an Old Tom gin. Using modern distilling methods, our Old Tom Gin has been crafted based on research, methods, and tools available around 18th-century England.  The flavour is enhanced by the use of a grape-based neutral spirit. At the time Old Tom gin was being made, there were no glass bottles, so gin was generally transported in a variety of casks or barrels from distillery to pub. As a nod to this our Old Tom has been lightly rested in oak, which has imparted a sweeter vanilla note. This, together with the addition of liquorish and cinnamon, has enhanced the subtle sweetness. Additional spices have been added to make this a smooth aromatic tipple. Perfect Serve:  perfect on its own as a sipping gin, the addition of a large block of ice with a twist of orange enhances the aromatic flavours.  A splash of tonic or soda is also highly recommended. BeGIN the weekend with a gin sour! 🍋🍋🍋 Frozen Gin Sour Ingredients: Blackwood Spirits London Dry Gin - 2 lemons, zested - 2 cups of water - 1 cup sugar - 1 cup fresh lemon juice - Lemon peel from one lemon - 1 cup sparkling water - Lemon wheels, mint & flowers for garnish 🍋🍋🍋 If you have no lemons use limes instead, or combine lemons and limes. This recipe is sufficient for four generous servings. 🍋🍋🍋 Method: - In a pot, add the lemon zest, water and sugar. - Bring to a boil, reduce heat and simmer for 5 minutes - Remove from the heat and allow to cool. - In a bowl, stir together the cooled lemon syrup with peel, lemon juice and mineral water. - Sieve out solids before freezing. If you have an ice cream maker use according to manufacturer’s instructions. - If you don’t have an ice cream maker, you may freeze the mixture in a tray in the freezer for 1.5 hours. Remove mixture from the freezer and stir with a whisk or fork to break down the icy particles. Return it back to the freezer and stir once every hour for about four hours. #GinADayMay – Day 30 #low and no 🤿🤿🤿 We dive “low” to collect our Laminaria palida kelp for our Cape Kelp gin and it’s always a “no” to damaging or negatively impacting on the marine world below  🤿🤿🤿 From Guido: ”This resting ray was completely unperturbed by my  presence, so I carefully put down the bottle and backed off, taking a few photos and some videos. These rays can grow to a significant size (over 2m wide!), but are gentle giants, mostly digging for soft  invertebrates in sand to feed on. When approached slowly they generally do not worry about divers. Sometimes they are encountered swimming, in which case they very graceful, with a slow wing beat. #GinADayMay – Day 27 - #Recipe Ginny Ceviche 🐟 We love pairing food with various wines and spirits. Gin is a spirit that pairs well with fish. On a trip to Argentina and Chile we enjoyed the local ceviche dishes.  Each little eatery had their own “secret family recipe”. One friendly chef shared that his family secret ingredient was the addition of pisco, a local unaged brandy. Ceviche is basically raw fish cured with lime juice. This is our take swopping out the pisco for our Kelp Gin . 🐟 Ingredients: - 200 g firm white fish e.g. yellow tail, swordfish cut into 1cm blocks - Half teaspoon of salt - Toasted slices of ciabatta bread to serve  🐟 Marinade: - 1 small red onion thinly sliced - 1 red chilli finely chopped - Juice 3 limes (lemons also work well) - Zest of 3 limes - 1 cm piece of fresh ginger finely grated - Handful of chopped fresh coriander - Generous measure of Gin – use a dry or savoury gin   🐟 Method - Place cubed fish in a large bowl and mix with salt - Mix the marinade ingredients together and pour over the cubed fish. - Marinade for 10 to 30 minutes – you need to check the fish as the marinade “cooks” the fish – once the fish is tender pour off the marinade juice. - Check the seasoning – ceviche needs quite a bit of salt - Once the fish is “cooked” you need to serve immediately - The marinade juice is known as “Tigers Milk” – serve in a small glass. #GinADayMay – Day 13 - #Cocktail  🍋🍋🍋 It's #worldcocktailday today and a Frozen Gin Sour is one of my favorite cocktails 🍋🍋🍋 Frozen Gin Sour Ingredients: Blackwood Spirits London Dry Gin - 2 lemons, zested - 2 cups of water - 1 cup sugar - 1 cup fresh lemon juice - Lemon peel from one lemon - 1 cup sparkling water - Lemon wheels, mint & flowers for garnish  🍋🍋🍋 If you have no lemons use limes instead, or combine lemons and limes. This recipe is sufficient for four generous servings. 🍋🍋🍋 Method: - In a pot, add the lemon zest, water and sugar. - Bring to a boil, reduce heat and simmer for 5 minutes - Remove from the heat and allow to cool. - In a bowl, stir together the cooled lemon syrup with peel, lemon juice and mineral water. - Sieve out solids before freezing. If you have an ice cream maker use according to manufacturer’s instructions. - If you don’t have an ice cream maker, you may freeze the mixture in a tray in the freezer for 1.5 hours. Remove mixture from the freezer and stir with a whisk or fork to break down the icy particles. Return it back to the freezer and stir once every hour for about four hours. Shake well and strain into cocktail glass. Laminaria pallida Kelp is a key botanical in our Cape Kelp Gin. We wanted to bring a savory note to our gin so set out to investigate the seaweeds found in our Cape waters. We tested a number however in the end decided to use Laminaria pallida kelp. The main reasons being the flavour and the fact that it is the most prolific kelp growing in our Cape waters. 🌿🌿🌿 Ecklonia maxima kelp is the kelp most people in Cape Town are familiar with as it grows just off our Cape coastline with the end fronds floating  on the surface of the sea. The Laminaria pallida kelp grows underwater at depth from 5m to 30m. So unless you are a diver not a kelp most people recognise.  🌿🌿🌿 We are very conscious of collecting in a legal, safe and mindful manner. We free-dive for the kelp, in a non-polluted area. Gin a Day May 2021 – Day 16 #Coast Birds eye view of Oudekraal, close to Hout Bay. Beautiful kelp forests make it a lovely scuba and freediving location. 🌿🤿🌿🤿🌿🤿 Located on the Atlantic coast temperatures vary from 8°C to a maximum of 16 °C, average temperature usually around 12°C The better viz the colder it is. The kelp we use in our gin is found here however we do not harvest from here as part of a marine reserve and its bl**dy cold!!! We collect from the other side of the peninsula in False Bay, much warmer and in certain areas one is allowed to harvest. Temperature average between 14 to 16°C.
