Pretty close to Loco Moco, with a few twists. Replacing the beef with ground duck burger, purchased but is something I would try to make fresh one day. The gravy of yellow onion, scallion whites, garlic, Chinese cooking wine, mixed poultry stock, and the star of the show; Morel mushrooms. I had previously turned leftover mushrooms from a special delivery into a duxelle. Roughly 2/3 of was blended directly into the gravy base, and it provided more than enough thickness. I really think thoroughly puréed mushrooms are underestimated as a textural ingredient. The rest of the duxelle was incorporated as is, and everything was seasoned with black pepper, salt and a little sugar. Inspiration from @fraservalleyspecialtypoultry

Roasted Cherry Tomato Spaghetti alla Chitarra by @turkuazkitchen Ingredients 2 1/2 cups 00 flour or all-purpose 3 whole eggs (medium) 2 eggs yolks 1/2 tsp lemon juice 1/2 tsp salt Pinch of granulated sugar 1 olive oil For the Sauce: 4 tbsp olive oil 6-7 medium cloves garlic 3 mini red sweet peppers 1 Ibs cherry tomatoes Fresh basil leaves Salt and black pepper 1/2 cup boiling water 1/2 cup parmesan cheese For the Top: Burrata Parmasen cheese Instructions Place the flour on a work surface, add salt and sugar and make a well. Add the eggs and lemon juice to the well. Using a fork, pierce the egg yolks and whisk. Slowly move more flour from the sides to the well by moving your fork around the well and rolling up the dough as in the IG reel. Drizzle the oil on the surface of the dough and keep kneading for 5-6 min until it is elastic and no longer sticky. If the dough seems too dry you can add 1-2 tbsp water. Wrap the dough with plastic wrap and let it rest for 20-30 min at room temp. Slice the dough into 4-6 equal pieces and run the dough through a pasta roller. Repeat the same process with the remaining dough. On a pasta drying rack, dry out the ready pasta sheets (or hang them over the back of a clean chair) for 5-7 min so that they don’t stick or can be cut easily! Sprinkle the sheets with semolina flour. Using a pasta cutter attachment or chitarra cut the sheets to your ideal shape, sprinkle with a bit of extra semolina flour and let the pasta rest for about 10-15 min to dry out slightly. Meanwhile, preheat the oven to 400F. In a medium tray or iron-cast, place the garlic cloves, peppers, tomatoes, and fresh basil leaves. Add olive oil, salt, and red pepper. Mix to combine. Roast it until the tomatoes are soft. Remove from the oven and set aside to cool for 5-10 min. Bring a large pot of salted water to boil. Cook pasta until al dente about 6-7 min. Drain it, reserving 1 cup of the cooking water. Using a fork mash the roasted vegetables, or blend them using a food processor. Transfer the sauce to a pan and add boiling water and parmesan. Add the drained pasta to the sauce. Toss gently to combine. Transfer to a bowl and serve with burrata cheese

Shredded Chipotle Beef 🔥🌶️🥩 by @calwillcookit This beef right here is flavor packed and so easy to make. Also GREAT for meal prepping. Use it for tacos, bowls, whatever you want! FULL RECIPE ⬇️ INGREDIENTS - ~3 lb chuck roast - Salt, pepper, garlic powder - ~1-2 tbsp of ghee - 2 bay leaves (Braising Liquid; Blend all ingredients together) - ~1.5-2 cups beef broth - ~2-4 chipotles in adobo sauce - ~1-2 tbsp of adobo sauce - ~2 tbsp of minced garlic - ~2 tbsp of apple cidar vinegar - Juice of a lime - ~ 2 tbsp cumin - ~ 2 tbsp mexican oregano - ~ 1 tbsp onion powder - ~ 1 tbsp garlic powder - ~ 1/2 tbsp salt - ~ 1/2 tbsp pepper Note: the more chipotles and adobo sauce you add, the spicier it will be. I personally don't like it to hot so I only added 3. Also, regular oregano works fine. DIRECTIONS 1. Prepare the braising liquid and set aside. 2. Pat Chuck roast dry and season heavily On all sides with salt, pepper and garlic powder. Sear in ghee or oil of choice on a large skillet for 3-4 min per side on medium-high heat. 4. Pour a layer of the liquid at the bottom of the crockpot then add in the chuck roast, rest of the liquid and bag leaves. Cook on high for 4-6 hours until tender and start to falls apart. 5. Remove and let cool for a few minutes then shred it up. Add some of the broth over top. 6. Serve it with whatever you want! 7. ENJOY! 🙌🏻

We have so many more pictures to share but the countdown to Italy and our travel retreats has ended. EXTRA GARLICKY CHICKEN by @shredhappens This is how to prep an incredible garlicky chicken right at home. It comes out so juicy, so flavorful, and it makes for easy meals all week long. Pair it with this EXTRA garlicky sauce, and it bangin! . Here is how to make it: . 1.The key is to season the chicken really well. In a bowl combine 1/4 cup olive oil, 6-8 minced garlic cloves, 3-4 pinches salt, fresh cracked pepper, 1 tbsp sweet paprika, 1 tbsp thyme, 1 tbsp onion powder, 1/4 to 1/2 tsp cayenne pepper, 2 tbsp sumac, and the juice of 1 large lemon. Mix well. . 2.Add 2.5lbs boneless skinless chicken thighs in a bowl, top with the marinate from step one and mix well. Let this marinate for 2-6 hours (even better overnight), but if you want to make it right away, you can! . 3.When you’re ready to make it, remove chicken from the fridge and let it come up to room temp (about 30 mins). Preheat oven to 400F then pack the marinated chicken tightly into a round oven safe dish or loaf pan (about 8.5x4.5x2.5). Pop into the oven for 1 hour 20 mins at 400F. Time varies by oven. . 4.Remove chicken from the oven, tilt the pan onto a container to remove the excess juices (save to pour over the chicken later if you like). . 5.Flip the chicken dish onto a cutting board and cut into thin slices. . 6.To make the extra garlicky sauce add 6-8 cloves garlic to a pestle and mortar. Use the pestle to grind the garlic well against the salt until it turns into a paste. Then add 1-2 tbsp mayo and 4 tbsp plain yogurt. If you prefer less garlicky, you can add a bit more yogurt/mayo, or also squeeze some lemon juice to balance it out. Your call. . I made a delicious lowcarb high protein chicken wrap with the garlicky sauce, fresh parsley, red onion, hot sauce, tomato, and aleppo pepper. You can also make it into a high protein lowcarb bowl with my @kaizenfood lowcarb rice if you like. . ENJOY!

Cheesy Buffalo Chicken with Farfalle aka Bowtie Pasta by @thesecarbsdontcount RECIPE ⬇️ 1. Cook 1/2 lb pasta in salted water until al dente. 2. Add olive oil to a pan and 2 chicken breasts cut into bite sized pieces. Season your chicken. 3. When the chicken is cooked, remove from the pan (optional: mix chicken with Buffalo sauce) then add 3 tbsp of butter. 4. Add 3 cloves minced garlic and 1/2 a diced onion. Cook for a few minutes. 5. Add 1.5 cups heavy cream. When simmering, lower the heat. Season your sauce. 6. Add 1/4 cup Asiago, 1/2 cup cheddar and 1/2 cup mozzarella. 7. Add pasta water & mix until creamy. Add 1/2 cup Buffalo sauce. 8. Add your cooked pasta & chicken to your sauce. Enjoy!

SALMON PASTA IN A CREAMY DILL SAUCE by @dontgobaconmyheart_ Serves 2 INGREDIENTS . 2 skinless/boneless Salmon Fillets, at room temp (7oz/200g total) 7oz/200g Spaghetti (or other long-cut pasta) 3/4 cup/180ml Heavy/Double Cream, at room temp 1/3 cup/80ml Dry White Wine 2 sprigs of Fresh Dill 1 tsp Fresh Dill, finely diced 1 tbsp Fresh Parsley, finely diced + extra for serving 2 small Shallots, very finely diced 1 large clove of Garlic, very finely diced 1 heaped tbsp Butter gentle squeeze of Lemon Juice, to taste* Parmesan, to serve Salt & Black Pepper, to taste Olive Oil, as needed METHOD 1️⃣Generously season both of the salmon fillets with salt & pepper.
2️⃣Add to a non-stick pan over medium-high heat in a small drizzle of oil. Once golden on the bottom, flip over & add a sprig of dill on top of each fillet. Melt butter into the pan & baste the salmon until golden on the other side and just about cooked through the centre. Remove & place to one side. Break up into large chunks just before needed (discard dill).
3️⃣Cook pasta in salted boiling water until al dente, reserving a cup of starchy pasta water. Drain when needed. 4️⃣Lower pan to medium heat & fry shallots until deep golden, then fry garlic for another min.
5️⃣Pour in wine & leave to simmer for a good 4-5mins to reduce. This is important so it burns off the alcohol & doesn't end up too bitter. Once almost completely reduced/evaporated, stir cream. 6️⃣Stir in dill, parsley & a small squeeze of lemon juice. Season with salt and pepper. Keep on a gentle simmer.
7️⃣Toss through the pasta until the sauce clings to it, adding a dash of starchy pasta water if you needed to loosen up the sauce. Add salmon and gently toss to combine. Serve with parmesan & leftover parsley. . *This pairs with the flavour of the salmon & cuts through the richness of the sauce. Don’t add more than a tsp in the sauce. If you want more lemon flavour squeeze over at the end.
