One of my favorites as a kid! So happy I figured out how to make “eggsalad” vegan! So easy: 1 block super firm tofu (drained of excess water) 2 large tbls Vegan Mayonnaise 3 tbls Mustard Few pinches Kosher salt Several grinds black pepper or about 1/2 tsp pepper 1/2 tsp turmeric Slice tofu into 2” cubes or slightly smaller to fit into an egg slicer both directions. Slice cube one way, then turn 1/2 turn the other way and slice to get thin “strings.” Add above ingredients and mix well. Can also add a little celery salt in lieu of the kosher salt. What better way to make this a Super Salad Sunday (I like the sound of that) then with a delicious mix of fresh veggies and a heaping scoop of yummy Eggless Salad? . . It’s made with . Arugula Baby Spinach Sugar Snap Peas Radish Cucumber Tomatoes Pimento Olives Micro Greens @kellyscroutons . . Here’s how to make the Tofu Eggless Salad Ingredients . . 1 package of extra firm Tofu drained well 2 1/2 Tbsp of @followyourheart Vegenaise (add more to taste) 1 tsp Yellow Mustard (or whichever style you prefer) 2 Ribs of Celery finely chopped 1 Green Onion sliced thin 1/2 tsp of Ground Turmeric 2 tsp of Capers with brine 1/4 tsp Kala Namak (black salt) 1/4 tsp of Smoked Paprika Garlic & Onion Powder to taste Salt & Pepper to taste . . Directions 1. Drain the Tofu well 2. Using a fork, break apart the tofu into course pieces resembling the size of chopped egg 3. Mix the Tofu with the rest of the ingredients 4.
