Here's a little shout out to the neglected item on our weekend menu. We got 3 lamb shoulders from The Meat Room and they were so small we had to order 3 more to cover us for service both nights. Disappointed... until we cooked them. Amazing! Delicate flavour, and so very tender. We're serving pieces of it pulled off the bone and nestled on a mushroom and pearl barley risotto. Our whey-fed pork shoulder roasted with kosher salt and fennel seeds has become this magnificent dish. Served on some black-eyed and butter beans braised with smoked paprika, garlic and tomato, we added Fresh spinach from Pete Reinders' garden. The pea sprouts are an extra touch of sweetness. Such delicious local goodness. And that crackling... The whey-fed pork that came from The Meat Room this morning is in the oven. It's fabulous meat - we can't wait to taste it. We've roasted the meaty part of the shoulder with kosher salt and fennel seeds. When it's done, we'll pull it off the bone and serve it on some smokey, braised Mexican-style beans. I've got spinach from Pete Reinders for color and crunch, but the real crunch will come from the piece of crackling on top of each portion. Once I've browned the lamb for this evening's main meal, the pan is deglazed with lots of brandy. The lamb goes into a roasting dish on a trivet of carrots, leeks and garlic ready to roast. Salt, pepper and mustard are rubbed on, then I pour flaming brandy and pan juice over. The dish is covered in tin foil before it goes into a slow oven to cook until meltingly tender. A quick snap of my absolute favourite cake. It has served us well in each of our restaurants, from The Table at De Meye to Camilla's Kitchen. This apple cake works on a number of levels. It is moist and light and incredibly comforting in a nostalgic 'apple pudding' kind of way. You can serve it with ice cream, custard or cream - or even just plain. The cake lasts too. You can happily serve it for 3 days. It actually gets a nice gooeyness to it by day 3. So not only is it economical in terms of ingredient, it has a useful shelf life. My best is that it's easy to make and packed with fruit. You can even substitute pears for the apples. It's one of the options for dessert tonight. I'm making custard to go with it so it's even more comforting on a cold Karoo night.

Taught this recipe in the class this morning. It's one of my favourite breads. I learned it from my mom. It's very simple. I think in America it's called a 'wooden spoon bread' because you put all the ingredients in a bowl, mix with a spoon and bake. Actually, I use my hands to mix it. That way all the dry and wet ingredients are thoroughly combined. Once mixed, you pop it in a loaf tin, let it rise and then bake. It's a lovely, nutty bread that makes great sandwiches and toasts perfectly the next morning. We're serving it with the carrot soup starter at Camilla's Kitchen this weekend.

Teaching a cooking class in the kitchen of African Relish. Was nervous as hell to start off and forgot to put salt in my bread. Anyway, I settled in and made another loaf, so it's all fine. Really enjoying myself. I love working in this kitchen. It's so well equipped and the light in here is gorgeous. Really nice group of people. Lots of fun.

So Russ is busy shooting images in the CK kitchen today. He's working on a new blog section for our website. Lya and I are making a citrus pudding out of my mom's cookbook The Farm Kitchen. It's delicious. Zesty, fresh and perfect after a dish like braised Karoo lamb knuckle. Funny shooting this recipe with Russ today - he shot it with my mom 12 or more years ago. Another unbelievable basket of produce from Pete and Megan Reinders. Russ was in their garden this morning with Amelia. The bokh choi we were going to serve with the braised lamb knuckle tonight never made it to the basket. A flock of little Bulbuls savaged the leaves early this morning. (Life is brutal and unpredictable out here in the desert.) Plan B is this basket of verdant spinach and two beautiful Savoy cabbages. That'll do nicely thanks. Just can't beat that garden.

Aubergines galore from @papadocpete the prolific kitchen gardener of our little town. These are two of the more unusual varieties. The little white ones are From Thailand, while the red ones (yes they're aubergines) originated in Abyssinia. They're going - along with at least 5 other strains of eggplant - into the ratatouille for tonight @camillaskitchenpa

Today's harvest of little heirloom tomatoes from @pappadocpete waiting to be transformed into a sambal. It's curry night @camillaskitchen (it being Friday). Beef curry is on the cards for the lucky few who can snag a table. Starter is samoosas in a feather-light puri pastry. For dessert it's a chocolate assassin - dense chocolate cake with chocolate ice cream, both made with dark Belgian chocolate. The only relief from the chocolateness of the whole affair is a sharp little berry coulis.

Beef pie tonight. Camilla got some lovely, meaty beef shin from the butcher. She made an osso buco last week with it, and it was so good, she ordered more. This week it's come in and she's doing a rich beef and onion braise with red wine, and putting it in a pie. The option for those suffering from vegetarianism is potato pie. Mm mm mmmm!

Ok. Wait for it. The chef has just come bursting out of that girl with the bob at Camilla's Kitchen. Dinner tonight: A slaw with Chinese cabbage, sweetheart cabbage, green apple and julienne mange tout. The dressing is made with avo, yoghurt, honey and her homemade onion and rosemary vinegar. Caramelised sweet potatoes brushed with honey and ginger. Free range chicken breast marinated in sriracha, soy and oyster sauce, then pan-fried and sliced over the slaw. Topped with a little extra avo dressing from the salad and some pan juices. Lastly, there's a sprinkle of powder made from pumpkin seed praline that she's crushed thoroughly. And I haven't even begun to describe the coconut cake and roast fig ice cream dessert...
