Fresh bagels🥯…serve alongside your favorite mug of coffee to start your Sunday the right way! ⁡ ◻️Ingredient ーfor five bagels ・300g bread flour ・2tsp instant dry yeast ・20g sugar ・1/2tsp salt ・180cc warm water (about 40°c) ・3tbsp sugar ⁡ ♡In the bowl put flour, yeast, sugar and salt. Add water and mix to combine everything is cohesive and coarse.Knead the dough well on the worksurface for 10 minutes. ⁡ ♡Shape 5 balls and put them Cover with a food wrap and let stand at room temperature for 5 minutes. ⁡ ♡Make a bagel shape.Cut the parchment slightly larger than the bagels and place each bagel on it. Cover to leave for 5 minutes. ⁡ ♡ Add 3 tablespoons of sugar in a deep frying pan and cook over low heat until sugar is melted and golden brown. Pour 3-4 cups of hot water to dissolve. * ↓ Bring to a boil, drop bagels and boil 1 minute on each side. Butter Ciabatta Happy Sunday Everyone! Skip the hassle of kneading dough and make this simple Ciabatta instead ! ! ⁡ The crispy crust and chewy,airy crumb -Ciabatta is perfect not only for paninis, but also for spreading seasonal fresh jams, honey and cream cheese🤗 ⁡ ◽️Ingredients -for six buns 400g bread flour 3g dry yeast 10g salt🧂 13g Melted unsalted butter🧈 300cc cold water cornmeal or cornflour (for sprinkle flour) ◻️Directions ♡Place all ingredients in a bowl and mix until everything is cohesive and coarse. Once the dough is moistened, combine it into one, cover and leave in the fridge for 2 hours. ♡ Fold the dough about 10 times. Cover and leave in the fridge overnight (10 hours). ♡ Fold the dough again 10 times, place into a rectangular food container, cover and refrigerate for 3 hours. ♡ Sprinkle cornflour on a work surface and flip the food container upside down, dropping the dough onto the floured surface. This Cramik also contains a homemade candied orange and topped with pearl sugar. Fluffy and flavorful, but not heavy!ーso, it is usually sliced and eaten with butter or jam. I love it with plenty of cream cheese and honey! 🍯 Enjoy this beautiful Sunday, my friends! Ingredients -for two breads ▫️For the bread starter ・6g dry yeast ・1tsp sugar ・50cc milk*Bring to a boil and cool to 40°c🥛 ▫️For the dough ・350g bread flour ・4g (almost 2/3tsp) salt🧂 ・2tbsp sugar ・160cc egg mixture🥚🥛 {1 egg yolk・1/2egg・about 110cc milk *Bring to a boil and cool} ・70g unsalted butter🧈 ・70g raisins soaked in old whiskey or rum ・70g orange peel🍊 ◻️Directions ♡Bread starter ingredients mix with a stick and leave for 5minutes. ♡Bread flour, salt ,sugar in a bowl, add bread starter and egg mixture, mix until everything is cohesive and coarse. ♡ Knead for 10 minutes, add the butter and knead for another 5 minutes. Add raisins , orange peel and mix gently . Let dough rise for at least 1 hour or until doubled in size. ♡ Degas the dough and cut it into 2 pieces. Shape into balls, place on a baking sheet for 20 minutes. ♡ Degas the dough and shape into balls again. Let stand at room temperature for 30〜40 minutes. ♡Brush lightly with egg and scoring around the bread with a knife or razor. Sprinkle with pale sugar as you like. This year's Pască, crowned with a 5 strand braid. I struggled a bit with the braid, but it turned out beautiful regardless of the difficulty. I only ate a teeny tiny slice, and that's about it!💛

Topped with a refreshing and creamy mascarpone cream cheese frosting, it's irresistibly delicious ♡ Happiest of Fridays to you all, my dear friends! ◻️INGREDIENTS for Ø 16 cake pan 130 g butter, room temperature 100 g sugar 25g Muscovado sugar or Okinawan black sugar 2eggs, room temperature ▫️☆Filling ・150g grated carrot ・2tbsp sultanas ・1tbsp chopped orange peel confit ・1/2cup chopped walnuts ・2tbsp walnuts flour ⁡ ▫️Dry ingredients 110g cakeで flour 5g baking pouder 1 tbsp mixed spice ⁡ ▫️ Mascarpone Cream Cheese Frosting 130g cream cheese (room temperature) 60g sugar 80g mascarpone (room temperature) ▫️Spice (Use 1 tbsp of it) ・2 tsp anise seeds ・7〜8whole cardamom ・1 /2tsp allspice・1 cinnamon stick or 2tsp cinnamon pouder ・1 whole clove ・1 /2tsp nutmeg・1/2 ginger・1 tsp lemon zest ・1tsp orange zest opt 1 tsp coriander 1 /2tsp fennel seeds ☆Whole and seed spices grind them with grinders ⁡ ◻️ INSTRUCTIONS ♡Cream butter and sugar in a bowl with electric mixer until light and fluffy; beat in eggs one at a time, beat until combined, stir in ☆filling then sifted dry ingredients. ⁡ ♡Spread into prepared pan. Gâteau Basque ⁡This traditional almond cake comes from the Basque Country in southwestern France. The outside is flaky and slightly crumbly, but the almond cream inside is creamier than you'd imagine, lightly sweet and decadent ! My favorite is the one topped with a little caramel cream, which I highly recommend♡ The recipe for pastry cream with almond is in the comments section. ◻️Ingredients for 16cm cake pan ・100g soft unsalted butter ・130g powdered sugar ・40g egg 🥚 ・15g egg yolk ・190g cake flour • 2g salt ◻️Directions ♡ In the large bowl, beat butter and sugar with an electric mixer until creamy and light. Add egg ,egg yolk and beat again. ♡Add dry ingredients and mix with rubber spatula until combined. ♡ Put the batter into a piping bag fitted with a 1 cm diameter nozzle and squeeze it out in a spiral pattern from the centre of the cake pan outwards. ♡ Squeeze three layers into the outermost part of the cake pan . ♡ Put the pastry cream into a piping bag and squeeze it into the centre of the cake pan. Finally, squeeze the batter onto the top and egg wash. ♡ Preheat oven to 220°c . Drop the temperature to 200°c bake it for 25minutes and continue baking at 180°c for another 20〜25 minutes. ♡ Once cooled, you can sprinkle with powdered sugar as you like . This year, I wanted to try fermenting wild garlic buds in brine. I liked the ones in vinegar, but for some reason, I enjoy more the salty fermented everything. Maybe it has something to do with the fact that in my childhood in our household the vegetables were fermented more in brine than vinegar and maybe I prefer them because their taste takes me home everytime. Anyway, my dream got postponed because all the forest roads I take while biking, and were all the wild garlic grows... wild, are getting upgraded and widened and almost all the ramsons lie under piles of soil. 🥲 Next year ist the lucky one for sure! 🍀

Canelé aka Cannelé de Bordeaux 🇫🇷 Gorgeous French pastry made from only pantry staple ingredients is here!Deeply caramelized and crispy exterior, custardy center🥰 This is a one-bowl, no-fuss to make treat : Simply mix, leave it overnight, and bake in the oven. And decadent, absolutely delicious♡ I hope your day is full of love💖 ◻️Ingredients 〜for 10 canelés 100 g plain flour 250 g powdered sugar 500cc milk 1 vanilla bean 2 eggs 2 egg yolks 4 tsp rum 50g unsalted butter Unsalted butter (for mold) ◻️Directions ♡ Scrape the seeds from the vanilla bean and add both the seeds to a saucepan. Pour the milk and bring up to about 85°C. ♡ Beat the eggs in a bowl and gradually pour in the hot milk with vanilla , stirring until combined. ♡ Add the sifted flour and powdered sugar and mix quickly. Add the melted butter and rum and whisk until smooth. Cover and refrigerate overnight. ♡ Preheat oven to 230°c. Bring batter to room temperature. Extra butter the molds and fill the molds with batter to 1 cm from the top. ♡ Drop the temperature to 220°c bake them for 20 minutes and continue baking at 180°c for another 40 minutes. I missed having friends over, especially those excited to pose in front of the camera. We spent the Easter holiday together with lovely people, we cooked, we baked, we played, and even went on a short road trip.  Before they arrived I promised myself I wouldn't do much, but I ended up baking as usual. Besides the soups I cooked for us and the Nettle sourdough I also baked another delicious goodie from @cannellevanille book #cannelleetvanillebakessimple, the Orange flower water and saffron cake. I went a bit wild and topped it with whipped cream and berry & dates jam. I dare say that everyone loved it. 🥰

Romantic Blood Orange Ricotta Rose Cake to celebrate Easter and welcome spring ‼︎  Light,fluffy,moist and bursting with blood orange flavor! Perfect for breakfast, brunch or a fun dessert♡ Frohe Ostern!🐰 Ingredients •220g cake flour • 2tsp baking powder •1/4tsp salt • 50g ricotta • 70cc whole milk • 2tbsp fresh blood orange juice •140g unsalted butter, at room temperature •130g sugar •1 eag •1 egg yolk ・1tbsp zest of blood orange ▫️ creamcheese frosting ・1 cup powder sugar ・ 20g cream cheese ・2〜3tbsp blood orange juice as needed Mix all together. ♡Put the butter in a bowl and beat until fluffy. Add sugar and eggs in order and whisk each time until fluffy. ♡Add ricotta and mix well and add blood orange juice ,zest of blood orange mix well to smooth . ♡ Sift flour, baking powder and salt together and add 1/3 amount to the bowl and using a rubber spatula gently fold. Add 1/2 milk and mix, then add 1/3 flour and gently fold.Repeat alternately Finally stirring just until combined. ♡ Evenly distribute the batter into prepared small rose cake pan or muffin tin. Two days ago I baked some of our traditional mucenici, sweet brioche buns with honey and walnuts for Mr. and I couldn't stop myself to not eat some, too. I keep telling myself that there is no harm in eating a couple once a year.😬 Anyways, I have adapted my mum's babka recipe and made 20 super fluffy and delicious mucenici. We usually bake them on the 9th of March but who says one can't make them whenever one craves something warm and sweet Trust me, you will not regret making these! Hey, it's me!  I have finally found the strength to share this image with you, summing up the activities I dwelt in the months I was away from this space. It hasn't been a nice time overall. It had more downs than ups, but I kept looking forward to the ups and took little steps in that direction. It was painful and it got extremely lonely but I am very pleased that it's almost over.  Now I am standing smiling on the other side, and the direction I am heading is becoming more and more clear. There's a long road ahead, and no matter if I am stumbling or not, I keep on walking.  I would like to thank those who reached out to me while I wasn't around. Your thoughts filled my heart with joy and gave me strength. 💛 This is what hope looked like to me in the last months: many cups of matcha, studying watercolors + a couple of other activities I wasn't able to showcase here like knitting, reading, needle felting, and the one that always fires up my spirits: planning the garden. 👩‍🌾🌱 My dear @storyonaplate_kristinasmodila, thank you kindly for your lovely gift. When the morning begins with fresh homemade crusty bread generously spread with butter... Bread is the head of everything, as the Russian proverb goes, which means it is the most important product on any table. Probably, what is really very simple and at the same time incredibly tasty is freshly baked bread 🍞❤️This is my first experience in making homemade sourdough bread. Its formation and design brings so much joy and grace. ~~~~~~~~~~~~~~~~~~~~~~~~~~ Когда утро начинается со свежего домашнего хрустящего хлеба щедро намазанным сливочным маслом… Хлеб - всему голова, так звучит русская пословица, что значит это самый важный продукт на любом столе. Наверно, то что действительно очень просто и одновременно невероятно вкусно это свежеиспеченный хлеб 🍞❤️Это мой первый опыт в приготовлении домашнего хлеба на закваске. Его формирование и оформление приносит такую большую радость и благодать. Dýňový cheesecake 🎃 Dlouho jsem žádný recept nepřidala..a není to tím, že nevařím a nevymýšlím nové recepty, ale focení jídla je velkým časožroutem. A můj velký časožrout je malá🐒, která se mnou vaří každý den. A jelikož je ještě sezóna dýní, doporučuji tenhle cheesecake všema deseti:👌 Korpus: •160g Lotus sušenek🍪 •60g kešu •špetka soli🧂 Rozmixujeme a přidáme 60g změklého másla, spojíme a vtlačíme do formy.🥧 ———— Krém: •250g riccoty🥛 •250g mascarpone •100g třtinového cukru •4 vejce🥚 •kůra a šťáva z citronu🍋 •vanilka •250g dýňového pyré vyrestovaného na másle a důkladně rozmixovaného🎃 ———— Vše vyšleháme do krému. Darf ich vorstellen? Die wohl schokoladigsten Schokokekse weit und breit. Fursecuri din făină de cocos Pentru cei cu intoleranța la gluten, aceste fursecuri fragede sunt perfecte. Faina de cocos este un tip special de faina fara gluten, cu gust dulceag si textura aerata. Iar fiind o aveam de ceva timp prin dulap, i-am gasit o întrebuințare in această reteta. Pentru 14 bucăți, am folosit: 🔺100 g unt la temperatura camerei 🔺90 g faina de cocos 🔺3 linguri miere 🔺vanilie sau coajă rasă de lămâie netratata (pentru aroma) 🔺un praf de sare Mixam untul cu mierea, vanilia/coaja de lamaie si sarea timp de 2 minute. Adaugam treptat din faina de cocos. Cand se îngroașă compoziția, inlocuim mixerul cu o spatula. Va rezulta un aluat lipicios - il punem apoi la frigider/congelator pana se întărește putin. Formam bile din aluat si le aplatizăm cu un pahar. Le coacem la cuptorul preîncălzit la 170 grade pentru 12-14 minute. hi. I haven’t been good about showing my face around here. I haven’t really been good at showing up at all, lately. Multiple big life changes in a row put me in a position where creating & sharing felt more like a burden than an outlet. And while many of those big life changes have been positive, I’m someone who takes a while to process things, & I found myself wanting to draw inward, live more fully in each passing moment rather than feel the urge or pressure to share it externally. But here I am, slowly coming back to this little cozy corner of the internet I’ve been building, feeling a bit more ready to pour a little more of myself into it again, ready to engage & connect & create in a way that feels fulfilling. So since you’ll be seeing more of me, I figured it might be a good time to re-introduce myself. So, hi, I’m Carly. Roughly 3 years ago Fredericka’s Bakery was born from a simple love of baking, a desire to live more simply akin to the way I was raised, & a love of all creative endeavors. I wanted to explore photography in a way I hadn’t before, & found baking bread especially to be one of the more rewarding projects I’d started - the two somehow worked together. Over the years, Fredericka’s Bakery as a brand has evolved as I have as a person. Beyond bread, we’re over here caring for chickens, growing vegetables, raising a baby, & more recently, acquiring nearly 19 acres of wooded land to start homesteading more seriously. Baking, especially bread, has always been at the heart of it all for me, & will stay that way. While my dreams of opening a brick & mortar bakery or even popping up at my local farmer’s market seem far off in the distance, I know showing up here & now, even in a small capacity, is meaningful. When the sunset meets the figs.. We had friends over on saturday and I knew what I wanted to treat ourselves with, a couple of days before we met: figs, goat cheese and mixed nuts, some honey was involved too, of course. It was delicious and it gave me a feeling of coziness besides the fact that it reminded me why I should slowly open the door and welcome Miss Autumn. Baked fruits bring me so much joy!

I was wondering why my zucchinis were not as abundant as in the previous years... well, maybe because I kept taking their blossoms away 🤣 not all, of course, but just enough to tame my cravings. As soon as they start growing, all I dream of is zucchini blossoms in and on everything on my plate.
