It seemed like everyone started baking bread during Corona. I might be late jumping on the bread-making train but a journey it has been. This is my 4th attempt at this Spelt/Semolina bread. My first attempts failed due to not prepping the banneton/bread-proofing basket. After a bit of reading up, I finally learned that rice flour is the trick to get the risen dough out of the basket. I feel I still need to perfect the coil fold method that is necessary for this type of bread. But luckily each loaf was still yummy even if it didn’t look quite so smooth. Chocolate Tube Cake. I decided to take my recipe for a chocolate loaf cake and see what happens when put into an tube pan. Since the cake is extremely rich and dense, I was afraid I might not get it out of a elaborate Bundt pan so I used an angel food pan instead. The cake tasted exactly the same but instead of needing two loaf pans, I just had the one tube pan (YAY, less clean up!) Einschulungstorte - First Day of School Cake. It was a cookies and cream cake with Swiss meringue buttercream. This way my first time making SMBC and it took FOREVER to make since everything has to reach the perfect temperature to come together. That being said, it was great and everyone loved how it was not overly sweet. In Germany, the first day of school is celebrated with cones almost as big as the kids themselves, filled with candy and presents. So I cut up the cake and decorated 12 little „Schultüten“. The white ones were topped with candy melts and the dark ones with a chocolate glaze. Man, did I have to work fast to get the decorations on before the coatings hardened. Lemon Bundt Cake. I was in the market for a new lemon cake recipe and after comparing a few, they all seemed to have the same components: lemon cake, simple syrup, and a lemon glaze. I thought it would turn out overly lemony but it was moist with a nice hint of lemon. I did put of bit of lemon concentrate in the glaze, since I ran out of lemons so mine had a bit more zing but still not too overpowering. I will definitely make this again. Happy Easter everybody! This year I made candy covered chocolate cake Easter Eggs. 🐣 After baking the cakes in the molds and letting them cool, I poured some candy melts into the silicone molds, pressed the cakes back in and let the candy melts cool again. This was the first time using this method and I’m sure I could have gone crazy with more colors and designs on the eggs but I decided to keep it simple this year. So they are basically bigger versions of baked cake pops (without mashing up cake with frosting). Pumpkin Spice Bundt Cake with a Cream Cheese Sugar Glaze. Thanks to @jamiemba and @tasteofhome for the recipe. The only difference between these two recipes was the use of pumpkin spice seasoning or adding the seasonings individually respectively. I had some homemade pumpkin spice seasoning in my cabinet so I decided to use that as well as my homemade pumpkin purée. The cream cheese glaze gave this moist cake that something extra that really pulled everything together. I only needed half of the glaze. I used to have trouble getting my cakes out of Bundt pans for whatever reason but now I know the trick of coating the pan with Crisco instead of butter and now the cakes come out much easier. The cake itself was so easy to make that my little helper was able to prepare the batter almost all by herself. The cake is a perfect autumn dessert and I can highly recommend this recipe. My first time baking Chocolate Sugar Cut-out Cookies. Crazy I know! It was a bit of a learning curve since the cookie dough worked differently to normal sugar cookie dough. I found trying to roll out the dough with just cocoa powder, as recommended, was a little tricky so I found a mixture of cocoa powder and flour worked much easier. Also it’s practically impossible to see when the cookies are getting slightly browned, so it took a bit of experimentation to get the right thickness vs time in the oven to not get scorched cookies. But once that was all worked out and the cookies were glazed, they were a nice rich, chocolatey cut-out cookies. Cookies and Cream Pie. Vanilla pudding mixed with whipped cream and @oreo cookie crumbs with and Oreo cookie crust. ➡️Oreo Pie Crust •1 Sleeve Oreo cookies (154g) 2-3 tablespoons (28-42g) butter, melted 1️⃣ Put cookies into food processor to make cookie crumbs 2️⃣Add melted butter, until cookie come together a stick together if pressed between fingers. If too goopy, add more cookie crumbs. If it falls apart, add more butter 4️⃣Spray 9-inch pie pan with baking spray 5️⃣Press cookie mixture into pan, and put in refrigerator while preparing the pie filling ➡️Pudding: •2 packs if Dr. Oekter‘s Paradiescreme Vanilla flavor •450 ml milk 1️⃣Pour milk in a large bowl, add pudding mixture, mix in on slow 2️⃣Beat on high for 3 minutes ➡️Whipped Cream: •200ml heavy whipping cream •1 packet vanilla sugar •1 packet Sahnesteif •1 tablespoon powdered sugar (or to taste) 1️⃣Beat heavy cream to soft peaks 2️⃣Add vanilla sugar, Sahnesteif, and powdered sugar 3️⃣Beat until stiff peaks off, ca. 2-3 minutes ➡️Pie filling 1️⃣Fold in whipped cream into the pudding 2️⃣Put about 3-4 Oreo cookies into a food processor to make cookie crumbles 3️⃣Fold cookie crumbs into pudding mix 4️⃣ Pour pie filling into prepared crust, smooth over. Yellow, buttery cupcakes with cookie dough buttercream. It was my first try at this buttercream. I had a recipe for a cookie dough filling for my Cookie Dough Cake and tried to turn that into a buttercream. My coworkers thought it was great, I thought it could use a few more tweaks. Overall, it wasn’t too sweet, the caramel notes of the brown sugar were present but I still felt like something was missing. So I’ll have to revisit this one with some improvements. Egg-shaped chocolate chip cupcakes. Varieties: plain, with powdered sugared and chocolate-glazed. I used the Chocolate Chip Cupcake recipe by @marthastewart (in the comments). They were moist and buttery and not too sweet, buttercream or glaze not even necessary. They tasted great as is! Three important tips that were not listed on website itself: 1️⃣ Use mini chocolate chips or chop up regular size chocolate chips/ chocolate bar 2️⃣ Hold back 1/4 cup of flour mixture and mix in with the chocolate so they don’t sink to the bottom 3️⃣ Make sure to use clean whisk attachments for the mixer when beating the egg whites. If there is ANY fat on the whisks, you won’t be able to get to stiff peaks and then the cupcakes will lose their fluffiness. Black and white cupcakes: vanilla buttercream with chocolate cake. Since the Ukrainian invasion, it is practically impossible to find regular vegetable oil in Germany, so I had to use rapeseed oil. It has a slight nutty flavor but luckily chocolate and nut is a great combo, so no negative impact. Others who have never tasted my “regular” chocolate cake said they didn’t taste a nutty flavor but as the the baker, I obviously noticed the difference. My first try at cannoli and boy they did not disappoint!! I made two different flavors: pistachio and chocolate chip. Even my Italian father in-law was totally impressed 🤗, which is good because I made them especially for him, for a “taste of home”. I used the @ciaoitaliashow cannoli recipe with just reducing the cinnamon to about a 1/2 teaspoon instead of 1 1/2. Red Velvet Cake with Cream Cheese Frosting. I am usually not a fan of this flavor because it is not exactly a vanilla cake nor really a chocolate cake but thanks to the recipe I found on JoyofBaking.com, I was very pleasantly surprised how it came out. And I used @wiltoncakes cream cheese frosting recipe since it has already received praise from friends in the past. I didn’t go crazy on the food coloring since I’m not a fan of adding LOADS of it to my cakes but I did use Wilton‘s “No Taste Red” and maybe that’s what made the difference here and why I actually liked it this time.
