Chhundo (Gujarati: છૂંદો, Hindi: छुन्दो) is a kind of Indian pickle preparation as well as a condiment mostly made out of grated green mangoes, used in cuisine of the Indian subcontinent as an accompaniment to the main meal that consists of Roti, Sabzi and other food items. However, it is a generic form of preparation that can be made with various fruits and vegetables. Chhundo is particularly a Kathiawadi dish but is consumed across Gujarat. Since mango is a seasonal fruit and is available in abundance only in summer in India (April–July), most mango pickles are made during this time with oil or sugar base and then preserved in large glass containers. Aam panna, Aam Jhora, or panha is an Indian drink. It is made from unripe mangoes and is yellow to light green in color. Mint leaves are often added to the drink, enhancing its green color. Unripe mango is a rich source of pectin, which gradually diminishes after the formation of the stone. Unripe mango is sour in taste because of the presence of oxalic, citric and malic acids. Chilla also spelled as "Cheela" are basically sweet or savory Indian pancakes made with various kinds of lentil & cereal grain flour. These pancakes are also known as pudla or puda. Chilla are mostly made with unleavened batter so they are considered to be healthy. There are many kinds of chillas made in the Indian homes using various kinds of flour like oats, semolina, millet flour and even wheat flour. We also make them with lentils like chana dal, moong dal and mixed lentils. Besan chilla is much loved by many as these are fast to make & are aromatic & tasty. 'Besan' is a Hindi word for 'gram flour' and chilla is a pancake. So besan chilla are gram flour pancakes. These are naturally gluten-free, vegan and nutritious. They are cooked with minimum fats like oil or ghee. Besan Chilla is also a popular Street food in the Indian cities where you see the vendor making them instantly right in front of you. The recipe requires only the basic veggies like onions and tomatoes. However to perk up the nutrition you can also add some grated carrots or fine chopped baby spinach. I usually go with the basics onions & tomatoes as this recipe is meant to be fast. Sometimes just to use up the surplus I add spinach or carrots. A lot of people eat besan chilla on their own with just a cup of chai. However at home, we love these with a spicy chutney like this Garlic chutney, Pudina chutney or Coriander chutney. Being vegetarians, we have lots of veggies in our diet. I am a huge fan of recipes that are easy to make. You can easily use different vegetables in this mix veg recipe depending on what you have on hand and what is in season. If frozen veggies are all you have on hand, that isn’t a problem! You can also add paneer to this mix vegetable recipe if you like. I often make this when we want to have something comforting with roti, poori or paratha. Momos are a type of steamed filled dumpling in Tibetan and Nepali cuisine that is also popular in neighbouring Bhutan and India. Momos are usually served with a sauce known as achar influenced by the spices and herbs used within many South Asian cuisines. It can also be cooked as soup versions known as jhol momo where the broth is made from achar using a mixture of tomatoes, sesame seeds, chillies, cumin and coriander or mokthuk from boiling pork/buffalo bones mixed with various herbs and vegetables. A simple white-flour-and-water dough is generally preferred to make the outer covering of momos. Sometimes, a little yeast or baking soda is added to give a more doughy texture to the finished product. Traditionally, momos are prepared with ground/minced meat, potatoes, and leek filling. Nowadays, the fillings have become more elaborate and momos are prepared with virtually any combination of ground meat, vegetables, tofu, mushrooms, paneer cheese, soft chhurpi (local hard cheese) and vegetable and meat combinations. The dough is rolled into small circular flat pieces. The filling is enclosed in the circular dough cover either in a round pocket or a half-moon or crescent shape. People prefer meat with a lot of fat because it produces flavourful, juicy momos. A little oil is sometimes added to the lean ground/minced meat to keep the filling moist and juicy. The dumplings are then cooked by steaming over a soup (either a stock based on bones or vegetables) in a momo-making utensil called mucktoo. Rogan josh also spelled roghan josh or roghan ghosht, is an aromatic curried meat dish originating from Kashmir in India. It is made with red meat—traditionally lamb, mutton, or goat—and coloured and flavoured primarily by alkanet flower (or root) and Kashmiri chilies. It is one of the signature recipes of Kashmiri cuisine. Rogan josh is a staple of Kashmiri cuisine and is one of the main dishes of the Kashmiri multicourse meal (the wazwan). The dish was originally brought to Kashmir by the Mughals, whose cuisine was, in turn, influenced by Persian cuisine. The unrelenting summer heat of the central Indian plains took the Mughals frequently to the country's northern region, Kashmir, which has a cooler climate because of its elevation and latitude. Rogan josh consists of pieces of lamb or mutton braised with a gravy flavoured with garlic, ginger and aromatic spices (clove, bay leaves, cardamom, and cinnamon), and in some versions incorporating onions or yoghurt. After initial braising, the dish may be finished using the dampokhtak slow cooking technique. Its characteristic deep red colour traditionally comes from dried flowers or root of Alkanna tinctoria (ratan jot) and from liberal amounts of dried, deseeded Kashmiri chillies (lal mirch). These chillies, whose flavour approximates that of paprika, are considerably milder than the typical dried chillies used in Indian cuisine, whose flavor and heat level are similar to cayenne pepper. The recipe's spice emphasises aroma rather than heat.
