Have you tried Teochew-styled #bakkutteh肉骨茶 (BKT)? In Singapore, we are so used to the strong peppery taste in our BKT soup. However, the Teochew-styled BKT is the opposite of it. The clear broth cooked with pork ribs, garlic, spring onions and seaweed in a claypot almost does not have any peppery taste to it. But it is still savoury and in fact, makes you want to have more because it is not overwhelming. The pork ribs are tender too. The downside is there is no refill of soup since they cooked each order in a claypot. Some usual sides that patrons would add are #youtiao, #poachedvegetables and #steamfish. 🥗 Beet Arugula & Feta Salad 🥗 This salad, made with poached beets, is decidely 'more-ish'. Sweet. Sour. Salty. Crunchy. Mmmm. 3 medium red beets 1/3 cup apple cider vinegar 2 bsp toasted pumpkin seeds 2 cups baby arugula 3-4 tbsp crumbled feta cheese For the balsamic vinaigrette: 3 tbsp extra-virgin olive oil 1 tbsp balsamic vinegar 1 tsp maple syrup or honey 1 tsp Dijon mustard salt & pepper to taste To poach the beets: Mix 3 cups water with 1/3 cup apple cider vinegar in a pan. Add the beets and bring to a steady simmer. Cook, partially covered, until they are tender, 20-30 minutes. Remove the beets from the poaching liquid and cool. Peel the rough skin from the beets and slice and cut them into long, thin matchsticks. In a medium-sized serving bowl, combine the beets, arugula and pumpkin seeds. Drizzle in the dressing to lightly coat the salad. Sprinkle on the feta cheese, lightly toss and serve. Beetroots, more commonly known as beets, are a popular root vegetable and appear in many different cuisines from around the world. I grew up eating steamed beets, chopped up into chunks, as a side to my Indian meals. But now I do like exploring different ways of cooking and serving beets. This version is really quite lovely and fresh. I thought poaching beets in a vinegar-y solution was a great idea! And I wasn't disappointed. Although beets are fairly low in caolries, they pack a solid nutritional punch and are a good source of fiber, folate, manganese, potassium, iron and vitamin C. Known to improve gut health, keep blood pressure in check and enhance exercise performance, there's more than one reason to include this healthy vegetable in your diet.
