Happy Mother's Day! Here's a little recipe to make something amazing for the awesome mumma figures in your life: Paleo Chocolate Pancakes with Honey and Hazelnuts 🥞🍫🍯 Ingredients: ¾ cup plus 2 tablespoons ground hazelnuts 2 tablespoons raw cacao or unsweetened cocoa powder 1½ tbsp coconut flour 2 tsp baking powder pinch of salt ½ cup almond milk 3 eggs 2 tbsp Creamed Clover Honey ½ teaspoon pure vanilla extract ½ teaspoon coconut oil for greasing the pan For serving: #TaylorPass #CreamedClover #Honey Chopped hazelnuts In a medium bowl, whisk the eggs, almond milk, honey, and vanilla extract. In a larger bowl, combine the hazelnuts, raw cocoa, coconut flour, baking powder, and a pinch of salt. Add the wet mixture to the dry ingredients and mix until fully combined. Heat a large nonstick pan over medium heat and grease it with coconut oil. Ladle 2 tablespoons of the batter for each pancake. Cook until the surface of the pancakes has some bubbles and the sides of the pancakes firm up (about 2-3 minutes). Carefully flip the pancakes with a thin spatula, and cook the underside for another 45 seconds. Drizzle with Creamed Clover Honey, sprinkle with chopped hazelnuts, and serve immediately. This quick and easy recipe is perfect for a 'Big Breakfast', or a 'Scrumptious Side' on the BBQ. 🍅 𝕆𝕝𝕚𝕧𝕖 𝕆𝕚𝕝 𝕒𝕟𝕕 𝔹𝕒𝕝𝕤𝕒𝕞𝕚𝕔 𝕋𝕠𝕞𝕒𝕥𝕠𝕤 𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨 2 medium sized Truss Tomatos 1 Tablespoon Lupi Balsamic Vinegar 1 Tablespoon Lupi Extra Virgin Olive Oil Salt and Pepper to taste 𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨 • Set your oven to 190°C or heat up the BBQ. Cut the tomatoes in half horizontally and place them on a baking tray or oven proof dish. Drizzle the balsamic vinegar and olive oil into the open part of the tomatoes and give a generous grind of salt and pepper on top. The best granola in the southern hemisphere has to be our #TaylorPassHoney Luxe #Granola ! 🍯😋 2 cups whole oats 1 ½ cups nuts and seeds (pistachios, almonds, sunflower seeds, sesame seeds) 2 tablespoons coconut oil 2 tablespoons Taylor Pass creamed clover honey 1 teaspoon vanilla extract 1 teaspoon ground cinnamon ½ cup coconut flakes 1/3 cup dark chocolate chips (optional) ¾ cup freeze - dried fruit (blueberries, raspberries, feijoa wedges) 12 slices dried kiwifruit – Cut into strips. Melt the coconut oil, honey, vanilla and cinnamon together. Pour over the oats, nuts and seeds. Toss until evenly coated. Spread out on a lined baking tray. Bake for 20 minutes at 150 degrees Celsius tossing once during cooking. Allow to cool completely before adding the coconut chips, freeze-dried fruit and chocolate chips. This delicious recipe featuring 𝔸𝕫𝕒𝕝𝕖𝕒 𝔾𝕣𝕒𝕡𝕖𝕤𝕖𝕖𝕕 𝕆𝕚𝕝 is perfect as a starter, side dish - or (my favourite) a scrumptious and easy meal for 2! 🥰☀️ ℂ𝕣𝕚𝕤𝕡𝕪 ℝ𝕒𝕧𝕚𝕠𝕝𝕚 𝕊𝕒𝕝𝕒𝕕 𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨 12 pieces fresh ravioli (available from refrigerated pasta section of supermarkets) 1 cup plain flour 1 egg, whisked with a splash of water 1 cup panko breadcrumbs Azalea Grapeseed Oil, to fry 1 baby Cos lettuce, leaves separated 8 leaves Tuscan kale, stem removed, leaves roughly torn ½ punnet cherry tomatoes 1 red endive, leaves separated 3 radishes, halved 𝘿𝙧𝙚𝙨𝙨𝙞𝙣𝙜 60ml Azalea Grapeseed Oil 60ml white wine vinegar 2 tsp caster sugar Sea salt and freshly cracked black pepper 𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨 • Whisk together dressing ingredients. • Dust ravioli in flour to coat, dip into egg wash and then press both sides into breadcrumbs to evenly coat. • Heat 3cm oil in a frypan over medium-high heat. Fry crumbed ravioli, in batches, until golden. Drain on paper towel. • Combine salad ingredients (except ravioli) in a large bowl, dress with a few tablespoons of dressing, tossing to coat. Thai Red Curry 🍛 🍴 by @inthemoodforallthingsfood Super easy to whip up this full of flavour dish any night of the week with my little twist. 🌶️ You will need... Serves 4-6 FOR THE CHICKEN 6 Boneless and Skinless Chicken Thighs 2 Tbsp Red Curry Paste FOR THE CURRY 2 Tsp Minced Garlic 2 Tsp Crushed Ginger 3 Tbsp Red Curry Paste 600ml Coconut Milk (1 1/2 Cans) 200g Frozen Green Beans defrosted 250g Frozen Pumpkin defrosted 2 Tbsp Fish Sauce 2 Tsp Sugar 1 Tbsp #JustFreshCo Lime Juice Oil METHOD: -Cut your chicken thighs into chunks and place in a bowl. Add the 2 Tosp of curry paste and mix till well coated. Cover and set aside in the fridge to marinate for at least 30mins. -Add some oil to a deep dish pan or pot. Fry off chicken in batches and set aside. -Put a little more oil in the pan and turn heat to low. Add in the garlic and ginger and cook for a minute. Add the 3 Tbsps of curry paste and cook for a further few minutes till aromas release. -Add the chicken back in and mix through. Pour in the coconut milk and mix again. Pop on a lid and allow chicken to simmer in the sauce. -When chicken is almost done add in the pumpkin and beans and cook till veggies are hot and chicken is cooked through. -Just before removing curry from the heat add in the fish sauce, sugar and lime juice. Mix well and check seasoning. Adjust if needed. -Garnish with fresh coriander and red chilli’s. -Serve with Rice and Roti and Mangia and Enjoy!
