Early backyard foraging. The wild prickly ash (aka same family of plants as Szechuan peppercorn) trees in my dad's backyard have new growths and are starting to fruit! The "berries" are mostly green and have a very strong citrusey/floral aroma especially when you rub them berween your fingers (i gathered some in the fall a couple years back when I was trying to find out what they are - see previous post ). Gonna do some experimenting! The new leaves called kinome of the japanese variety (plant is called sansho in japanese) are often used as garnish in kiseki cuisine. And of course Szechuan peppercorns are the defining flav of Szechuan cuisine.I'm not sure if anyone is really using prickly ash in any cuisine yet tho so gonna do more research (only really found one resource so far) I recently learned that Szechuan peppercorns are *aparently* a type of very small citrus that has no fleshy juicy part - basically just skin around a single seed. *last pic is of young crabapples #ontarioforaging #wildszechuanpeppercorn #sansho #pricklyash #szechuanpeppercorn
