Basic Awesome Vegetarian Lasagna 👇👇👇<br />Ingredients:✍<br />9 lasagna noodles<br />2 tablespoons olive oil<br />1 onion, diced<br />3 cloves garlic, minced<br />1 zucchini, diced<br />1 bell pepper, diced<br />1 cup sliced mushrooms<br />2 cups spinach<br />1 can (15 ounces) crushed tomatoes<br />1 can (6 ounces) tomato paste<br />1 teaspoon dried oregano<br />1 teaspoon dried basil<br />Salt and pepper to taste<br />2 cups ricotta cheese<br />1 egg<br />1/4 cup grated Parmesan cheese<br />3 cups shredded mozzarella cheese<br />Directions:<br /><br />Preheat oven to 375°F (190°C).<br />Cook the lasagna noodles according to package instructions. Drain and set aside.<br />In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.<br />Add zucchini, bell pepper, mushrooms, and spinach. Cook until vegetables are tender.<br />Stir in crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for 10 minutes.<br />In a bowl, mix ricotta cheese, egg, and Parmesan cheese.<br />Spread a thin layer of the vegetable-tomato sauce in the bottom of a 9x13-inch baking dish.<br />Arrange 3 lasagna noodles on top of the sauce. Spread half of the ricotta mixture over the noodles.<br />Sprinkle with 1 cup of mozzarella cheese. Repeat layers, ending with the remaining mozzarella cheese on top.<br />Cover with foil and bake for 25 minutes.
