Memories from a delicious #markettotablerome cooking class last month with @rachelaliceroddy and @alice.adamscarosi focusing on the amazing artichoke. Peak season here in Rome, so if you're around here do try to have some. We fried, sauteed, braised them, and had some them raw in a salad. Some finished in one of the most delicious lasagne that I've ever had. The photos are on film, and as I was saying yesterday, "so effortlessly miraculous". I'm getting more and more attached my little, unpretentious film camera. Last shot, an honorary non-artichoke presence of a sunshine orange and lemon pudding, with me insisting people get some whipped cream on it for the benefit of the video. Such a fun day! So here’s a little more on the Bolognese Lasagna al Forno. Perhaps one of the tastiest things to ever come out of the kitchen here. Some of you lasagna lovers would be surprised, no doubt, to learn that it contains no ricotta, no mozzarella, no garlic, and no basil or oregano. While we love creating and adapting recipes here at Mossy Ledge Farm, sometimes it’s best not to tinker with a good thing. If you haven’t made it and are inclined to try, I would suggest two excellent sources for the recipe: #anatozofpasta by @rachelaliceroddy and the first #pastagrannies cookbook by @vickybennison (both of which see plenty of use here). I hosted a cooking class two weeks ago. A personal challenge, something new starting like... but what? And me, talking while doing, haha. Ok, let's try. The majority of time I don't have a clear idea of what I'm doing (going to do), planning menu's ahead is a torture of decision making, I just wanna see what's available and take it from there. But I needed a program somehow, for my own sake. My ultimate goal would be for everyone to bring their own veggies or ingredients or curiosities and freestyle our heart out. A test kitchen, together and inspiring one another, yelling suggestions and make it work. Fun. So besides a few basics that I love to use I hope I gave everyone a morning full of work and joy, planning and inspiration. By the end we had a beautiful table and I was tired, satisfied. I couldn't have asked for a sweeter group, thank you so much. I would love to do this again. We made butter, farinate, a flourless orange cake, mayo and meringue of acquafaba, roasted chickpeas and garlic because they're always tasty and handy to pimp a dish, a swirly brioche bread. Un weekend da ricordare! Grazie mille a Alice (@alice.adamscarosi) e Rachel (@rachelaliceroddy) per il corso di cucina. Abbiamo imparato la storia del cibo romano e come cucinare carciofi alla romana, puntarelle, pollo, orecchiette fatte a mano con broccoli romani, una crostata di pere, e molto più. Abbiamo mangiato molto bene e siamo felici di aver fatto il corso con Letteria Studio. Inglese: What a weekend to remember! I have been looking for this pic for such a long time. It was a very special class and this was the start of an epic farro and barley salad. It was so good, scented with all the herbs from the garden. I even made a fresh cheese( a sort of primosale) for the day. What joy. On Sunday @valentynaryan and I co-hosted a pop-up Georgian wine lunch here in Rome thanks to @alice.adamscarosi. We served pkhali, nigvziani badrijani, Lobio, imeritian khachapuri, adjaran khachapuri, Georgian salads, and our guests helped us make 3 kinds of Khinkali served with wines I chose. It was so nice to share a little taste of the cuisine and wine of a culture that is so near to my heart. Snaps from the very first Gluten Free Market Class on Wednesday, a happy collaboration between @pandali_roma , @jessicamccannonmicheli and me. We are planning to run this special edition class, in the Market to Table style, annually, and on request. We shopped for the best of us he season (eggplants, zucchini, tomatoes, peaches!) and cooked a super naturally without gluten lunch. The super @greenfieldlibby from Pandali made us the fluffiest chickpea and buckwheat flour focaccia which dimpled up a treat before baking and showering with rosemary and salt flakes. Jessica led gnocchi making and we turned to @rachelaliceroddy for a big tray of roasted toms subsequently mouley’ed into a beautiful basil and tomato sauce. There was a (non traditional) grilled eggplant and smoked provola ‘parmigiana’ and sparkly salads. To end white peach and mint sorbetto inspired by gelato wonders of @carla_tomasi. Thank you to the little group that came, to @jessicamccannonmicheli for sharing your wealth of food knowledge and Italian family stories and for being part of this, and to @annakovel who popped in to say hi and snapped some of these pics. It is hot, the middle of the busy season, I am already feeling semi frazzled. @gaia_lck is not only keeping the show on road, but has brought a slice of Piedmontese je ne sais quoi to the studio. Tagliolini, Tajarin in Piedmonte, traditionally rolled and cut by hand, but done with the pasta machine for efficiency at a very short timeframe lunch class we led together last Saturday. The seasonal lunch classes are very similar to market to table but just with me (from the trio) and my co-cook @gaia_lck. We try and schedule them in the M to T gaps. Happy times at yesterday’s #markettotablerome, with lots of new arrivals at the market (cherries!), smiling vendors (lots of time to chat on a Thursday) and the usual gurgle of cheerful banter as we cooked. Cin cin, and grazie to everyone who came along and made the day, we always have such a nice time. @rachelaliceroddy led ravioli rolling and crimping, and made her bomba crumbed anchovies. There were the maybe the last of the baby artichokes (unless @carla_tomasi still has them in her orto) which we double fried, vignarola and agretti and spring onion focaccia. Roman holiday day 3. Market to Table with @rachelaliceroddy and @alice.adamscarosi was packed with delights from choosing the produce to chatting with a fascinating crew while we prepared vegetables, made pasta and then drank wine and chatted about food, putting the world to rights over a splendid lunch. We cooked and feasted on focaccia, fried sage leaves and apple slices with pecorino, then artichoke pasta, lamb, fennel and potato bake, vignarola, agretti and folowed by the classic orange and almond cake from Claudia Roden with a dash of bay leaf liqueur to settle stomachs and speed us homewards. #markettotablerome #rachelroddy #latteriastudio

It’s been such a joy to bake and teach in the kitchen at #latteriastudio a few times already this year, but next Saturday, April 1, things are taken up a notch as I have the privilege of teaching a class with the woman herself, @alice.adamscarosi Together we will take you through, from start to finish, of an Easter favourite from our home country, Hot Cross Buns! You’ll also be treated to one of my families favourites, a Greek filo and cheese pie, whose recipe has been passed down from my great aunt. •GIVEAWAY•Seasonal lunch class• I started doing small group seasonal classes back at the old studio, as a way of filling the gaps in the calendar between #marketotable. They follow much the same structure as MtoT, we start at the market, we cruise the stalls to select our ingredients, we trundle back over the circonvallazione Gianicolense to the studio and start cooking. Being a group class each one is a lovely gathering of curious cooks, some visitors to Rome, others people living here, busy around the kitchen table prepping the best of the season for lunch, which is always relaxed and convivial. The classes for the first half of 2023 are listed on my website - link in profile - and I will add others as the year proceeds and on request. Today I am running a little PROMOTION where I am giving away two spots to a Seasonal Lunch Class that can be used at any of the classes held in 2023 and 2024. So two winners, one free spot each. Before I signed the lease I took a plate and a glass and knocked on the door of the architects that were the actual tenants. I asked if I could take some photos in various points about the room, just to see how the light fell. The space was actually much smaller than what I was looking for, but I liked the street, the courtyard in front as a herb garden, and the light slanting in from the low villa across the road. It’s peak citrus season, and the sun is bright again in the Roman sky and very slowly, the chill of the last weeks is subsiding into what is undoubtedly the beginning of spring. Orange and fennel salad. It’s an Italian classic (with roots in Sicily), yet I’ve come love the versions with a twist much better (for example, no black olives for me, thank you very much). Yesterday @alice.adamscarosi made one such salad, properly seasoned, with thinly sliced fennels and shallots first rested in vinegar, with the addition of those pretty leaves that I'm so fond of; a lovechild of radicchio and lettuce — I believe. I had been following Alice around as she shopped for fresh produce, bread and fish in the surprisingly charming San Giovanni di Dio market in Monte Verde Nuovo. It’s very close to Latteria studio. This morning I had one of the most formative and memorable “breakfasts” ever. A Sunday morning in the sunny and cozy #latteriastudio owned by @alice.adamscarosi, in the company of @nadiaspilio 's skilful hands and the smiling and engaging @femke_maas. People from all over the world, dishes of all shapes and forms, colours of different intensities, and even fragrances, flavours, without any prejudice, united only by curiosity, experience... but above all by hunger. All this is making me a better person.

Cooking with friends in the sunny and cozy studio #latteriastudio owned by @alice.adamscarosi equipped with all props of any type and color you can imagine, was the greatest gift for a sunday lunch on my birthday. I will never stop thanking @femke_maas for her enthusiasm and her smiles .We are sharing this great passion for cooking and without her all this would not have been possible. We did everything together starting from night time baking, to visiting my favorite market in the early morning in order to create the menu “market to table” like @alice.adamscarosi famous cooking class. We also made from scratch one of my favorite childhood desserts “pastarelle della domenica” but a special edition 🦢with the precious help of @mariachiara80. Apple cinnamon scrolls again, this time as a test bake for some upcoming classes I’m running at the lovely studio/kitchen of @alice.adamscarosi in Monteverde. Breakfast Bakes classes will be running Saturday February 4 and Sunday February 12. Classes will run for a duration of 3 hours and will cover all stages of production, (dough, filling and baking), as well as a few tips and tricks of the trade. Do you recall this big old girl? This is the old faithful stove that was in residence at #latteriastudio for quite few years. Focacce, maritozzi, connamon buns, lasagne flatbreads, cakes, crostate, cookies...she has seen it all. Yesterday it was scrubbed and polished, early on was fired and 100% fine. Isn't she beautiful? When the market gives you plums, then a chocolate, walnut and plum cake it is. Thanks to the delightful gals who came and cooked with me today, @mummatrad and Rebecca, @harmonyspark.finejewels and @itsbilllss. This was a flourless chocolate cake with walnuts instead of almonds, with damson plums pushed into it, baking into a jammy, nutty, chocolatey delight. But first ..St Peter's church took approx 150 years to get to the finishing line ( obvs my very knowledgeable pal @understandingrome can give you more details in her fab tours..) and so something that takes a loooong time to see the light ( like my home based cooking classes) will be always compared to it and say 'ma che e' la fabbrica di San Pietro?' I do not have Michelangelo supervising but A is doing an amazing job.👏👏👏 There is still so much to do and quite a lot of stuff to take care of( oh I so miss the easy days of #latteriastudio) but hey there is a garden where to pick the freshest veg for the lessons! It is a win👩‍🌾 The kitchen will be ready on Monday the 17th October, few days to road test everything, and I have scheduled the first ever class.. Saturday 22nd October Autumn bounty from the garden ( let's call it a soft opening) There will be treats on arrival( as x usual so have a light breakfast) We'll make Pizzelle fritte ( thank you @rachelaliceroddy for the reminder) We'll get stuff from the garden.. leeks, Cavolo nero, broccoli, Swiss chard, fennel, winter salads .. Orecchiette for broccoli .. Saved home grown potatoes and borlotti from the summer.. ...and to round up an easy day we can bake a crostata with a delicious compote made with Polish blueberries and apples ( thank you for the crostate inspo to @alice.adamscarosi ) Lesson will start at 10.30 am but it would be nice to gather at 10.00 and have a bit of a chat. You probably all know by now that I do not live in the center of Rome ( not with the size of my garden..) however I am 6 stops away from the train station in front of the white Pyramid in Ostiense district. Almost Autumn - WHAT’S ON While my plan for a dedicated teaching & events space close to the current studio is being realized (who knows how long it might actually take) in the meantime - thanks to special requests and general enthusiasm for the late summer slash early autumn produce tumbling off market stalls - I have decided to run a few small classes. Agendas out, note these dates: ⁃ Friday 16 September, small group seasonal lunch class with me. Culinary baggage. Long before #latteriastudio and #markettotablerome I had an idea for a series of cooking lessons called #cookinginenglish. I was transitioning away from teaching and looking for ways back into food, and had Roman friends keen to improve their English in the kitchen. For the first lesson, in a cool but cost prohibitive space, we made Spanakopita triangles and chocolate and almond cakes, while hot cross buns baked in the oven. It felt completely natural to me, despite having no Greek blood, to be cooking dishes that for me were from Melbourne, as well as from their country of origin. Social media wasn’t really a thing in 2008, much less the idea of cultural-culinary appropriation, and I had no idea where the Spanakopita recipe I used had come from (but I did know that my bought Filo pastry was the cheats version, and that real Filo was hand rolled with a long rolling pin). In any case I was so proud of the multicultural Melbourne foodscape, that Spanakopita (and Babaganoush and San Choy Bau) felt as much part of my recipe suitcase as meat pies. I have memories of an aunt upending bags of small frozen spinach and cheese triangles onto oven trays to be baked for parties, big triangles on deli counters and the generous slices at The Galleon cafe where @willowlane and I used to lunch. Recently though, for no apparent reason, I have been thinking about the triangle shape and whether the big Maltese community in Melbourne was part of the profusion of the shape. So please, cooks with Greek and Maltese heritage - help me out with this one! Does the triangle, as opposed to the spiral or the tray pan, belong to one culture more than another? Awaiting your stories @juliaostro @meni.valle @konkarapanagiotidis and others. Also, feelings on whether certain recipes can belong to a city or place rather than just a cultural group? And the rabbit hole of filo pastry and strudel pastry for you @italyonmymind. My friend is still thanking me for the introduction to Spanakopita, and I am still making it, here with chard. Instagram is like a shop window, a kind of ‘vetrina’ in which you carefully lay out your wares for the world to see. In my window display there are recipes, travel pieces, and info about #latteriastudio. For me Instagram is work. It is a space in which connections are made and information is shared. A huge number of you arrived via collaborations with other cooks, writers and photographers, a list to long to mention here, but you know who you are, and I thank you for your spirit of ‘condivisione’. For those of you who are newcomers, here is a little bit about what I do. Melbourne born, Rome dweller since 2005, fifty two trips around the sun. I spent most of my early years in catering, fell into food styling, but really prefer to think of myself as a cook with a good collection of plates. I love to write. I work as a freelance cook, food stylist and food producer. I have been lucky to have worked on lots of cookbook and film projects, as a cook, as a stylist, and as what gets called a food producer, the person that runs around bringing together all the elements - ingredients, equipment, plates and people - that make cooking for film and photography happen. At the moment I am writing content for a German cookbook project. Latteria studio is both my office, my storage, my test kitchen and a workspace that I rent out to film crews, cooks and photographers. With the space comes a collection of crockery and cutlery, old linens, ceramics old and new, treasures collected over years, cleaned, carted around, you get the drift. When you collaborate with me, you also have access to my knowledge: markets, ingredients, local food stores and regional recipes. I share generously. I include quite a bit of travel content here. My Italy is an everyman’s Italy; there are no aspirational hotels or flashy boats. I do love places that are beautiful, and carefully designed, but I also appreciate really simple old style hotels, affordable price points and sustainable travel. • If you like my content please tag a friend who might like it too! • Market to Table and cooking classes will be back, I promise.
